Crab-Stuffed Shells with Peas and Leeks image

9 tablespoons unsalted butter
2 leeks, white and pale-green parts only, halved lengthwise, cut into 1/4-inch half-moons, washed well, and drained
1 cup fresh or frozen peas
Coarse salt and freshly ground pepper
8 ounces lump crabmeat, picked over and rinsed
6 tablespoons all-purpose flour
2 cups milk
1 cup heavy cream
Juice of 1 lemon
1 pound jumbo pasta shells
1/2 cup breadcrumbs, preferably homemade
6 garlic cloves, minced
1/4 cup fresh flat-leaf parsley leaves
1 tablespoon extra-virgin olive oil

Steps:

  • Melt 3 tablespoons butter in a medium skillet over medium heat. Add leeks, and cook until soft, about 5 minutes. Add peas; cook until bright green, about 3 minutes more. Transfer mixture to a bowl, and season with salt and pepper. Stir in the crab-meat; cover with plastic wrap, and refrigerate until ready to assemble.
  • Melt remaining 6 tablespoons butter in a large saucepan over medium heat. When bubbling, add flour. Cook, whisking constantly, 1 minute. While whisking, slowly pour in milk. Continue cooking, whisking constantly, until mixture bubbles and thickens. Remove from heat; stir in cream and lemon juice, and season with salt and pepper.
  • Preheat oven to 375 degrees. Bring a large pot of water to a boil. Add salt and pasta shells; cook 2 to 3 minutes less than package instructions. Drain.
  • Meanwhile, in a small bowl, stir together breadcrumbs, garlic, parsley, and oil; set aside. Stir 1 cup cream sauce into reserved crab mixture. Pour another cup cream sauce into the bottom of a 9-by-13-inch baking dish.
  • Fill each pasta shell with a heaping tablespoon of crab mixture; arrange in baking dish. Spoon remaining sauce over shells, and sprinkle with remaining breadcrumb mixture. Transfer to oven; bake until mixture is bubbling and the top is golden brown, about 30 minutes. Let cool 5 minutes before serving.

1/2 cup white wine
1 cup chicken stock
1/2 teaspoon thyme
8 ounces crab claws
8 ounces linguine
asiago cheese

Steps:

  • In a deep pan, add butter and melt.
  • Add flour, stirring on med heat for 1 minute.
  • Add leeks, stirring on med heat for 1 minute.
  • Add garlic, stirring on med heat for 1 minute.
  • Add wine and chicken stock, stir.
  • Add thyme and crab, stir and cover for 5 minutes.
  • Cook linguine according to box directions.
  • Drain linguine and place on platter, pour crab mixture on top.
  • Sprinkle grated asiago cheese on top.
  • Serve and enjoy.

1 package (9 ounces) refrigerated linguine
1/3 cup butter, cubed
1 jalapeno pepper, seeded and finely chopped
1 garlic clove, minced
1 teaspoon grated lemon zest
3 tablespoons lemon juice
2 cans (6 ounces each) lump crabmeat, drained
1/4 cup loosely packed basil leaves, thinly sliced
1/2 teaspoon sea salt
1/4 teaspoon freshly ground pepper

Steps:

  • Cook linguine according to package directions. Meanwhile, in a large skillet, heat butter over medium heat. Add jalapeno and garlic; cook and stir 1-2 minutes or until tender. Stir in lemon zest and juice. Add crab; heat through, stirring gently., Drain linguine; add to skillet. Sprinkle with basil, salt and pepper; toss to combine.

170 g crab

Steps:

  • Put the pasta into a pan of boiling water and cook following the packet instructions. Drain.
  • Meanwhile, heat the oil in a saucepan and add the leek and chilli. Fry gently for 5 minutes making sure the leek doesn't brown. Add the crab meat and add lemon zest, then a little of the juice, to taste. Take off the heat, season, and stir the crab mixture through the pasta.

4 tablespoons olive oil
1 hot green pepper like jalapeno, with seeds, chopped
2 large cloves garlic, peeled and smashed
3 leeks, cleaned, trimmed and chopped (about 3 cups)
4 medium-sized blue crabs or other meaty hard crabs
1/2 bottle dry white wine
1/4 teaspoon stem saffron
1 pound of spaghetti, linguine or pasta of choice

Steps:

  • In a large pot or saucepan, heat the olive oil over medium-high heat. Add the green pepper and garlic. Cook for 1 minute, stirring. Add the leeks and the crabs and stir for 2 minutes.
  • Add the wine. Cover and bring to a boil. Simmer for 8 minutes.
  • Remove the crabs from the pot and let cool to room temperature. Add saffron to the cooking liquid, stir, and reserve.
  • Remove the meat and set aside in a warm place. Return any juices from the crabs to the pot.
  • Cook the pasta in a large pot of salted boiling water. When al dente, drain well. Toss the pasta in the pot in which the crabs were cooked. Stir gently for 1 minute.
  • Distribute pasta and sauce evenly in bowls. Garnish with crab meat.

400g linguine
4 tbsp extra-virgin olive oil
1 red chilli, deseeded and chopped
2 garlic cloves, finely chopped
1 whole cooked crab, picked, or about 100g/4oz brown crabmeat and 200g/7oz fresh white crabmeat
small splash, about 5 tbsp, white wine
small squeeze of lemon (optional)
large handful flat-leaf parsley leaves, very finely chopped

Steps:

  • Bring a large pan of salted water to the boil and add the linguine. Give it a good stir and boil for 1 min less than the pack says. Stir well occasionally so it doesn't stick.
  • While the pasta cooks, gently heat 3 tbsp of olive oil with the chilli and garlic in a pan large enough to hold all the pasta comfortably. Cook the chilli and garlic very gently until they start to sizzle, then turn up the heat and add the white wine. Simmer everything until the wine and olive oil come together. Then take off the heat and add the brown crabmeat, using a wooden spatula or spoon to mash it into the olive oil to make a thick sauce.
  • When the pasta has had its cooking time, taste a strand - it should have a very slight bite. When it's ready, turn off the heat. Place the sauce on a very low heat and use a pair of kitchen tongs to lift the pasta from the water into the sauce.
  • Off the heat, add the white crabmeat and parsley to the pasta with a sprinkling of sea salt. Stir everything together really well, adding a drop of pasta water if it's starting to get claggy. Taste for seasoning and, if it needs a slight lift, add a small squeeze of lemon. Serve immediately twirled into pasta bowls and drizzled with the remaining oil.
