This recipe for beef stock is more flavorful than store-bought and not difficult to make. The time and effort spent cooking is well worth it.

Number Of Ingredients 11

5 to 6 pounds beef bones and trimmings
2 medium onions, peeled, quartered
2 large carrots, cut into 2-inch pieces
2 ribs celery, with leaves, cut into 2-inch pieces
2 tablespoons extra-virgin olive oil
1 tablespoon tomato paste
3 1/2 quarts water , divided
1 large bay leaf, or 2 small bay leaves
3 to 4 sprigs parsley
1/2 teaspoon black peppercorns
1/4 teaspoon dried thyme, or 1 to 2 sprigs fresh thyme

Steps:

  • Gather the ingredients.
  • Trim larger pieces of beef from the bones and cut into 1-inch pieces. Heat the oven to 400 F.
  • Put the bones and beef pieces in a large roasting pan with the onions, carrots, and celery. Toss with the olive oil.
  • Roast for 45 minutes, turning a few times so the beef browns evenly.
  • Transfer the beef and vegetables to a stockpot and set aside.
  • Pour off any excess grease from the roasting pan and place over medium heat. Add the tomato paste and cook, stirring, for 2 minutes.
  • Add 2 cups of the water and bring to a simmer.
  • Add the tomato paste mixture to the stockpot, along with the remaining 3 quarts of water. If the liquid doesn't quite cover the bones, add a little more water.
  • Add the bay leaf, parsley sprigs, peppercorns, and thyme.
  • Put the stockpot over medium-high heat and bring to a boil. Skim off any foamy scum from the top.
  • Reduce the heat to the lowest setting, partially cover, and simmer for 3 to 4 hours. The stock should be flavorful and reduced slightly. If you want a richer, more concentrated flavor, cook longer to reduce more.
  • Strain through a cheesecloth-lined strainer into a large bowl. Cover and refrigerate until chilled.
  • Remove the solid fat from the surface.
  • Ladle into 1-, 2-, or 4-cup freezer containers or jars, leaving about an inch of headspace.
  • Refrigerate and use within four days or freeze for up to three months.

This is a very basic beef bone broth recipe that you can make as a Sunday project. Freeze the broth for use within six months. If desired, refrigerate before freezing so that you can skim off any hard fat that forms or solidifies on the top.

3 ½ pounds beef bones, such as oxtail, short rib, knuckle, and shank
2 stalks celery, cut into 2-inch pieces
1 large onion, cut into 8 pieces
1 medium leek - roots trimmed off, cleaned, and cut into 2-inch pieces
1 whole head garlic, halved crosswise
12 cups water, or as needed
2 bay leaves, or more to taste
1 tablespoon white vinegar
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil.
  • Place beef bones on the prepared baking sheet.
  • Roast bones in the preheated oven for 40 minutes, turning over at the halfway point.
  • Carefully place bones into a large stockpot and pour in any juices that have collected on the baking sheet. Add celery, onion, leek, and garlic to the stockpot, and add just enough water to completely cover the bones. Stir in bay leaves, vinegar, salt, and pepper.
  • Bring broth to a boil over medium-high heat. Reduce heat to a very low simmer and cover, venting the lid a bit. Simmer for 12 hours, occasionally skimming off any foam and "gunk" that rises to the top. Add additional water whenever bones and vegetables are no longer covered.
  • Remove the pot from the heat and cool broth to room temperature. Strain broth with a fine-mesh strainer into a clean pot. Discard bones and vegetables.

Number Of Ingredients 5

1 carrot, peeled and cut into 1-inch pieces, about 3 ounces
1 rib celery, cut into 1-inch pieces, about 2 ounces
1 leek, cleaned and cut into 1-inch pieces, about 4 ounces
2 pounds veal bones, cut into 2-inch pieces
1/2 pound lean beef stew meat, in 2-inch pieces

Steps:

  • Combine the carrot, celery and leek in a food processor and coarsely chop. Scrape the mixture into a five-quart casserole with a tightly fitting lid. Add the remaining ingredients and four cups of cold water. Cover and cook at 100 percent power in a 650- to 700-watt oven for 30 minutes.
  • Remove from the oven and uncover. Strain the broth through a fine sieve. If you wish to skim off the fat, refrigerate the broth so that the fat rises to the surface, then skim with a large spoon. Store, covered, in the refrigerator for up to two days, or freeze.

4 pounds short ribs or flanken
2 pounds meaty beef shanks
2 onions, left unpeeled, quartered
2 celery ribs, quartered
2 carrots, 1 quartered and 1 cut into 1/4-inch dice
4 fresh parsley stems (without leaves)
1 fresh thyme sprig
1 Turkish or 1/2 California bay leaf
4 whole black peppercorns
14 cups water
1 1/2 teaspoons salt
Special Equipment
cheesecloth; kitchen string; 12 demitasse or espresso cups

Steps:

  • Put oven rack in lower third of oven and preheat oven to 450°F.
  • Spread short ribs, shanks, onions, celery, and quartered carrot in a large flameproof roasting pan and roast, turning occasionally, until well browned, about 1 hour.
  • Wrap parsley, thyme, bay leaf, and peppercorns in cheesecloth and tie into a bundle with string to make a bouquet garni.
  • Transfer meat (with bones) and roasted vegetables to a 6- to 8-quart pot and add 12 cups water, salt, and bouquet garni. Straddle roasting pan across 2 burners, then add remaining 2 cups water and deglaze pan by boiling, stirring and scraping up brown bits, 1 minute. Add deglazing liquid to pot, then bring to a boil, skimming froth. Reduce heat to low and gently simmer, uncovered, until liquid is reduced to about 5 cups, 7 to 8 hours.
  • Transfer mixture to a bowl and cool completely, uncovered, about 1 hour, then chill, covered, at least 8 hours.
  • Remove fat. Reheat mixture in cleaned pot over moderate heat until warm. Discard beef shanks (meat and bone), then transfer short ribs to a platter and, when cool enough to handle, discard bones and fat. Finely chop short ribs and reserve for terrine . If not using meat within 1 hour, chill, covered. Pour broth though a cheesecloth-lined sieve into a 1 1/2-quart saucepan and skim off any remaining fat. Bring broth to a simmer and season with salt.
  • Cook diced carrot in a small saucepan of boiling salted water until just tender, about 4 minutes. Drain in sieve and divide among demitasse cups, then add broth.
