I took Bisquick's Impossibly Easy Vegetable Pie and bulked it up with extra veggies and lowered the fat by substituting fat-free milk and cheese and self-rising flour for the Bisquick. It is a completely delicious and low-cal vegetarian dish that would work for a savory breakfast, a brunch, lunch and I've even served it for dinner. You can substitute cauliflower for the broccoli or try half of each. I just love the broccoli too much to try anything else!

3 cups chopped broccoli
1/2 cup chopped onion
1/3 cup chopped green bell pepper
1/3 cup chopped red pepper
1 cup shredded fat-free cheddar cheese
1/2 cup self-rising flour
1 cup skim milk
1/2 teaspoon salt
1/4 teaspoon pepper
2 eggs

Steps:

  • Heat oven to 400ºF. Spray a 9-inch pie plate with cooking spray.
  • Microwave broccoli in a covered dish for 2-3 minutes, or until almost tender. Stir together cooked broccoli, onion, bell pepper and cheese in a medium bowl and transfer mixture to pie plate in an even layer.
  • Stir remaining ingredients until blended. Pour over vegetable mixture in pie plate.
  • Bake 35 to 45 minutes or until golden brown and knife inserted in center comes out clean. Cool 5 minutes.

1 cup cheddar cheese, shredded
1/2 cup Bisquick, mix
1 cup milk, fat free
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon cayenne pepper
2 large eggs

Steps:

  • Heat oven 400 degrees. Spray 9 inch glass pie plate with spray. In saucepan, heat 1 inch water to boiling. Add broccoli. Cover and heat to boiling. Cook 5 minutes then drain.
  • In the pie plate, mix broccoli, onion, bell pepper and cheese. In a medium bowl, stir together the remaining ingredients. Pour on top of veggies and cheese in the pie plate.
  • Bake uncovered 30 to 35 or till golden brown and knife inserted comes out clean. Let stand 5 minutes before cutting.

1 1/2 cups shredded Cheddar cheese
1/3 cup chopped onion
1/2 cup Original Bisquick™ mix
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup milk
2 eggs

Steps:

  • Heat oven to 400°F. Grease 9-inch pie plate. Mix vegetables, 1 cup of the cheese and the onion in pie plate.
  • Stir remaining ingredients except cheese in medium bowl, using fork, until blended. Pour into pie plate.
  • Bake uncovered about 35 minutes or until knife inserted in center comes out clean. Sprinkle with remaining cheese. Bake 1 to 2 minutes longer or just until cheese is melted.

1 medium onion, chopped (1/2 cup)
1 small green pepper, seeded and chopped (1/2 cup)
1 cup cheddar cheese, shredded (4 oz)
3/4 cup Bisquick
1 1/2 cups milk
3 eggs
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat the oven to 400 degrees fahrenheit.
  • Grease a 10" pie plate.
  • Boil 1" of water in a saucepan and add the broccoli. Cover and return to a boil. Boil for 5 to 7 minutes or until almost tender and then drain.
  • In a bowl, mix the cooked broccoli, onion green pepper and cheese.
