AHI TUNA TARTARE WITH HERBED BROWN BUTTER AND FRESH APPLES



Ahi Tuna Tartare with Herbed Brown Butter and Fresh Apples image

This is a really cool first course for any dinner party or special date night dinner. You have to find the freshest Ahi tuna.

8-ounces sushi-grade Ahi tuna, diced small
1 large shallot, finely minced
2 teaspoons finely minced fresh ginger
Zest and juice of 1 lemon
2 tablespoons extra-virgin olive oil
1 tablespoon sesame oil
2 teaspoons kosher or sea salt
1 teaspoon freshly ground black pepper
1 Granny Smith apple, finely diced
4-ounces unsalted butter
1/2 tablespoon chopped fresh parsley
1/2 tablespoon chopped fresh tarragon
1/2 tablespoon chopped fresh chives
1 Gala apple, thinly sliced into rounds

Steps:

  • In a mixing bowl, add the tuna, shallot, ginger, lemon zest, lemon juice, olive oil, sesame oil, salt, and pepper, and toss gently. Add the diced Granny smith apples and toss to coat.
  • In a small saute pan over high heat, melt the butter and cook it until it turns a deep rich brown. As soon as the butter turns brown, stir in the parsley, tarragon, and chives and remove from the heat. Spoon the butter over the tuna mixture and serve immediately with 1 apple slice on the side.

4 6 ounce sushi grade tuna
12 pieces of apple smk bacon
1 cup of orange segments
2 avocados diced
1/4 cup of olive oil
2 roasted red peppers
1 tsp of minced garlic
2 tsp of basil chopped
2 tsp of parsley chopped
1 shallot minced
2 tablespoons of red vinegar
1 bunch of watercress
1 red onion sliced thinly
Salt and pepepr to taste

Steps:

  • Take the four tuna fillets and wrap two pieces of bacon around the fillet. Place in refrigerator for later use. In a small bowl combine the red pepper, garlic, parlsey, shallot, vinegar and half of the oil and mix together with a whisk. Hold for later use. In a hot pan place a teaspoon of oil in a medium pan. Place the tuna steaks with the bacon crease down first. When the tuna and bacon are brown on one side turn them over and place into a 400 degree oven for another 5 minutes. In another small bowl toss watercress, the remaining oil, orange segments, avocado and salt and pepper. Toss the ingredients and divide into four seperat plates. Remove the tuna from the pan and cut diagonally with a sharp knife. Place the tuna over the watercress salad and drizzle roasted pepper relish over the tuna. Season with salt and pepper.

SESAME CRUSTED SEARED TUNA

Seared Tuna with Sesame Crust. Learn how to make the best Sesame Ahi Tuna- crispy golden on the outside and rare on the inside in just 10 minutes flat!

10- 16 ounces ahi tuna, thawed (sushi-grade) see notes
1 tablespoon soy sauce or GF liquid aminos
2 tablespoons high heat oil for searing- peanut oil, wok oil, avocado
3 tablespoons sesame seeds (black, or both black and white)
1 teaspoon granulated garlic powder (or onion powder)
1 teaspoon kosher salt
1 teaspoon fresh cracked pepper
1 teaspoon sugar
1 teaspoon dried Italian seasoning (or dried thyme)

Steps:

  • Mix the Sesame Crust ingredients together in a small bowl.
  • Pat dry the ahi tuna with paper towels.
  • Place ahi tuna on a plate, coat all sides with soy sauce. This will help the sesame spice adhere to the tuna.
  • Generously sprinkle all sides of the ahi tuna with the sesame mix, pressing it down into the flesh. Coat the sides. Read through the rest of the directions before starting because the next part goes very quickly.
  • The goal here is to get a nice golden sear on all sides without cooking the ahi tuna all the way through. HOT PAN is key.
  • Heat a cast-iron skillet over medium-high heat, until very very hot. Place tongs, metal spatula and splatter guard (or lid) near the stove. When the pan is hot a flick of water should sizzle loudly. Once the skillet is hot, turn the fan on high. Add the oil and coat the pan and let it get hot. Carefully lay the tuna in the pan, pressing it down into the skillet with a metal spatula. Sear 45-60 seconds ( or longer)- checking the underneath by lifting one corner to see if it is golden. If golden, carefully flip. If not golden, turn the heat up. Sear the other side, 60-90 seconds until golden. Sear the long edges using tongs to hold it upright.
  • Place on a cutting board, blot if you like, then using a very sharp knife, thinly slice, and serve.
  • At this point, you could also refrigerate up to 3 days, and serve this later, chilled. Either way is good.

1 pound sushi-grade yellowfin (ahi) tuna steaks
1 lemon, zested and juiced
½ cup onion, finely diced
½ cup diced red apple (such as Jazz™)
½ cup thinly sliced Belgian endive
2 tablespoons mayonnaise
1 teaspoon horseradish mustard
½ teaspoon honey
¼ teaspoon soy sauce
¼ teaspoon celery salt
⅛ teaspoon cayenne pepper

Steps:

  • Pat tuna steaks dry. Cut across the grain into thin slices; cut slices into smaller pieces.
  • Mix lemon zest and juice, onion, apple, endive, mayonnaise, mustard, honey, soy sauce, celery salt, and cayenne pepper together in a bowl. Incorporate the ahi tuna pieces. Refrigerate until time to serve.

BACON-WRAPPED TUNA STEAKS

This recipe came from my husband's cousin, who fishes for tuna off the Oregon coast each summer. The bacon helps hold the tuna together on the grill, and adds a nice moistness to the lean albacore meat. You could try it with other types of tuna, but I've only ever used albacore.

1 lb albacore tuna steak, 1-2 inches thick
1/2 lb low-sodium bacon
garlic powder
seasoning salt
cooking spray

Steps:

  • Take as many bacon strips as you have tuna steaks, and lay bacon on a paper-towel lined plate. Microwave 2-3 minutes or until bacon is about half-cooked but still very pliable.
  • Preheat outdoor grill to medium-high.
  • Meanwhile, wrap a slice of cooled bacon around the perimeter of each tuna steak and secure to itself and to the fish with a toothpick or two. Depending on the size of your steaks, you might have to squeeze a bit to get the bacon to reach around, but a snug fit will hold the fish together when it shrinks during cooking.
  • Sprinkle both surfaces of tuna steaks with garlic powder & seasoned salt. Spray both sides lightly with cooking spray to prevent sticking to grill. (You can also use a fish grilling grid or basket).
  • Grill until fish is lightly browned and bacon is starting to crisp, about 5-7 minutes per side for well-done (I don't like any pink in my fish).
  • Note: I use the low-sodium Kirkland brand bacon that Costco sells, and Mazola Pure olive oil spray.
