This recipe is one of my family's favorites, and I make the treats a lot, especially at Christmas. I have three children and eight grandchildren, and every one of them loves those "peanut butter thingies," as the grandchildren call them! -Jodie McCoy, Tulsa, Oklahoma

COOKIE:
1/2 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1 large egg, room temperature
1/2 cup creamy peanut butter
1/2 teaspoon vanilla extract
1-1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
FILLING:
42 miniature peanut butter-chocolate cups

Steps:

In a bowl, combine the butter, sugars, egg, peanut butter and vanilla; beat until smooth. Combine the flour, baking soda and salt; gradually add to creamed mixture. Cover and chill for 1 hour or until easy to handle., Roll into 42 walnut-sized balls; place in greased miniature muffin cups. Bake at 375° for 8-9 minutes. , Remove from oven; gently press 1 peanut butter cup into each cookie, forming a depression. Cool for 10 minutes before removing to wire racks to cool completely.

My family loves peanut butter cups and I got this recipe off of one of the bags of candy. I make them each Christmas and they go fast! A Tip From JAP Member Deneece Gursky - - to make this cookie even easier just go purchase a tube of Pilsbury Peanut Butter Cookie Dough and following the instructions on this recipe. Cuts the time down and you can have an amazing cookie in no time at all. Thanks Deneece!

1/2 cup(s) butter, softened
1/2 cup(s) sugar

Steps:

In a bowl, combine the butter, sugars, egg, peanut butter and vanilla; beat until smooth. Combine the flour, baking soda and salt and gradually add this to your creamed mixture. Cover and chill for 1 hour our until easy to handle.
Roll into walnut size balls; place in a greased miniature muffin cup pan. Bake at 350° for 8 minutes.
Remove from oven and gently press one peanut butter cup into each cookie, forming a depression. Cool for 10 minutes in pan until removing to wire racks.
Note: If it looks like the peanut butter cup is melting too quickly just put the pan in the frig for a few moments.

In a small bowl, combine the peanut butter and maple syrup, and stir until well blended. Fill a mini cupcake pan with liners or arrange mini cupcake liners on plate(s) like I did.
Melt the chocolate (I did this in the microwave in 30-second bursts, stirring after each one, or you can use a double boiler on the stove).
Fill the bottom of each cup with 1 teaspoon of the melted chocolate. Add a small dollop of the peanut butter mixture in the center (about 1/2 teaspoon), then top it with another teaspoon of the chocolate.
Freeze the candies for 5 minutes. Sprinkle sea salt lightly over the tops (if using), then freeze until firm, about 25 minutes more. Now they’re ready to eat!

Heat oven to 375°F. Remove wrappers from candies. Line small muffin cups (1-3/4 inches in diameter) with paper bake cups.
Beat butter, brown sugar, granulated sugar, peanut butter, egg and vanilla until light and fluffy in large bowl. Stir together flour, baking soda and salt; add to butter mixture, beating until well blended. Shape dough into 1-inch balls; place one in each prepared muffin cup. Do NOT flatten.
Bake 10 to 12 minutes until puffed and lightly browned; remove from oven. Immediately press peanut butter cup or piece onto each cookie. Cool completely in muffin pan.
