RED CURRY AND LIME BUTTER CHICKEN WINGS

24 chicken wings separated at the joint
olive oil
salt
1/2 c melted butter
1 Tbsp red curry paste
1 large lime juice and zest
3 Tbsp honey
1 Tbsp soy sauce

Steps:

  • 1. Preheat oven 425 degrees. Line a large baking sheet with wax paper. Line the chicken wings skin side up on the baking sheet. Drizzle with olive oil and sprinkle with salt. Roast for 20 minutes then turn on the broiler and broil about 3 to 5 minutes until golden.
  • 2. Mix the ingredients together for the sauce. Throw the chicken wings in the sauce and toss until well coated in the sauce.

These Thai Style Red curry lime wings area rich, spicy, tangy, delicious and make an excellent appetizer for your next dinner party or a snack while watching your favorite sports on a Sunday afternoon!

1.5 pounds chicken wings ((680g))
salt and pepper
2-3 teaspoons Thai Red Curry paste ((you can find this in a can or packet at the Asian grocery store and some large supermarkets))
½ tablespoon soy sauce
½ tablespoon olive oil
3 teaspoons honey
Juice from ½ of a large lime
¼ teaspoon salt
a handful of chopped cilantro

Steps:

  • Season the wings with salt and pepper (we used the little drumettes only, because they're actually cheaper here in China than the other part of the chicken wing, and we like them better). It's best to marinate them overnight, but it's not strictly necessary.
  • Preheat the oven to 425 degrees and roast the wings for 30 minutes. We're not allowed to barbecue here in the city center of Beijing, but feel free to grill the wings if you want. The smokiness will be fantastic.
  • While that's going, combine the rest of the ingredients in a mixing bowl to form the sauce. Toss the hot wings in that mixture and serve.

1 cup Greek yogurt
1/4 cup crumbled blue cheese, such as Cabrales
2 tablespoons finely chopped fresh cilantro
2 tablespoons finely grated red onion
Salt and freshly ground black pepper
Canola oil
1 dozen chicken wings split at the joint, wing tips removed and discarded
Salt and freshly ground black pepper
2 tablespoons ancho chile powder
1 tablespoon New Mexico chile powder
2 teaspoons ground cumin
1/2 cup red wine vinegar
1 to 2 tablespoons pureed chipotle chile in adobo
1 to 2 tablespoons honey
1 tablespoon Dijon mustard
1 stick unsalted butter, quartered
Finely chopped fresh cilantro, for garnish

Steps:

  • For the blue cheese sauce: Stir together the yogurt, blue cheese, cilantro, onions and salt and pepper to taste in a bowl. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
  • For the hot wings: Heat 2 to 3 inches of oil in a large, high-sided pan until it reaches 375 degrees F on a deep-fry thermometer.
  • Sprinkle the wings with salt and pepper. Stir together the chile powders, cumin, 1 teaspoon salt and some pepper in a shallow bowl. Dust the wings with the seasoning mixture and toss in a bowl to evenly coat. Add the wings to the oil in batches and cook until golden brown and cooked through, 8 to 10 minutes.
  • For the glaze: In a large bowl, combine the vinegar, chipotle in adobo, honey and Dijon mustard. To a small saute pan, add the butter and melt. Add the melted butter to the bowl with the vinegar-honey mixture and stir to combine.
  • Toss the freshly fried wings with the glaze in the bowl. Garnish with cilantro. Serve with the blue cheese sauce.

Extra-virgin olive oil, for drizzling
Salt and freshly ground black pepper

1 1/2 limes, juiced
6 tablespoons unsalted butter, at room temperature
2 tablespoons coconut milk
1 tablespoon Thai red curry paste
1 tablespoon honey
1 teaspoon soy sauce
Zest of 1 lime
1 tablespoon fresh cilantro leaves, chopped
1 tablespoon fresh mint leaves, chopped
1 tablespoon roasted peanuts, chopped
1/4 Thai bird chile, sliced into rings

Steps:

  • Preheat the oven to 475 degrees F.
  • Spread the wings on two large rimmed baking sheets, then drizzle with olive oil, the juice of 1 lime and some salt and pepper, and toss to evenly coat. Bake the wings until browned and crisp, about 40 minutes.
  • In a large bowl, mix the butter with the coconut milk, curry paste, honey, soy sauce, lime zest and the remaining lime juice. Add the wings to the butter and toss to coat. Add the cilantro, mint, peanuts and chiles, then toss to coat. Serve hot.

4 tablespoons chopped garlic
3 tablespoons chopped shallots
2 tablespoons fresh galangal
2 tablespoons fresh ginger
Rind of 1 kaffir lime (substitute regular lime zest or kaffir lime leaf)
2 tablespoons ground dried red chilies
Fish sauce, to taste
2 tablespoons roughly chopped holy basil leaves (if unavailable, sweet basil can be used)
1 cup coconut cream
3 boneless chicken breasts, sliced into small chunks
2 cups coconut milk
2 tablespoons fish sauce
1 cup chopped baby eggplant
1 Thai red chili, stemmed, seeded, and thinly sliced
Steamed rice, for serving

Steps:

  • To make the paste, grind and mash all the ingredients together in a mortar until a thick, red paste is formed.
  • To make the curry, first heat the wok until very hot and add the coconut cream until it begins to boil. Then, add the chicken and curry paste and fry together for a few minutes. Next, add the coconut milk, fish sauce and baby eggplant along with the fresh chilies and simmer for 10 minutes. Remove from the heat and serve with steamed rice.

Extra-virgin olive oil
Kosher salt and freshly ground black pepper
8 tablespoons (1 stick) unsalted butter, softened
1 big, fat rounded tablespoon Thai red curry paste
1/4 cup honey
1/4 cup soy sauce
1 lime, halved
Chopped cilantro leaves, for garnish

Steps:

  • Preheat the oven to 425 degrees F.
  • Rinse the wings under cool water and pat dry. Put them in a bowl, drizzle with olive oil and season well with salt and pepper. Toss to coat with the seasoning. Then spread the wings out on a baking sheet and roast about 25 minutes until the skin gets crisp and brown, and the meat is tender.
  • While you wait, throw the butter, red curry paste honey and soy sauce into a blender. Season with salt and puree. Scrape into a big bowl. When the wings come out of the oven put add to the bowl with the curry butter. Squeeze the juice of the lime over the wings. Give it a toss and you're done. Garnish with cilantro.

Warm up on a chilly fall evening with this Thai-inspired curry. The classic mix of sweet coconut milk and savory red curry paste are sure to liven up a weeknight meal. Instead of a traditional wok, I am using a casserole dish and letting the chicken braise in the oven.

Two 13.5-ounce cans coconut milk (not light)
3 tablespoons red Thai curry paste
1 tablespoon fish sauce
1/2 medium onion, sliced
2 lemongrass stalks, trimmed and banged with the back of a knife, then roughly chopped
4 cloves garlic, smashed
One 1-inch piece fresh ginger, peeled and cut into rounds
1 whole chicken (about 3 1/2 pounds), cut into 6 pieces
Kosher salt
1/2 cup roughly chopped cilantro
1/2 cup roughly chopped basil (preferably Thai basil)
Lime wedges, for serving
Cooked rice or crusty bread, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Whisk the coconut milk, curry paste, and fish sauce together in a 9-by-13-inch baking dish; add the onion, lemongrass, garlic, and ginger. Lightly season the chicken and add it to the baking dish, turning to coat in the sauce, then arranging it skin-side-up.
  • Bake the chicken, basting occasionally with the sauce, until lightly browned on top and cooked through (an instant read thermometer inserted into the center of a breast registers 160 degrees F), 50 to 55 minutes. Sprinkle with the cilantro and basil and serve with lime wedges on the side. Serve with cooked rice or crusty bread to soak up the sauce.
