2 tablespoons olive oil
1 tablespoon whole-grain mustard
2 teaspoons apple cider vinegar
Kosher salt
1 pound asparagus, trimmed
1 cup mizuna lettuce or watercress
1/2 cup toasted peeled hazelnuts, chopped
2 ounces goat cheese crumbles

Steps:

  • In a medium bowl, whisk together the oil, mustard, vinegar and 1/4 teaspoon salt until smooth and emulsified.
  • Meanwhile, bring a large pot of water to a boil over high heat. Sprinkle generously with salt. Add the asparagus to the water and, depending on the size of the asparagus, blanch for 3 to 5 minutes. It should still have some bite left to it. Add the warm asparagus to the dressing and toss well to coat.
  • Fan the asparagus out on a platter and sprinkle with the mizuna. Scatter the hazelnuts and goat cheese on top and drizzle with any dressing that may remain in the bowl.

olive oil, for greasing
3 bunches fresh asparagus, trimmed
120 g goat cheese, cut into 8 even pieces
8 thin slices prosciutto
4 teaspoons olive oil, extra
4 teaspoons macadamia nut oil
75 g raw macadamia nuts, roughly chopped
3 tablespoons olive oil
4 teaspoons red wine vinegar
salt & fresh ground pepper

Steps:

  • Preheat the oven to 200C.
  • Brush a large baking tray with olive oil to grease.
  • Divide the asparagus into 8 bundles, and place a slice of goats cheese on each.
  • Wrap 1 slice of proscuitto around each bundle to secure the cheese.
  • Place on the greased tray, and brush each bundle with some of the extra olive oil.
  • Roast in the preheated oven for 7-8 minutes or until just tender.
  • DRESSING: Meanwhile, heat the macadamia oil in a medium non-stick pan over medium heat.
  • Add the nuts and cook, stirring for about 2 minutes or until the nuts are golden.
  • Remove pan from heat and stir through remaining ingredients.
  • Place 2 bundles of asparagus on each serving plate, and spoon the warm dressing over.
  • Serve immediately.

1/2 cup olive oil
1/2 teaspoon crushed red pepper flakes
2 teaspoons chopped garlic
2 tablespoons butter
1/2 cup macadamia nuts, chopped
1/2 cup panko breadcrumbs
1/2 teaspoon ground white pepper
Salt
2 (8-ounce) logs goat cheese
1 (5 1/4-ounce) box Melba toasts

Steps:

  • Heat the olive oil in a small pot over medium-low heat until the oil is hot but not over 230 degrees F. Remove from the heat. Add the red pepper flakes and garlic and set aside to cool and let the flavors infuse into the oil. Reserve 2 tablespoons for coating the Melba toasts and the remaining for the Roasted Parsnip Medley recipe.
  • Melt the butter in a large skillet over medium-low heat. Add the macadamia nuts, panko, white pepper, and a generous pinch of salt. Let cook until the nuts and breadcrumbs have absorbed all the butter and are lightly toasted, 4 to 5 minutes, stirring frequently. Transfer to a baking sheet and let cool. Once cool, roll the goat cheese logs in the mixture, making sure they are completely coated. Place on a serving platter.
  • Add the Melba toasts to a large bowl. Drizzle the reserved 2 tablespoons garlic-pepper oil and toss so all the toasts are coated with the oil. Serve on the side with the goat cheese logs.

4 slices thin prosciutto
3 ounces feta (crumbled)
olive oil

2 ounces unsalted macadamia nuts (chopped)

fresh cracked pepper (to taste)

Steps:

  • Heat oven 350.
  • Prepare asparagus.
  • Lay prosciutto on counter. Top evenly with 4 bunches of asparagus.

  • Place seam side down on a sprayed baking sheet. Brush with oil. Roast 10-15 minutes.
  • Meanwhile, heat oil in a skillet. Add macadamias. Saute 2 minutes.

  • Place escarole on plates. Top with each bundle. Drizzle with dressing.

  • Preheat oven to 450 degrees. Bring a large pot of water to a boil for pasta. Place asparagus on a large rimmed baking sheet; dot with 1 tablespoon butter, and season with salt and pepper. Roast until tender, tossing occasionally, 10 to 15 minutes; cut into 2-inch lengths.

18 asparagus spears , woody ends removed
drizzle olive or rapeseed oil
6 slices prosciutto
handful rocket leaf
12 semi-dried tomatoes
100g cream cheese
100g soft rindless goat's cheese
1 tbsp milk
6-8 toasted hazelnuts , chopped

Steps:

  • Heat a griddle pan. Drizzle the asparagus with a little oil, season and cook for 3-4 mins, rolling around the pan until just tender. Leave to cool.
  • Lay a slice of prosciutto on your chopping board. Put 3 asparagus spears on top, with the tips poking out the end, then top with a few rocket leaves and 2 semi-dried tomatoes. Roll up the prosciutto tightly to enclose the filling and put in a sealable container for transporting. Continue until all the ingredients are used up.
  • Mash the cream cheese and goat's cheese together in a bowl with a fork. Season and add enough milk to make a smooth consistency, into which you can dip the bundles. Transfer to a pot for travelling and sprinkle over the hazelnuts.

Less is more when it comes to asparagus, especially those first tender stalks that show up in spring. Here they're quickly steamed and turned into an elegant salad tossed with a lemony, shallot dressing, and enriched with plenty of grated Manchego or other cheese. Chopped pistachios add another shade of green to the plate along with their sweet crunch, but use any nuts you like, or skip them entirely. This tangy, bright salad doesn't need them.

1 pound asparagus, woody ends trimmed
1/2 cup plus 3 tablespoons soft herbs, such as dill, parsley and tarragon, or a combination
3 tablespoons minced shallots, red onion or scallion
1 1/2 tablespoons fresh lemon juice (or cider vinegar)
Large pinch of kosher salt, plus more as needed
1/4 teaspoon freshly ground black pepper
1/3 cup extra-virgin olive oil, plus more for serving
3/4 cup coarsely grated cheese (1 1/2 ounces), preferably a young sheep's milk, such as pecorino or Manchego, but any firm cheese works, plus more for serving

Steps:

  • Heat oven to 350 degrees. On a rimmed baking sheet, spread pistachios in an even layer and toast for 5 minutes. Remove from oven and let cool enough to handle, then roughly chop.
  • Meanwhile, fill a large skillet with 1-inch water. Place steam basket on top, cover and bring to a simmer. Steam asparagus until just tender, about 5 minutes. Drain.
  • Finely chop 3 tablespoons mixed soft herbs. In a medium bowl, combine shallot, lemon juice, a pinch of salt and the pepper, and let sit for 2 minutes. Whisk in oil, then stir in pistachios, cheese and chopped herbs.
  • To serve, drizzle asparagus with oil and salt to taste. Dollop with dressing, tear remaining 1/2 cup herbs on top, and sprinkle generously with more cheese. Taste and adjust salt as needed.
