Relaxing Middle Eastern Tea image

This tea is great with a middle eastern breakfast,pound cake or tea biscuits. Typically just sage or mint is used in tea in the mid east, but I use both sage and mint together. Its my trademark beverage, which everyone always brags about, but you can use just mint or just sage, depends on your preferrence. Sage tea is used often in the mid east for its medicinal purposes, such as upset stomach, alieve cramps e.t.c.

Number Of Ingredients 3

1/2 sprig of fresh mint or 1/2 sprig dried mint
1/2 sprig fresh sage (whole)
2 ceylon tea bags

Steps:

  • Let mint and sage boil in a teapot full of water.
  • Once boiling point is achieved add two tea bags.
  • Dont let tea get too strong or dark.
  • Add sugar as desired.
  • Pour into your favorite cup and enjoy!

Al Amir's Middle Eastern Tea (Hot or Iced) image

My copycat version of Al Amir restaurant's hot/iced tea. I volunteered the rosewater/orange blossom water to the iced tea; it's optional though. Everything is estimated. Rearrange ingredient amounts if desired. If you are using loose tea leaves place them in a tea infuser or muslin cloth.

HOT TEA:
6 c boiling water, approximately
4 black tea bags or loose tea (i used an aged earl grey by numi™)
1 tsp dried mint
3-4 whole cardamom pods
1/4 tsp anise seeds
ICED TEA:
6 black tea bags
3-4 sprig(s) fresh mint
3-4 whole cardamom pods
1/4 tsp anise seeds
2 Tbsp good quality honey, to taste
FOR FINISHING:
fresh mint, for garnish
honey or other sweetener, to taste
rosewater or orange blossom water (for the iced tea version)

Steps:

  • 1. DIRECTIONS FOR HOT TEA: Boil about 6 cups of water. Lightly crush the cardamom and anise seeds in a pestle and mortar or with the back of a spoon. Place the spices in a tea infuser or wrap up in a small piece of muslin cloth.
  • 2. Place tea bags in a heatproof container. Add the spices then the boiling water. Steep for approximately 5 minutes. Remove the tea bags. Serve with honey or sugar on the side.
  • 3. DIRECTIONS FOR ICED TEA: Boil the water and while it boils prepare the spices as indicated in Step #1.
  • 4. Add the spices and tea bags to a heatproof container. Add the honey. Pour the boiling water into the container and allow tea to steep 10 minutes.
  • 5. Remove the tea bags and allow tea to cool about 15-20 minutes.
  • 6. Place the sprigs of fresh mint and about 2 cups of ice cubes in the tea.
  • 7. Pour into individual drinking glasses with a fresh mint leaf floating in each serving. Optional: If desired, add approximately 1/4 teaspoon of rose water and/or orange blossom water to each serving of ICED TEA.

  • Use a traditional Moroccan teapot, with a built-in strainer. Pour a little bit of the boiling water into the teapot to rinse it and then discard the water.
  • Add 1 tablespoon of gunpowder tea in the teapot. Pour a few tablespoons of water into the pot and let the gunpowder tea soak for a while (about 1 minute). Pour the water out and discard it.
  • Add the mint leaves and sugar into the pot. Pour 2 cups (about 1/2 liter) of boiling water into the pot. Put the teapot on a stove over medium heat and bring it to a gentle boil. Be careful not to boil it over!It is hot enough when you can see small bubbles and foam starting to form. Remove it from the heat, and don’t burn your hand (use a mitt).
