RICH AND DELICIOUS CROCK POT FRENCH ONION SOUP
This recipe is so easy it practically makes itself! It is a rich, hearty, beefy flavor and if you prefer something a little less rich in flavor and less fat (more light), reduce the beef broth to a 50/50 broth and water mixture and reduce the butter to half a stick. My family loves the heartiness of this recipe. It's a great...

Steps:
- 1. Heat crock pot to high temperature setting. Add butter, chopped onions and cover. Cook on high for 2 hours or until onions are translucent, stirring occasionally.
- 2. Add garlic, beef broth, salt/pepper and Worcestershire. Allow to cook 2 more hours on high. Add hot water and concentrated beef bouillon. Turn heat setting to low for 1 to 2 hours. About 15 minutes before serving, add dry sherry (optional). Turn off heat.
- 3. Lightly toast bread. Pour soup into serving dishes. Place toasted bread on top of soup, followed by sliced cheese. Set under oven broiler for a few minutes until cheese bubbles to your desire. Serve hot.
- 4. NOTE: If you're planning to make the crock pot soup while away from the house and unable to stop at the 2 hour increment to add ingredients, first cook the onions in the butter (or butter/oil) using a stovetop pot or pan until translucent (about 6 to 8 minutes). Place cooked onions and all other ingredients except dry sherry into the crock pot. Cook on low-heat for 6 to 8 hours. Follow instructions for adding the dry sherry (optional), the toast and cheese as directed above at the end of cooking time.
SLOW-COOKED FRENCH ONION SOUP
My husband and I love French onion soup, so I wondered if I could turn it into a less labor-intensive dish by altering my recipe to work in a slow cooker. The rich, cheesy result was an instant winner at home. -Ronda Eagle, Goose Creek, South Carolina

Steps:
- Heat butter in a large, heavy pot over medium-high heat; cook and stir onions until they become translucent, about 10 minutes. Sprinkle onions with sugar; reduce heat to medium. Cook, stirring constantly, until onions are soft and browned, at least 30 minutes. Stir in garlic and cook until fragrant, about 1 minute.
- Stir sherry into onion mixture and scrape bottom of pot to dissolve small bits of browned food from the pot. Transfer onions into a slow cooker and pour in beef broth. Season to taste with sea salt; stir in thyme and bay leaf. Cover cooker, set on High, and cook 4 to 6 hours. If desired, set on Low and cook 8 to 10 hours.
- About 10 minutes before serving, set oven rack about 8 inches from the heat source and preheat the oven's broiler. Arrange bread slices on a baking sheet.
- Broil bread slices until toasted, 1 to 2 minutes per side.
- Combine Gruyere, Emmental, Parmesan, and mozzarella cheeses in a bowl, tossing lightly. Fill oven-safe soup crocks 3/4 full of onion soup and float a bread slice in each bowl. Top with about 2 tablespoons of cheese mixture per serving.
- Place filled bowls onto a baking sheet and broil until cheese topping is lightly browned and bubbling, about 2 minutes.

- Place the onions, butter and brown sugar in a large non-stick sauce pan. Stir together and cook over medium low heat until the onions are brown and caramelized (approximately 30-45 minutes). Stir frequently during this time so that the onions do not burn at the bottom of the pan.
- Once the onions are caramelized, place them in a 6 quarter slow cooker. Add the salt, pepper, thyme, bay leaf, beef broth and white wine to the crock pot as well.
- Meanwhile, slice the baguette into 1 inch thick slices. Bake the slice at 350 degrees F for 5-7 minutes to heat and brown slightly.
