PINEAPPLE CHUTNEY

Number Of Ingredients 10

1 onion, diced
2 tablespoons, ginger diced small
6 jalapenos, diced
1 tablespoon cumin - toasted and ground
1/2 cup rum
1 pineapple- diced
1/2 juice of fresh lime
1/2 cup raw sugar
1/4 cup cilantro chopped
Salt and freshly ground pepper

Steps:

  • In saucepan over medium heat, saute onions, ginger, jalapenos, and ground cumin for 6 minutes. Then add rum. Cook until almost all of the liquid has evaporated then add pineapple, lime juice and sugar. Bring to a simmer and turn off the heat. Add fresh cilantro, salt and freshly ground pepper to taste.

12 ounces pineapple (chopped)
4 apples (peeled and chopped, use more or less depending on the size of the apples and what feels right)
4 ounces onions (peeled and chopped, use more if you really like onion)
4 ounces raisins
3 ounces brown sugar
7 ounces light malt vinegar
1/2 teaspoon ground coriander
1/4 teaspoon allspice
1/4 teaspoon ground cloves

Steps:

  • Mix all ingredients in a large saucepan, stir and bring to a boil.
  • Simmer uncovered for about 35-40 minutes, until the chutney is reduced and thickens. Stir frequently!

18 ounces fresh pineapple, pared & cored cut into small pieces
1 small granny smith apple, pared cored & chopped finely
1/2 cup golden raisin, chopped
1/2 cup red bell pepper, finely chopped
1/3 cup red onion, finely chopped
1/4 cup cider vinegar
2 tablespoons fresh gingerroot, finely chopped
1 tablespoon orange marmalade (plus 1 teaspoon)
1 small jalapeno pepper, seeded and finely chopped
1 teaspoon garlic, finely chopped
1 teaspoon yellow mustard seeds (optional)
1/4 teaspoon cinnamon
1 pinch ground cloves
salt & freshly ground black pepper, to taste
1 tablespoon olive oil (plus 1 teaspoon) or 1 tablespoon vegetable oil (plus 1 teaspoon)
20 ounces pork loin chops, with bone

Steps:

  • To prepare chutney, in a heavy medium saucepan, combine all ingredients except oil and pork chops; place over medium-low heat.
  • Bring to simmer; if mixture is dry, add water, 1-2 tablespoons at a time, to keep mixture moist.
  • Cook until mixture thickens and flavors blend, about 40-45 minutes.
  • Preheat oven to 300°F.
  • In heavy 10-inch ovenproof skillet , heat oil over medium-high heat.
  • When hot, add chops and saute 1-1 1/2 minutes each side, until browned.
  • Place skillet in oven and cook another 10-15 minutes, turning occasionally.
  • Serve with pineapple-apple chutney.

3/4 cup white vinegar
5 apples, cored, peeled and sliced
2/3 cup brown sugar
1/4 lemon rind, chopped
1/4 cup orange rind, chopped
1/2 cup candied ginger, chopped
1/4 cup green grape, sliced and seedless
1 garlic clove, smahed and chopped
1 mango, peeled and sliced
1/4 teaspoon mustard seeds
1/4 teaspoon ginger powder
salt, to taste
black pepper, to taste

Steps:

  • place vinegar in saucepan and bring to a boil over medium heat. add apples and partly cover, cook 5 minutes.
  • mix remaining ingredients and continue cooking, partly covered for 13 minutes.
  • stir several times during cooking.
  • cool and serve with meat or use as a sandwich spread.

2 tbsp sunflower oil
3 red onions , finely chopped
1 tbsp yellow mustard seeds
1 tbsp black onion seeds (kalonji or nigella)
1 tsp turmeric
2 pineapples peeled, cored and chopped into small chunks
1 red chilli , deseeded and finely chopped
thumb-sized piece ginger , finely chopped
250g soft light brown sugar
175ml cider vinegar

Steps:

  • Heat the oil in a large heavy-based pan. Tip in the onions and spices and cook for 5 mins until fragrant. add the rest of the ingredients plus 1 tsp salt and simmer for 1 hr until dark golden and thick. Pour into sterilised jars and allow to cool before covering.

2 cups apple cider vinegar
2 cups sugar
2 pounds Granny Smith apples, peeled, cored, cut into 3/4-inch pieces (about 7 cups)
1 cup raisins
5 whole cloves
1 teaspoon salt
1 teaspoon dried crushed red pepper
1 1/2 teaspoons ground ginger

Steps:

  • Stir vinegar and sugar in heavy medium saucepan over medium-high heat until sugar dissolves. Boil without stirring until syrupy and reduced to 1 1/2 cups, about 15 minutes. Reduce heat to medium. Add all remaining ingredients. Simmer until apples are tender, liquid is absorbed, and mixture thickens slightly, stirring occasionally, about 30 minutes. (Can be prepared up to 2 weeks ahead. Cool completely. Refrigerate in airtight container.)
