BABY ARTICHOKE RISOTTO

Baby Artichoke Risotto image

Here's another great dish to add to your repertoire of artichoke recipes. The tiny lemon zest and juice really bump up the flavor, so don't leave them out. Cheese is optional here.

Provided by Martha Rose Shulman

Categories     dinner, main course

Time 50m

Yield Serves four to six

Number Of Ingredients 15

10 baby artichokes
1 lemon, plus 1 to 2 teaspoons freshly squeezed lemon juice
About 7 cups chicken or vegetable stock, as needed
2 tablespoons extra virgin olive oil
1/2 cup minced onion or spring onion
Salt, preferably kosher salt, to taste
2 garlic cloves, minced
1 1/2 cups arborio or carnaroli rice
1 teaspoon fresh thyme leaves, or 1/2 teaspoon dried thyme
1/2 cup dry white wine, such as pinot grigio or sauvignon blanc
1 bay leaf
1 teaspoon finely minced lemon zest
2 tablespoon chopped fresh parsley
1/2 cup grated Parmesan cheese, or a mixture of Parmesan and pecorino Romano (optional)
Freshly ground pepper

Steps:

  • Trim the artichokes, rubbing them with a cut lemon as you go, and slice 1/4 to 1/3 inch thick. Place them in a bowl of water acidulated with the juice of 1/2 lemon. Put your stock or broth into a saucepan, and bring it to a simmer over low heat with a ladle nearby or in the pot. Make sure that the broth is well seasoned.
  • Drain the artichoke hearts and pat dry. Heat the oil in a wide, heavy skillet or saucepan over medium heat. Add the onion and 1/2 teaspoon salt, and cook gently until tender, three to five minutes. Add the artichoke hearts and the garlic, and stir for two to three minutes until the artichoke hearts are beginning to color.
  • Add the rice and thyme, and stir until the grains become separate and begin to crackle. Add the wine, and stir over medium heat until it has been absorbed by the rice. Begin adding the simmering stock, two ladlefuls (about 1/2 cup) at a time. The stock should just cover the rice and should be bubbling, not too slowly nor too quickly. Cook, stirring often, until the liquid is almost absorbed. Add another ladleful or two of the stock, and continue to cook in this fashion - adding more stock when the rice is almost dry, then stirring - for 20 to 25 minutes. When the rice is tender all the way through but still chewy, it is done. Add pepper, taste and adjust seasoning.
  • Mince the parsley and lemon zest together, and add to the risotto along with another ladleful or two of stock. Remove from the heat, and add a teaspoon or two of lemon juice. Stir in the cheese, if using. Serve right away in wide soup bowls or on plates, spreading the risotto in a thin layer rather than lumping in a mound.

ARTICHOKE RISOTTO

Artichoke Risotto image

Provided by Giada De Laurentiis

Categories     side-dish

Time 55m

Yield 4 to 6 servings

Number Of Ingredients 14

1/4 cup extra-virgin olive oil
One 9-ounce package frozen artichoke hearts, cut into bite-size wedges
1 tablespoon unsalted butter
1 large or 2 small shallots, minced
1 cup Arborio rice
1 teaspoon salt
1 cup dry white wine, room temperature
3 1/2 cups low-sodium chicken broth, warmed
1/2 cup frozen peas, thawed
1/2 cup crumbled feta cheese (3 ounces)
1/4 cup finely chopped chives
1/4 cup chopped fresh mint
1/4 teaspoon freshly ground black pepper
1 tablespoon fresh lemon juice (from 1/2 small lemon)

Steps:

  • Heat 2 tablespoons of the olive oil in a medium saucepan over high heat. Add the artichoke hearts and reduce the heat to medium high. Cook, stirring occasionally, for about 10 minutes, or until the hearts are beginning to brown. Remove to a plate and set aside.
  • To the same pan, add the remaining 2 tablespoons olive oil, the butter and the shallots and cook for 1 minute, stirring regularly. Add the rice and salt and stir with a wooden spoon to coat all the kernels with oil. Continue to cook for 3 minutes, or until the rice is sizzling. Add the wine and cook, stirring, until it is almost completely absorbed. Now begin adding the chicken broth, one cup at a time, stirring frequently between additions. After the first cup is almost entirely absorbed, add the next cup. Continue in this way until the rice is cooked through and you have a creamy risotto, about 20 minutes in all. (The risotto should be slightly loose, not dry; it should run off your spoon. If it gets too dry, add a bit more broth.) Stir in the peas, feta, chives, mint and black pepper. Gently stir in the artichoke hearts and the lemon juice. Serve.

ARTICHOKE RISOTTO WITH MASCARPONE, LEMON, AND THYME

Artichoke Risotto with Mascarpone, Lemon, and Thyme image

This rich risotto marries the distinctive taste of baby artichokes with creamy mascarpone cheese and sprightly lemon and thyme.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Pasta and Grains     Rice Recipes

Number Of Ingredients 14

2 lemons
10 baby artichokes
6 cups homemade chicken stock or 3 cups low-sodium store-bought chicken stock mixed with 3 cups water
1 bay leaf
2 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
1 medium onion, finely chopped (about 1 1/2 cups)
1 garlic clove, minced
Coarse salt
2 cups short-grain Italian rice, such as Arborio, Carnaroli, or Vialone Nano
1 cup dry white wine
2 teaspoons finely chopped fresh thyme, plus sprigs for garnish
Freshly ground pepper
1/4 cup mascarpone

Steps:

  • Remove 3 teaspoons grated zest from 1 lemon; halve the lemon, and squeeze out 1 tablespoon juice. Set zest and juice aside. Cut remaining lemon in half, and squeeze into a medium bowl of cold water; add all rinds to water.
  • Prepare the artichokes: Working with 1 artichoke at a time, snap off tough outer leaves until pale-green leaves are exposed. Cut off top third. Using a paring knife, peel dark-green layer from base and stem; trim stem. Quarter artichoke lengthwise. Transfer to lemon water.
  • Bring stock and bay leaf to a simmer in a medium saucepan over medium-high heat; reduce heat to low.
  • Melt butter with oil in a large saute pan over medium heat. Add onion, garlic, and a pinch of salt; cook, stirring occasionally, until onion is slightly softened, about 6 minutes. Drain artichokes, and add to pan. Cook, stirring often, until artichokes are just tender, about 12 minutes. Add rice, and stir until coated, about 1 minute. Pour in wine, and cook, stirring, until wine has almost evaporated, about 3 minutes.
  • Add enough hot stock (about 1 cup) to just cover rice. Cook, stirring, until stock is almost absorbed. Continue adding stock, 3/4 cup at a time, waiting for each addition to be absorbed before adding the next; cook, stirring, until rice is tender but still slightly firm in the center, 20 to 25 minutes. Remove from heat, and discard bay leaf.
  • Stir in chopped thyme; season with salt and pepper. Add mascarpone, 2 teaspoons lemon zest, and the lemon juice; stir until mascarpone is melted and rice is moist and creamy. Serve immediately, garnished with thyme sprigs and remaining teaspoon lemon zest.

Number Of Ingredients 13

10 baby artichokes
1 lemon, juiced
1 onion, chopped
1 clove garlic, chopped
1 tablespoon virgin olive oil
1 pound arborio rice

RISOTTO WITH BABY ARTICHOKES

Risotto With Baby Artichokes image

Provided by Moira Hodgson

Categories     dinner, one pot, main course

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 11

10 baby artichokes
Juice of 1/2 lemon
1 small onion, chopped
1 clove garlic, minced (green part removed)
2 tablespoons extra-virgin olive oil
4 tablespoons unsalted butter
1 1/2 cups Italian Arborio rice
1 cup dry light Italian white wine
4 to 6 cups homemade chicken stock
1/3 to 1/2 cup freshly grated Parmesan cheese
Coarse salt and freshly ground pepper to taste

Steps:

  • Trim all but the most tender inner yellow leaves from the artichokes. Cut the artichokes in thin slices and put them into a pot of water into which you have squeezed the juice of the lemon half. This will prevent them from turning brown.
  • In a large heavy saucepan or skillet, soften the onion and the garlic in the oil and two tablespoons of the butter. Add the sliced artichokes and cook for three to four minutes, cooking frequently.
  • Add the rice and cook over fairly high heat, stirring constantly, until the grains turn opaque.
  • Pour in the wine and stir the rice well to prevent it from sticking to the bottom of the pan. When the liquid has evaporated, add a ladleful of hot broth. Repeat this procedure until the rice is almost tender, but firm. If you run out of stock, add warm water instead.
  • Turn off the heat, add the butter and season the risotto with salt, pepper and Parmesan cheese. Serve immediately, with more cheese passed separately at the table.

SPRING GREEN RISOTTO WITH ARTICHOKES

Spring Green Risotto with Artichokes image

Provided by Ina Garten

Time 55m

Yield 4 servings

Number Of Ingredients 16

1 1/2 tablespoons good olive oil
1 1/2 tablespoons unsalted butter
3 cups chopped leeks, white and light green parts (2 leeks)
1 cup chopped fennel
1 1/2 cups Arborio rice
2/3 cup dry white wine
4 to 5 cups simmering chicken (or vegetable) stock or preferably homemade
1 pound thin asparagus
10 ounces frozen peas, defrosted, or 1 1/2 cups shelled fresh peas
8 ounces frozen artichoke hearts, defrosted
1 tablespoon freshly grated lemon zest (2 lemons)
Kosher salt and freshly ground black pepper
1/3 cup mascarpone cheese, preferably Italian
1/2 cup freshly grated Parmesan cheese, plus extra for serving
2 tablespoons freshly squeezed lemon juice
3 tablespoons minced fresh chives, plus extra for serving

Steps:

  • Heat the olive oil and butter in a medium saucepan over medium heat. Add the leeks and fennel and saute for 5 to 7 minutes, until tender. Add the rice and stir for a minute to coat with the vegetables, oil, and butter. Add the white wine and simmer over low heat, stirring constantly, until most of the wine has been absorbed. Add the chicken stock, 2 ladles at a time, stirring almost constantly and waiting for the stock to be absorbed before adding more. This process should take 25 to 30 minutes.
  • Meanwhile, cut the asparagus diagonally in 1-inch lengths and discard the tough ends. Blanch in boiling salted water for 4 to 5 minutes, until al dente. Drain and cool immediately in ice water. (If using fresh peas, blanch them in boiling water for a few minutes until the starchiness is gone.)
  • When the risotto has been cooking for 15 minutes, drain the asparagus and add it to the risotto with the peas, artichokes, lemon zest, 1 tablespoon salt, and 1 1/2 teaspoons pepper. Continue cooking and adding stock, stirring almost constantly, until the rice is tender but still firm.
  • When the risotto is done, turn off the heat and stir in the mascarpone, Parmesan cheese, lemon juice and chives. Serve hot with a sprinkling of chives and more Parmesan cheese.

HAM AND ARTICHOKE RISOTTO

Ham and Artichoke Risotto image

Provided by Moira Hodgson

Categories     dinner, lunch, main course

Time 30m

Yield 4 servings

Number Of Ingredients 12

1 large artichoke
1/2 lemon
5 cups strong chicken stock
2 tablespoons unsalted butter
1 tablespoon olive oil
1 small onion, minced
1 clove garlic, minced
1 1/2 cups Arborio rice
1/2 cup dry white wine
1 6-ounce slice boiled ham, about 1/4-inch thick
Freshly grated Parmesan cheese to taste
Coarse salt and freshly ground pepper to taste

Steps:

  • Pull away the dark green outer leaves of the artichoke until you reach the yellow inner leaves. Cut one to two inches off the top of the artichoke, eliminating all prickly parts. Cut the base in half vertically. With a sharp knife, cut away the fuzzy choke and any remaining little leaves. Cut each half into thin slices and place in small bowl of water into which you have squeezed the lemon half.
  • Bring the chicken stock to a simmer on top of the stove. Meanwhile, heat the butter and oil in a heavy skillet and cook the onion and garlic until the onion is soft. Drain the artichoke slices, pat them dry and saute for two to three minutes.
  • Add the rice and saute, stirring for one to two minutes, making sure the grains are coated with the butter and oil. Add the wine and stir it until it is absorbed. Add the hot broth one-half cup at a time, stirring frequently. Do not add the next cup before the previous one is completely absorbed.
  • When the rice is almost done (it should be creamy but al dente) add the ham and Parmesan cheese. Season to taste and Serve at once.

BLACK RICE AND ARBORIO RISOTTO WITH ARTICHOKES

Black Rice and Arborio Risotto With Artichokes image

You can use fresh baby artichokes for this if they're in season. Otherwise, it may be easier to find frozen ones.

Provided by Martha Rose Shulman

Categories     dinner, side dish

Time 2h

Yield 6 servings

Number Of Ingredients 16

1 cup black rice, like Lundberg Black Japonica or Forbidden Rice, cooked (3 cups cooked)
8 baby artichokes, trimmed and quartered, or 1 12-ounce package frozen artichoke hearts, thawed
1 lemon, cut in half
About 7 cups chicken or vegetable stock, as needed
2 tablespoons extra virgin olive oil
1/2 cup minced onion
Salt to taste
2 garlic cloves, minced
2/3 cup arborio rice
1 teaspoon fresh thyme leaves, or 1/2 teaspoon dried thyme
1/2 cup dry white wine, like pinot grigio or sauvignon blanc
1/4 cup chopped fresh parsley
2 teaspoons lemon zest
2 teaspoons fresh lemon juice
1/4 to 1/2 cup grated Parmesan cheese, or a mixture of Parmesan and pecorino Romano (optional)
Freshly ground pepper

Steps:

  • To cook the black rice, combine with 2 cups water in a saucepan, add salt to taste and bring to a boil. Reduce the heat, cover and simmer 30 to 40 minutes, until all of the liquid has been absorbed by the rice. Remove from the heat, remove the lid from the pan and place a dish towel over the pan, then return the lid. Let sit for 10 to 15 minutes.
  • To trim the artichokes, fill a bowl with water and add the juice of 1/2 lemon. Cut the stems off the artichokes and, with a sharp knife, cut away the tops - about 1/2 inch from the top for baby artichokes. Rub the cut parts with the other half of the lemon. Break off the tough outer leaves until you reach the lighter green leaves near the middle. With a paring knife, trim the bottom of the bulb right above the stem by holding the knife at an angle and cutting around the artichoke, until you reach the light-colored flesh beneath the tough bottoms of the leaves. Cut in quarters and cut away the chokes. Place in the bowl of acidulated water until ready to cook.
  • Put your stock or broth into a saucepan and bring it to a simmer on the stove, with a ladle nearby or in the pot. Make sure that it is well seasoned.
  • Drain the artichoke hearts and pat dry. Heat the oil in a wide, heavy nonstick skillet or saucepan over medium heat. Add the onion and salt to taste, and cook gently until tender, 3 to 5 minutes. Add the artichoke hearts and the garlic and stir for 2 to 3 minutes, until the artichoke hearts are beginning to color.
  • Stir in the arborio rice and thyme and stir until the grains become separate and begin to crackle. Add the wine and cook, stirring, until the wine has just about evaporated and been absorbed by the rice. Stir in enough of the simmering stock to just cover the rice. The stock should bubble slowly. Cook, stirring often, until it is just about absorbed. Add another ladleful or two of the stock and continue to cook in this fashion, not too fast and not too slowly, adding more stock when the rice is almost dry and stirring often, for about 20 minutes. When the rice is tender all the way through but still chewy, it is done. Add pepper, taste and adjust seasoning.
  • Mince the parsley and lemon zest together, and add to the risotto with the black rice, along with another ladleful or two of stock and freshly ground pepper. Simmer, stirring often, for 5 minutes. Remove from the heat, add another small ladleful of stock and a teaspoon or two of lemon juice, and stir in the cheese if using. Serve right away, in wide soup bowls or on plates, spreading the risotto in a thin layer rather than a mound.
