RED SNAPPER WITH WARM TOMATO SALAD
Steps:
- Mix tomato wedges, red onion, basil, dill, mint, olive oil and minced garlic in medium bowl. Season salad to taste with salt and pepper.
- Cut 4 foil pieces, each large enough to enclose 1 fish fillet completely. Place foil pieces on work surface. Place 1 red snapper fillet in center of each foil piece. Season snapper fillets with salt and pepper. Top each fillet with 1/4 of tomato salad. Fold up foil around fish and salad; seal foil on all sides, enclosing fish and salad completely.
- Prepare barbecue (medium-high heat) or preheat broiler. Place foil packages, folded sides up, on grill or broiler pan. Grill or broil until fish is cooked through and salad is warm, about 12 minutes. Transfer foil packages to plates; allow diners to open their own packages.

- Preheat grill pan or indoor electric grill to medium high heat. Drizzle snapper with extra-virgin olive oil. Combine spices in a small bowl. Rub fish with spice mixture. Cook fish 5 minutes skin side down first. Turn fish and cook 5 to 6 minutes longer.
- Combine salsa ingredients in a small bowl and allow it to marinate until ready to serve.
- To serve, plate spiced snapper with a generous serving of salsa. Sangria makes a wonderful beverage for this meal.

- Place half of the jalapeno rings, half of the ginger and the cilantro stems in the cavity of the fish. Place the fish in a 14-by-9-by-2-inch oval dish. Coat both sides of fish with the lime juice. It is fine for the tail to hang over the edge of the dish. Scatter the remaining jalapeno, ginger and cilantro leaves around the fish.
- Cover the dish tightly with microwave plastic wrap, making sure the tail is well covered and plastic adheres to dish. Cook at 100 percent power in a high-power oven for 11 minutes. Prick plastic to release steam.
- Remove from oven and uncover. Sprinkle the salt into the broth made by the fish. Serve immediately, spooning the broth over the fish.

RED SNAPPER WITH EGGPLANT AND TOMATO

- In a large saucepan, place 1 tablespoon of the olive oil and the onion, cover the pan, and sweat the onion for about 10 minutes. Then, add the tomatoes, thyme, bay leaf, garlic, 1 tablespoon of the vinegar, the honey and 1 additional tablespoon of the oil. Simmer, uncovered, over medium heat for 15 minutes, until much of the liquid has evaporated. Discard the bay leaf, and season to taste with salt and pepper. Puree in a food processor, and then put through a fine sieve.
- Heat 2 more tablespoons of the oil in a large nonstick pan, and fry the eggplant until the rounds are golden brown on both sides. Repeat until all the eggplant has been cooked, adding more oil, if needed, for each new batch. Drain on paper towels; season with salt and pepper.
- Add the remaining tablespoon of vinegar to the pan, and stir for 1 minute over high heat to deglaze the pan. Spoon the liquid over the eggplant.
- Clean the nonstick pan. Working very carefully with the fish fillets, salt and pepper them on both sides. Place the fillets in the pan, and over medium heat fry them for 2 to 3 minutes on each side in the remaining 2 tablespoons of oil.
- For each serving, place the tomato sauce in the middle of the plate, top with several rounds of the eggplant and then, carefully, with 2 fish fillets, skin side up. Serve warm.

- Coat the halved cherry tomatoes in some oil and salt them well. Place them, cut side up, on a baking sheet and put in the oven at 200°F; no need to preheat. If you have a convection oven, turn the fan on. Or, you can put the tomatoes on a rack in your dehydrator and set it to 135°F. It will take longer for the tomatoes to get semi-dry, but it won't heat up your kitchen. Cook the tomatoes until they are about half dried, about 45 minutes to 1 hour in the oven, a bit longer in a dehydrator. Keep an eye on the tomatoes every 20 minutes or so, as different tomatoes and different ovens will give you different results.
- When the tomatoes are ready, heat the clarified butter in a large saute pan over high heat. As the butter is heating, pat the fish dry with paper towels. If you want a crispy skin, use a butter knife to scrape down the skin; this removes a but more moisture and results in a crispier skin.
- When the butter is hot, lat the fish skin side down in the pan, even if there is no skin; this side is flatter. Turn the heat down to medium-high and sear the fish well. As it cooks, use a spoon to baste the other side of the fish until it's just barely cooked: About 30 seconds of basting will do the trick. When the bottom of the fish is nicely browned, about 6 to 8 minutes, it should be ready. It should also lift up from the pan easily. Set the fish on a cutting board skin side up.
