Steps:
- Preheat oven to 450 degrees. If using fresh onions, soak them in warm water for 5 minutes to loosen skins; using a paring knife, cut off ends, and peel onions.
- Toss onions with vinegar and oil on a foil-lined rimmed baking sheet; season with salt and pepper. Roast until onions are tender, 25 to 30 minutes, stirring 2 or 3 times and rotating baking sheet halfway through.

ROASTED BLACK OLIVES AND PEARL ONIONS
This is from a Saveur, April 2005, article reviewing a book by Lidia Matticchio Bastianich, 'Lidia's Family Table'. It's simple yet sublime. I served with cheese and smoked salmon as antipasto and I can't wait to make again to take to my friends' house when we get together for our wine-tasting and chit-chat. Prep time includes overnight marinade and bringing to room temperature.

Steps:
- Preheat oven to 300°.
- Spread the olives on a large baking sheet and bake for 20 minutes, or until they have shriveled a bit and are slightly crunchy, but not crisped or burned.
- Let them cool in the pan (they'll dry more and become a bit crunchier).
- Meanwhile, cut off the root end of each onion, but don't peel them.
- In a small saucepan, heat 2 cups water and the vinegar to a boil and drop in all the onions, cook for 5 - 10 minutes, depending on their size, until they feel soft all the way through when you squeeze them, but not mushy.
- Drain and let them cool.
- Remove the skin (or pop the onion out of the skin by squeezing at the top).
- If the onions are 3/4" or more, slice them open and flake them apart, separating the layers; tiny onions can be left whole.
- Toss the olives, onions, and orange zest in a bowl.
- Dress with the oil and juice to taste.
- Marinate briefly or overnight, refrigerated, if you want.
- Serve at room temperature in a shallow bowl with a serving spoon.

"EYE-STUDDED" TURKEY TENDERLOIN (PEARL ONIONS AND BLACK OLIVES)

- Preheat oven to 400 degrees F. Coat a shallow roasting pan with cooking spray. Place tenderloins in pan and season all over with salt and black pepper. On 1 of the tenderloins, spread hoisin sauce all over. On the other, drizzle vegetable oil over the top.
- Using wooden picks, attach black olives to pearl onions and then the hoisin- coated turkey tenderloin, making a set of eyes in the meat.
- Roast 30 minutes, until an instant-read meat thermometer inserted into the tenderloin registers at least 160 degrees F. Reserve plain tenderloin for another meal. Let hoisin-coated turkey stand 10 minutes before slicing crosswise into 1/2-inch thick slices.
PICHOLINE OLIVES WITH ROASTED GARLIC AND RED ONION

- Place olives in a medium bowl; set aside. Heat 1 tablespoon olive oil in a small skillet over medium-low heat. Add garlic; cook just until golden, about 2 minutes. Transfer garlic to a paper towel to drain, and let cool; set aside.
- Bring 2 tablespoons vinegar and red onion to a simmer in a small saucepan over medium heat; reduce by half to 1 tablespoon. Add remaining 1/2 cup olive oil, 1/4 cup vinegar, bay leaves, and peppercorns; bring to a simmer. Stir in garlic. Pour warm mixture over olives, and marinate at room temperature for at least 2 hours. Olives may be made 1 week ahead, and refrigerated in an airtight container. Return to room temperature before serving.

ROASTED GARLIC & PEARL ONIONS WITH HERBS
I've made anything from 1 bulb to a whole bag full at one time. When I make a bag full I squeeze all the garlic into a jar then cover with olive oil and refrigerate till I need it. Which is very soon! Use as a spread on bread, potatoes, roasts, Add to butter or olive oil. Put into dressings. Steps:
- Cut pointed end off garlic bulb & pearl onions.
- Rub olive oil on garlic and onions sprinkle with remaining ingredients.
- Wrap in foil keeping top open (so they caramelize not steam) or place in a heavy bottom pan and bake 375 for 1 hour. Baste with oil from the bottom of pan 1/2 way through.
- Use freely with whatever you desire.

- I remove all the garlic and onions from the skin(which you can save the skin to make a stock with)then place the garlic and onions in a container and freeze or.
- In the pan you roasted it in pour olive oil in and simmer while loosening all the bits of goodness from the bottom of the pan. Cool the oil then top the garlic and onions. Refrigerate to use on everything.
- Mash and add to home made dressing.
- Toss into day old bread cubes for croutons.
- Spread on fresh crisp bread (My personal favorite).

- Roast tomatoes and make dressing:
- Preheat oven to 250°F.
- Halve tomatoes through stem ends and arrange, cut sides up, in 1 layer in a large shallow (1-inch-deep) baking pan. Add garlic to pan and roast in middle of oven until tomatoes are slightly shriveled around edges, about 1 hour. Cool in pan on a rack 30 minutes.
- Peel garlic and purée with oil, water, lemon juice, salt, pepper, and 1/2 cup roasted tomatoes in a blender until dressing is very smooth.
- Make couscous:
- Bring broth to a boil in a 3-quart heavy saucepan and stir in couscous, then simmer, uncovered, 6 minutes. Cover pan and remove from heat. Let stand 10 minutes.
- Spread couscous in 1 layer on a baking sheet and cool 15 minutes.
- Transfer couscous to a bowl and stir in remaining ingredients, dressing, roasted tomatoes, and salt and pepper to taste.
MEDITERRANEAN ROASTED CAULIFLOWER WITH OLIVES
This cauliflower medley is a great way to perk up your menu. It can be served warm as a side dish, or at room temperature and tossed with romaine lettuce as a salad. Warming the herbs and garlic in the oil prior to tossing with the veggies helps their flavor bloom. When ready to serve, drizzle on as much or as little balsamic vinegar as you like.

- Preheat the oven to 400 degrees F (200 degrees C). Line a 12x18-inch baking sheet with foil or parchment paper.
- Combine olive oil, garlic, Italian seasoning, salt, and freshly ground pepper in a small, microwave-safe bowl. Microwave on High for 20 to 30 seconds. Watch carefully, and remove from the microwave when the oil bubbles. Set aside.
- Combine cauliflower florets, red onion, and red bell pepper in a large bowl. Pour in the olive oil mixture and stir until all the vegetables are coated. Spread out vegetables on the prepared baking sheet in a single layer.
