EASY RICE PUDDING
This is the easiest rice pudding recipe, and it is delicious.

Steps:
- Preheat oven to 300 degrees F (150 degrees C). Coat a 2 quart casserole dish with nonstick cooking spray.
- In the casserole dish, mix together rice, sugar and salt. Stir in milk and vanilla.
- Bake, uncovered, in preheated oven for 1 1/2 to 2 hours, stirring every 20 minutes. Let stand for 30 minutes. Sprinkle top with cinnamon.

GRANDMA'S RICE PUDDING
My sisters and I always loved the recipe for rice pudding our grandma made. After she passed away, I took it upon myself to try and find the secret to her rice pudding. - Place rice and raisins in a greased 1-qt. casserole. In a small bowl, whisk the eggs, milk, sugar and nutmeg; pour over rice. , Bake, uncovered, at 375° for 45-50 minutes or until a knife inserted in the center comes out clean. Cool. Pour milk over each serving if desired. Refrigerate leftovers.

RICE PUDDING (FOR ONE)
A simple recipe with the sweet creaminess of rice pudding but without the need to slave over the stove top for it. This was done using leftover brown rice that had been frozen.

Steps:
- Combine rice, milk and cream in a microwave bowl and stir.
- Spoon a few tablespoons of the liquid out and stir in cornstarch in a small bowl until no lumps are present. Add the cornstarch mixture and stir.
- Microwave on medium high for about 3 minutes, or until desired thickness is reached. Add cinnamon and honey and serve warm.
RICE PUDDING FOR ONE
I'm passing this along for all the seniors and singles. I haven't tried it myself, but plan to soon as it sounds easy and tasty.

Steps:
- Bring water to a boil and add rice.
- Cover and simmer for 20 minutes.
- Preheat oven to 350F degrees.
- Whisk milk and egg together, then whisk in sugar and vanilla.
- Stir into the hot cooked rice and then stir in raisins.
- Pour rice mixture into a small greased casserole dish and bake, uncovered, for 20 minutes.
- Serve warm with pouring cream.

- To prepare the rice, bring the water to a boil in a medium saucepan.
- Stir in the rice and salt; reduce heat to low, cover and cook until water is absorbed, about 15 minutes.
- Remove from heat and let steam at least 10 minutes; should yield about 1 cup of rice.
- In a small pan, combine the rice with milk and raisins (or other dried fruit) and bring to a simmer over medium high heat.
- Reduce the heat, but maintain a gentle simmer.
- Stir in saffron, cardamom, honey and a pinch of salt.
- Cook until most of the milk is absorbed, 10-15 minutes, stirring frequently.
- Transfer to a bowl, garnish with a drizzle of honey and chopped pistachio nuts.
- If desired, add a little milk or a few spoonfuls of yogurt.

CREAMIEST RICE PUDDING
OK, so it's a little time-consuming to make this on the stovetop, but for a real rice pudding fan, it's worth every minute. My husband says it reminds him of the rice pudding he used to get as a child at a restaurant.

- In a large saucepan over medium-low heat, combine 1/2 gallon milk, sugar and rice. Simmer, covered, 1 hour, stirring frequently. Remove pan from heat and let rest 10 minutes.
- In a small bowl, combine eggs, 1/4 cup milk, salt and vanilla. Stir into rice mixture and return pot to low heat, stirring constantly, for 2 minutes. Pour into a 9x13 inch dish and cover with plastic wrap, folding back the corners to allow the steam to escape.
- When pudding has cooled to room temperature, remove plastic wrap and sprinkle surface of pudding with cinnamon. Cover tightly (with fresh wrap) and refrigerate 8 hours or overnight before serving.

Steps:
- Bring rice, water and salt to a boil over med-high heat.
- Simmer covered until water has been absorbed (approximately 15 minutes).
- Stir in milk and sugar and cook uncovered over medium heat for 30-40 minutes, stirring frequently--especially towards the end of cooking.
- The pudding is done when the rice and milk have amalgamated into a thick porridge-like consistency.
- DO NOT OVERCOOK or the pudding will be solid instead of creamy once cooled.
- Remove from heat and stir in vanilla.
- Turn into a bowl or cups.
- You can sprinkle cinnamon on the top if you like.
- COVER with plastic wrap directly on surface "IF" you don't want a skin.
- COOL.
