I ENTERTAIN at least once a month. After I served this at a dinner party for eight, I decided to reduce the recipe to serve two. It turned out just as delicious. I cherish my recipes and don't often share them, but this one got so many requests I decided to send it in for Reminisce readers to enjoy. -Jeannette Wojtowicz, Buffalo, New York

1 tablespoon chopped onion
1 tablespoon butter
5 butter-flavored crackers, crushed
1 haddock, sole or cod fillet (about 1 pound)
1/3 cup condensed cream of celery soup, undiluted
1 tablespoon sour cream
Paprika

Steps:

  • Preheat oven to 350°. In a skillet, saute onion in butter until tender. Stir in crackers and enough water to hold mixture together. Cut a pocket into side of fillet; stuff with cracker mixture. , Place in a greased baking dish. Combine soup and sour cream; spread over fish. Sprinkle with paprika. Bake, uncovered, 25-30 minutes or until fish flakes easily with a fork.

This recipe came from my cookbook "Crazed for Cranberries" very tasty.

2 1/2 lb haddock fillets
1/2 c chopped onion
1 Tbsp canola oil
1 Tbsp lemon juice
1 c cranberries
1/2 c packed brown sugar
1/2 c orange juice
1/4 tsp salt
2 Tbsp minced parsley
2 c cooked white or brown rice
1 egg, beaten
1 tsp canola oil
1 tsp paprika

Steps:

  • 1. Spray a large casserole with nonstick oil. Place half the fillets on bottom of casserole.
  • 2. Saute' onion in oil. Add lemon juice, cranberries, sugar, orange juice and salt. Simmer for 25 minutes.
  • 3. Preheat oven to 350 degrees F. In mixing bowl combine cranberry sauce with parsley, cooked rice and beaten egg. Spread mixture over haddock fillets. Place remaining fillets over cranberry mixture. Brush with oil, sprinkle with paprika. Bake 35 minutes.

An awesome meal for anytime, and especially impressive to guests yet so simple to make. Haddock fillets are stuffed with a crab and cheese stuffing then baked. A must try - it will be a keeper. Great with salad and rice or potato! Enjoy.

3 tablespoons olive oil
1 stalk celery, finely chopped
3 green onions, finely chopped
1 teaspoon minced garlic
1 (6 ounce) can lump crabmeat, drained
3 slices dry white bread, crusts removed and cubed
¼ teaspoon salt
¼ teaspoon ground black pepper
1 egg, beaten
½ cup grated Romano cheese
2 tablespoons lemon juice
1 tomato, seeded and diced
⅛ teaspoon ground black pepper
5 tablespoons butter, melted
6 (4 ounce) haddock fillets

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
  • Heat olive oil in a skillet over medium heat. Add celery, green onion and garlic, and cook and stir for a few minutes until soft. Remove from heat, and stir in the crabmeat, bread cubes, egg, Romano cheese, lemon juice, and tomato. Season with salt and 1/4 teaspoon of pepper, and mix until well blended.
  • Lay the haddock fillets in the prepared baking dish. Brush each one with melted butter. Place a heaping tablespoon of the crab mixture onto half of each fillet, and fold the other half over to cover. Secure with toothpicks if desired. Sprinkle on any remaining stuffing, and drizzle with any leftover melted butter. Cover the dish with a lid or aluminum foil. (The dish may be also made ahead of time and refrigerated at this point.)
  • Bake for 20 minutes in the preheated oven, then remove the cover and bake for an additional 10 minutes, until the top has browned and the fish flakes easily with a fork.

What's better than a delicious baked fish? A baked fish that has been stuffed with crabmeat, of course! This dish is so easy you can make it on a weeknight.

2 tablespoons crab meat
2 tablespoons breadcrumbs
1 teaspoon fresh dill, chopped
2 teaspoons lemon juice
2 haddock fillets
2 teaspoons olive oil
salt, to taste
pepper, to taste

Steps:

  • Preheat the oven to 350 F.
  • In a bowl, mix together the crab, breadcrumbs, dill, and lemon juice.
  • Using a sharp knife, gently slice a deep pocket into each haddock fillet.
  • Stuff each fillet with half of the crab filling.
  • Transfer the haddock to a baking dish, drizzle with olive oil, and season with salt and pepper.
  • Bake the haddock for 25 to 30 minutes, until it is opaque and flaky.
  • Top with lemon-butter sauce if desired, and serve immediately.

STUFFED PORK CHOPS WITH CRANBERRIES

Pork chops, baked or grilled, stuffed with cranberries and pine nuts, served with cranberry sauce.

1 cup dried cranberries
2 cups boiling water
2 tablespoons toasted pine nuts
1 teaspoon ground cinnamon
½ teaspoon ground cloves
1 tablespoon brown sugar
4 cups chicken stock
¼ cup white wine
¼ cup red wine
¼ cup cranberry juice
1 tablespoon brown sugar
4 (1-inch thick) pork chops
salt and black pepper to taste
2 tablespoons olive oil
2 tablespoons dried cranberries
2 tablespoons toasted pine nuts

Steps:

  • To prepare the cranberry filling: Soak 1 cup dried cranberries in the boiling water for 20 minutes. Drain the cranberries, reserving 1/4 cup of the water. Place the cranberries, reserved water, 2 tablespoons pine nuts, cinnamon, cloves, and 1 tablespoon brown sugar in a food processor. Process until finely chopped; set aside.
  • Bring the chicken stock to a boil over high heat. Reduce heat to medium, and simmer until the chicken stock has reduced to half its original volume, about 15 minutes. Add the white wine, red wine, cranberry juice, and 1 tablespoon of brown sugar. Continue cooking until the sauce has reduced by half again, about 10 minutes. Keep warm.
  • Preheat an oven to 400 degrees F (200 degrees C).
  • Cut a pocket into the side of each pork chop, about 3/4 of the way through. Stuff each pork chop with the dried cranberry mixture, then season on all sides with salt and pepper to taste. Heat the olive oil in a large, ovenproof skillet over medium-high heat until it begins to smoke. Cook the pork chops on one side until golden brown, 3 to 4 minutes. Turn the pork chops over, and cook another few minutes until browned on the other side too.
  • Pour 1 cup of the sauce into the skillet and bring to a simmer. Place the skillet in the preheated oven, and bake until the pork is no longer pink in the center, 8 to 10 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
  • To serve, place each pork chop onto a warmed dinner plate, and spoon the sauce from the skillet over top. Sprinkle the pork chops with 2 tablespoons dried cranberries and 2 tablespoons toasted pine nuts for decoration. Serve with the remaining cranberry sauce.

SAUSAGE & CRANBERRY STUFFING

Make stuffing balls to serve alongside your Christmas turkey, or cook the mix in a baking dish if you prefer

1 onion , finely chopped
25g butter
2 slices white bread , whizzed to chunky breadcrumbs
200g sausagemeat
1 apple , peeled and grated
200g cranberry
50g pistachios
4 sage leaves, finely sliced
½ tsp mixed spice
bay leaves , to serve (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Cook the onion in the butter until soft but not browned. Add the breadcrumbs and stir so they soak up all the excess butter and fat. Let the mixture cool. Tip into a bowl with the sausagemeat, apple, cranberries, pistachios, sage and mixed spice. Mix well, then roll into balls. You can now cover and chill for up to a day before cooking.
  • To cook, place in a roasting tin and bake for 40 mins, turning a few times, or until browned all over. Add the bay leaves, if using, for the final ten minutes of cooking.

1-1/2 cups chopped celery
1/2 cup chopped onion
9 tablespoons butter, divided
6 cups cubed bread
3/4 cup chopped pecans
1/3 cup orange juice
1-1/2 teaspoons grated orange zest
1 teaspoon salt, divided
6 haddock, cod or halibut fillets (6 ounces each)
ORANGE-CRANBERRY SAUCE:
1/2 cup sugar
2 teaspoons cornstarch
1/2 cup water
1/2 cup orange juice
1 cup fresh or frozen cranberries
2 teaspoons grated orange zest

Steps:

  • Preheat oven to 350°. In a large skillet over medium heat, cook and stir celery and onion in 6 tablespoons butter until tender. Stir in bread cubes, pecans, orange juice, orange zest and 1/2 teaspoon salt. Transfer to a greased 13x9-in. baking dish. Arrange fillets over stuffing. , Melt remaining butter; drizzle over fillets. Sprinkle with remaining salt. Bake, uncovered, 25-28 minutes or until fish flakes easily with a fork. , In a small saucepan, combine sugar and cornstarch; whisk in water and orange juice until smooth. Bring to a boil, stirring constantly. Add cranberries; cook 5 minutes or until berries pop. Stir in orange zest. Serve with fish and stuffing.

I was given this recipe at least 30 years ago and have yet to find anyone that doesn't love it. (Providing they like seafood) I always use haddock as I'm from Maine. Fresh is expensive right now but as far as I'm concerned there's no better tasting white fish. Can use frozen haddock or another white fish . Simple to make but soooo yummy...Don't worry about the mayo..I Promise you will not taste it.

2 -3 tablespoons mayonnaise
2 lbs haddock fillets (preferably. Can use another white fish like Cod, etc.)
1/2 cup plain breadcrumbs
1 teaspoon ground sage
1 tablespoon parsley flakes
1 -2 garlic cloves, crushed or 2 -3 good pinches garlic powder
1/2 teaspoon salt (optional)
1 teaspoon Bell's seasoning
15 Ritz crackers, crushed
6 tablespoons butter, melted (can use a little more or less)

Steps:

  • Heat oven to 350 degrees.
  • Rinse and pat dry the filets.
  • Lay in single layer in baking dish.
  • Spread a thin layer of mayonnaise over fish (I put it on a little thicker. You will not taste it).
  • In small bowl, combine bread crumbs with next 5 ingredients.
  • Sprinkle evenly over fish.
  • Top with crushed Ritz Crackers.
  • Bake 5 minutes.
  • Remove from oven and pour melted butter over crackers.
  • Return to oven, bake 15 more minutes or until filets flake.
  • Try not to overcook
  • (Total bake time about 20 minutes).
