BONE-IN RIB-EYE WITH GREEN PEPPERCORN PAN SAUCE



Bone-in Rib-Eye with Green Peppercorn Pan Sauce image

2 bone in rib-eye, 2 inches thick
Kosher salt and freshly ground black pepper
3 tablespoons oil
2 shallots, peeled, finely diced
1/2 bunch fresh thyme
1/4 cup cognac
1 cup beef demi
1/4 cup green peppercorns
2 tablespoons Dijon mustard
1/4 cup cream
1 tablespoon honey

Steps:

  • Preheat oven to 425 degrees F.
  • Sprinkle the steaks with salt and pepper. Heat a large cast-iron pan over high heat. Add the oil. Sear the steaks on both sides until a nice crust form, about 3 minutes per side. Place the pan in the oven and cook until desired doneness is reached. When the steaks come out of the oven, take the steaks out of the cast-iron pan.
  • Place the pan on medium heat. Add the shallots to the pan with the thyme. Using the rendered fat from the steaks that is still in the pan, saute until the shallots begin to caramelize, 7 to 10 minutes. Deglaze the pan with the cognac and take the thyme out. Add the beef demi in with the green peppercorns and Dijon. Bring to a simmer, and then add the cream, honey and 1 tablespoon salt. Stir and pour over the steaks.

1/4 cup soy sauce
2 tablespoons honey
1 teaspoon finely grated fresh ginger
1 teaspoon finely grated garlic
1 pound boneless ribeye steak (about 1 1/2 inches thick)
4 ounces cream cheese, softened
2 teaspoons fresh lime juice
1/4 teaspoon toasted sesame oil
1 seedless cucumber, sliced into twenty-four 1/4-inch-thick rounds
Fried Shallots, recipe follows, for serving
1 cup vegetable oil
1 large shallot, thinly sliced
1 tablespoon cornstarch
Kosher salt

Steps:

  • Combine the soy sauce, honey, ginger and garlic in a small baking dish. Add the steak and marinate in the refrigerator for 30 minutes to 1 hour, then let stand at room temperature for 15 minutes.
  • Preheat a grill or grill pan to medium-high heat.
  • Remove the steak from the marinade and grill, turning once, about 5 minutes per side for medium rare. Transfer to a cutting board and let rest for 10 minutes.
  • Meanwhile, mix together the cream cheese, lime juice and sesame oil in a bowl until smooth. Transfer the cream cheese mixture to a small piping bag or plastic bag with a corner snipped off. Pipe a little bit of the cream cheese mixture onto each cucumber round and arrange them on a serving platter.
  • Slice the steak into 3/4- to 1-inch-thick cubes and place one on top of the cream cheese on each cucumber. Top with a few Fried Shallots and serve immediately.
  • Heat the vegetable oil in a small saucepan until very hot (about 350 degrees F on a deep-fry thermometer).
  • Toss the shallots with the cornstarch. Add half of the shallots to the oil and fry, stirring constantly, until golden brown, 1 to 2 minutes. Transfer to a paper-towel lined plate with a slotted spoon. Repeat with the remaining shallots. Sprinkle lightly with salt. Let stand at room temperature until ready to use.

FOR THE PICKLED SHALLOTS:
1/2 cup fresh orange juice
1/2 cup white wine vinegar
1 tsp kosher salt
1-1 ⁄2 cups very thinly sliced shallots (about 4 large)
Black pepper to taste
FOR THE STEAK:
2 rib-eye steaks* (1-1/2 inch thick/3 pound total), trimmed and seasoned with salt & black pepper
3/4 cup extra-virgin olive oil
2 Tbsp. chopped fresh mint
2 Tbsp. chopped fresh basil
1 tsp. minced garlic
Minced zest of 1 orange
Salt and black pepper, to taste
You can use a porterhouse cut of steak, if you wish

Steps:

  • Preheat grill to medium high (we used our Weber grill and briquettes). Brush grill grate with oil. Bring the steaks to room temperature for about 30 minutes, so that it grills more evenly. For the shallots: Boil the orange juice and vinegar in a saucepan. Off heat, stir in shallots, 1 tsp salt; season with pepper, cover and let sit until pickled, at least 15 minutes or as long as overnight. For the steak: Combine oil, mint, basil, garlic and zest in a shallow dish; season with salt and pepper. Grill steaks, covered, about 5 minutes per side for medium. Transfer steaks to oil mixture, tent with foil and let rest 5 minutes. then flip to coat steaks in oil mixture. Serve steaks with pickled shallots. NOTE: Rare = 115f - 120F/ Medium Rare = 125F - 130F/ Medium = 135F - 140F

Pan Seared Veal Rib Eyes with Prosciutto and Fontina image

4 tablespoons olive oil, divided
4 (3/4 to 1-pound) veal rib eye steaks, bone in (1 1/2 to 2 pounds total weight)
2 teaspoons kosher salt
2 teaspoons fresh cracked black pepper
2 tablespoons bacon fat
1/2 pound fontina, thinly sliced
1/4 pound prosciutto, thinly sliced (3 to 4 slices)
1/2 cup finely diced shallots
1 cup beef stock, best quality
1 tablespoon fresh thyme leaves
2 tablespoons butter
2 tablespoons chopped Italian flat-leaf parsley, for garnish

Steps:

  • Preheat the oven to 170 degrees F. Grease a baking sheet with 2 tablespoons olive oil.
  • Pound the steaks to 1/2-inch thickness over plastic wrap. Sprinkle each with salt and pepper and place on the prepared baking sheet. Bake until it reaches an internal temperature of 80 degrees F, about 10 minutes.
  • In 2 large saute pans over medium-high heat, divide the remaining 2 tablespoons olive oil and the bacon fat between the pans and heat until shimmering. Add 2 steaks to each pan and cook for 3 to 4 minutes per side. Place the steaks onto a wire rack over a baking sheet. Top with fontina and then the prosciutto slices, evenly covering the cheese.
  • Adjust the oven to low broil and place the pan in the oven. Broil until the prosciutto is crisp, about 5 minutes. Remove and allow to rest 5 minutes, lightly covered with foil.
  • In each saute pan, evenly divide the shallots and cook for 2 to 3 minutes. Deglaze each with half the beef stock. Evenly divide the thyme and allow to reduce, 3 to 4 minutes. Combine the liquid into 1 pan, add the butter and adjust the seasoning, if desired.
  • Serve the steaks drizzled with the pan sauce and garnish with the parsley.

RIB-EYE MARINATED IN GARLIC, ANAHEIM CHILES AND FRESH OREGANO

8 cloves garlic, finely chopped
3 Anaheim chiles, stems removed, sliced with seed and coarsely chopped
3 tablespoons finely chopped oregano leaves
1/2 cup canola oil
3 (1-inch) thick bone-in rib-eye
Salt and coarsely ground black pepper

Steps:

  • Stir together the garlic, chiles, oregano and oil in a large baking dish. Add the steaks and turn to coat in the marinade. Cover and refrigerate for at least 4 hours and up to 8 hours.
  • Heat grill to high. Remove the steaks from the refrigerator 30 minutes before grilling to take the chill off. Remove from the marinade and season liberally on both sides with salt and pepper. Grill the steaks on both sides until golden brown and slightly charred and cooked to medium-rare and an instant-read thermometer registers 130 degrees F. Remove from the grill to a cutting board and let rest, loosely tented with foil, for 10 minutes. Slice into 1/2-inch thick slices and serve.

Number Of Ingredients 11

1kg shallots
140g coarse crystal sea salt
1 tbsp black peppercorns
1 tbsp coriander seeds
1 tbsp yellow mustard seeds
10 cloves
few pieces of mace blades
pinch of dried chilli flakes (optional)
2 bay leaves
700ml white wine vinegar , plus 31/2 tbsp
100g light brown soft sugar

Steps:

  • The day before pickling, put the shallots in a large bowl and cover with boiling water. Leave to cool, then drain and peel away the skins and trim the root ends.
  • In a large bowl, mix the coarse crystal sea salt with 300ml boiling water and let it dissolve to make a brining solution. Add 1.2 litres cold water, then the shallots. Cover and leave to soak overnight. The next day, drain, rinse then drain again. Pack the shallots into sterilised jars (see tip below).
  • To make the pickling vinegar, put the whole spices in a medium saucepan. Toast over a low heat until they begin to smell aromatic. Add the dried chilli flakes last, as these can easily catch.
  • Add the bay, pour in all of the vinegar and sugar, let it dissolve, and bring to a simmer.
  • Pour the hot vinegar over the shallots and seal while hot. Ready to eat in 1 month, or longer, if you like.
