1 loaf French Brioche Bread (sliced)
16 oz light ricotta cheese
1 lemon (zested)
1/4 cup powdered sugar (plus some to dust)
1 cup chopped strawberries (plus some to garnish)
6 eggs
1/2 cup almond milk
2 tsp vanilla (divided)
Pinch of salt
Coconut sugar to dust

Steps:

  • Preheat oven to 350 degrees. Grease an 8X8 pan and set aside.
  • In a medium mixing bowl, combine ricotta, powdered sugar, lemon zest, vanilla, salt, and strawberries. Refrigerate until ready to use.
  • Whisk together eggs, milk, remaining vanilla, and a pinch of salt. Pout into a wide bowl.
  • Cut each piece of bread diagonally and dip each side into the egg mixture-make sure both sides are fully coated. Next, place 1/4 cup of ricotta in between the bread and lightly sandwich together. Place in pan so that the pointed corner is facing up. Repeat until pan is full-you may have a piece or two of bread left over.
  • Pour remaining egg mixture over the French toast. Sprinkle with a dusting of coconut or cane sugar, cover with foil, and place in oven for 20 minutes. After 20 minutes, remove foil and bake for another 10-15 minutes; make sure the egg in the center is fully cooked through.
  • Serve hot with powdered sugar and fresh strawberries!

1 large egg , beaten
300ml milk
1 tsp vanilla extract
4 slices thick-cut white bread
2 tbsp butter
50g ricotta
2 tbsp honey
100g strawberries , some sliced, some halved
2 mint sprigs, leaves picked

Steps:

  • In a wide dish, whisk the egg, milk and vanilla together. Coat one side of the bread slices in the liquid, then carefully flip them over and leave them to soak for 1-2 mins.
  • Melt 1 tbsp of the butter in a large non-stick pan over a medium heat and add two slices of bread. Cook for 5 mins or until golden, then turn to cook the other side for another 5 mins. Transfer to a plate and cook the other two slices in the rest of the butter.
  • Halve the toast on the diagonal and spread each slice with the ricotta. Drizzle over the honey and a pinch of flaky sea salt, and arrange some sliced strawberries in a fan across the toast. Decorate the plate with the halved strawberries and mint.

3 eggs
1 1/4 cups nonfat milk
1/2 teaspoon vanilla extract
1/4 cup part-skim ricotta cheese
8 slices of whole-wheat sandwich bread, crusts removed
1 (8-ounce) container strawberries, hulled and sliced
4 teaspoons bittersweet chocolate chips
Cooking spray
2 teaspoons confectioners' sugar

Steps:

  • In a large bowl, whisk together the eggs, milk and vanilla. Set aside.
  • Place 1 tablespoon of ricotta in the center of 4 of the pieces of bread and spread around slightly. Top with about 6 slices of strawberries and a teaspoon of chocolate chips. Cover each with another piece of bread to make a "sandwich".
  • Spray a large nonstick skillet or griddle with cooking spray and preheat. Carefully dip each of the "sandwiches" into the egg mixture until completely moistened. Then place on the skillet and cook over a medium heat for 3 to 4 minutes per side, until the outside is golden brown and the center is warm and chocolate is melted.
  • Transfer to serving places. Top with remaining strawberries and sprinkle with confectioners' sugar.
