Vanilla Rice Pudding with Blackberry Compote image

This creamy rice pudding is made using leftover rice, so you can cut your cook time in half. The blackberry compote can be served chilled, warm or at room temperature. The syrup will thicken as it cools. The compote is also delicious spooned over vanilla ice cream.

1 1/2 cups blackberries (about 8 ounces)
1/4 cup sugar
1 tablespoon fresh lemon juice, plus 1 teaspoon finely grated zest
3 cups cooked and cooled long-grain rice
1 cup heavy cream
1/2 cup whole milk
3 tablespoons sugar
2 teaspoons pure vanilla bean paste
Kosher salt

Steps:

  • For the compote: Combine the blackberries, sugar, lemon juice and zest in a small saucepan and bring to a simmer over medium heat. Cook, stirring occasionally, until the juice starts to thicken and coats the back of a spoon, about 9 minutes. Remove from the heat, transfer to a medium heatproof bowl and let cool slightly, about 10 minutes.
  • Meanwhile, make the pudding: Combine the rice, cream, milk and sugar in a medium heavy-bottomed saucepan and bring to a boil. Reduce the heat to a simmer and cook, stirring occasionally, until almost all the liquid is absorbed and the pudding has a porridge-like consistency, about 5 minutes. Remove from the heat and add the vanilla bean paste and a pinch of salt, stirring to combine.
  • Divide the rice among 4 bowls and spoon the blackberry compote over the top. Serve immediately.

Hungarian Rice Pudding Cake with Red Wine Cherry Sauce image

Rice tortas, or rice pudding cakes, fall somewhere between a cake and a custard, and are a tradition all over Europe. This one takes its cues from Hungary, and is topped with a rich, red wine compote made with Hungary's prized fruit, cherries. The sauce blends beautifully into the rice giving it contrast in color and flavor-a fine finish to a rich meal.

Butter, for the pan
Rice flour, for dusting
2 1/2 cups cooked medium or long-grain white rice, at room temperature
2 1/2 cups milk
7 large eggs
1 cup sugar
1 heaping teaspoon fresh lemon zest
Pinch fine sea salt
1/4 cup sugar
1/2 cup merlot
1 pound dark sweet cherries, pitted, or 12 ounces pitted frozen cherries

Steps:

  • 1. Preheat the oven to 375 degrees F. Butter a 9-inch cake pan, then line the bottom with parchment paper and butter again. Dust the pan lightly with rice flour. Spread the cooked rice along the bottom of the pan.
  • 2. Warm the milk in a small saucepan over low heat.
  • 3. Beat the eggs, sugar, lemon zest, and salt in a bowl with an electric mixer on medium until pale yellow and the eggs start to thicken, about 1 1/2 minutes, being careful not to over whip which will cause the cake to rise and deflate when baked. Slowly stir in about half the warm milk into the eggs to temper, then add all the eggs to the saucepan and heat, stirring constantly, until it thickens slightly and almost coats the back of a spoon, 6 to 8 minutes.
  • 4. Gently pour the custard over the rice and bake until the cake is just cooked through and wiggles only slightly in the very center, 40 to 50 minutes.
  • 5. While the cake cooks, make the red wine cherry sauce. Combine the cherries, sugar, and wine in a saucepan over medium heat. Cook, stirring until the fruit softens and the liquid is reduced and syrupy, about 10 minutes. Cool and set aside.
  • 6. Transfer the cake to a wire rack to cool for 30 minutes. Invert onto a platter and lift the pan. Remove the parchment paper. Cut into wedges and serve with the cherry sauce.

DRIED FIG, APRICOT AND CHERRY COMPOTE

2 1/2 cups water
1 cup sugar
2 cinnamon sticks, broken in half
1 8-ounce package dried Calimyrna figs, stemmed, figs halved lengthwise
1 6-ounce package dried apricots
1 cup dried tart cherries (about 4 1/2 ounces)
3/4 cup brandy
3 tablespoons chopped crystallized ginger

Steps:

  • Combine 2 1/2 cups water, sugar and cinnamon sticks in large saucepan. Stir over medium heat until sugar dissolves. Bring to boil. Reduce heat to medium-low; cover and simmer 5 minutes. Add figs and simmer uncovered 3 minutes. Remove from heat. Mix in apricots, cherries and then brandy. Return to heat and simmer uncovered until all fruits are tender but still retain shape, about 10 minutes. Remove from heat. Stir in crystallized ginger. Cool. (Compote can be prepared 3 days ahead. Cover and refrigerate.) Serve at room temperature or chilled.

RICE PUDDING WITH APRICOT COMPOTE

Rice pudding is a homely pudding. Topped by a fruit compote such as stewed apricots, it becomes elegant, dinner-party fare. It is also good served with rose petal jam, which you can buy in Middle Eastern stores. Gum mastic (see recipe on page 321) gives the pudding an intriguing, and to me, very delicious flavor, but it is optional. Serve the pudding cold.

1 cup short-grain or risotto rice
1 1/2 cups water
4 1/2 cups milk
3/4 cup sugar, or to taste
2 tablespoons orange blossom or rose water (see pages 6 and 7)
1/2 teaspoon pulverized gum mastic (optional) (see page 6)
2 pounds apricots
1 3/4 cups water
3/4 cup sugar
1 lemon

Steps:

  • Boil the rice in the water for 8 minutes, or until the water is absorbed. Add the milk and simmer over very low heat for about 30 minutes, stirring occasionally to make sure that the bottom does not stick and burn.
  • When the rice is very soft and the milk not entirely absorbed, add the sugar and stir until dissolved. If it is a bit dry, add a little more milk. Add the orange blossom or rose water, or a mix of the two, and cook for a minute longer. Turn off the heat, sprinkle on the mastic, if using, and stir very well before pouring into a serving bowl. There should still be quite a bit of liquid. It will be absorbed as the pudding cools; the result should be creamy. Pour the pudding into a wide serving dish and chill in the refrigerator, covered with plastic wrap.
  • For the apricot compote, wash the apricots, cut them in half, and remove the pits. Put them in a large heavy-bottomed pan with the water, sugar, and lemon juice. Cook, covered, over low heat for 10 minutes, or until the apricots fall apart. Let the fruit cool, then chill it in the refrigerator before spreading it over the rice pudding.

Steps:

  • Combine first 4 ingredients in heavy large saucepan. Stir over medium heat until sugar dissolves. Bring to boil. Add apricots and cherries; simmer until fruit is tender, about 5 minutes. Transfer to bowl. Chill until cold, about 2 hours. (Can be made 1 day ahead. Keep chilled.)

200g pudding rice
600ml skimmed milk
big pinch ground nutmeg
1 tbsp clear honey , plus extra to serve
140g ready-to-eat dried apricot , roughly chopped
zest and juice 1 orange
4 tbsp reduced-fat fromage frais
handful toasted sliced almonds

Steps:

  • Put the rice, milk and nutmeg into a large microwaveable bowl. Cover with cling film, pierce it, then cook on High for 5 mins. Stir and leave to stand for 1 min, then return to the microwave for a further 5-6 mins or until the rice is cooked and all the milk absorbed. Remove from the microwave and stand for a further 2 mins.
  • Put the honey, apricots and orange juice into another microwaveable bowl and cook on High for 1 min until the apricots have plumped up. Stir the syrupy apricots, fromage frais and a pinch of orange zest into the rice. Serve straight away in bowls, topped with a sprinkling of almonds, a little more orange zest and a drizzle of honey to taste.

15g butter, softened, for the dish
140g pudding rice
50g caster sugar
4 tbsp custard powder
1 tsp vanilla bean paste
1 litre whole milk
170ml double cream
150g frozen cherries (frozen sour cherries work well)
50g caster sugar
½ lemon, juiced

Steps:

  • Heat the oven to 180C/160C fan/gas 4 and butter a 1.5-litre baking dish. Put the pudding rice, sugar, custard powder, vanilla, milk and cream in a bowl and whisk to combine. Pour the mixture into the prepared dish. Bake for 1 hr 30 mins until a brown skin has formed on the surface and the rice is cooked through and tender.
  • Tip the frozen cherries into a small saucepan with the sugar and lemon juice. Cook gently over a low heat for 10-15 mins, or until the cherries have softened and the liquid has reduced enough to coat the back of a spoon. Let stand for a minute or two, then serve the rice pudding in bowls with the compote spooned over the top.

Pinch of salt
1 cup sugar
2 tablespoons dry breadcrumbs
1/2 cup chopped blanched slivered almonds (about 2 ounces)
1/4 cup chopped candied orange peel
2 teaspoons (packed) grated lemon peel
1/4 teaspoon almond extract
4 large eggs, separated
Powdered sugar
Cherry-Apricot Compote

Steps:

  • Bring milk to boil in heavy large saucepan. Stir in rice and salt and bring to boil. Reduce heat to low and simmer uncovered until most of milk is absorbed and mixture is thick but still creamy, stirring frequently, about 30 minutes (mixture will resemble thick rice pudding). Add 1/2 cup sugar and stir 2 minutes. Remove mixture from heat and cool to lukewarm, about 30 minutes.
  • Preheat oven to 325°F. Butter 10-inch-diameter springform pan with 2 1/2-inch-high sides. Dust pan with breadcrumbs. Mix almonds, candied orange peel, lemon peel and almond extract into rice mixture. Whisk egg yolks and remaining 1/2 cup sugar in medium bowl to blend. Stir into rice mixture. Cool completely.
  • Beat egg whites in large bowl until stiff peaks form. Fold whites into rice mixture in 2 additions. Transfer mixture to prepared pan. Bake until cake is golden and firm to touch, about 1 hour. Transfer to rack and cool completely in pan. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before serving.)
  • Run small sharp knife around cake to loosen. Release pan sides from cake. Place cake on platter. Sift powdered sugar over cake. Cut into wedges and serve with Cherry-Apricot Compote.
