A decadent savory cherry sauce sweetened with wine and balsamic vinegar. The perfect accompaniment to lamb, pork, and more!

1 tsp olive oil
¼ cup shallots (sliced)
1¼ cup frozen pitted cherries
1 tbsp balsamic vinegar
⅓ cup sweet red wine
⅛ tsp salt
⅛ tsp black pepper
¼ tsp chipotle pepper ((optional))
1 tbsp butter

Steps:

  • Heat oil in a small pot, and sauté the shallots until caramelized.
  • Add cherries, vinegar, and wine. Simmer the savory cherry sauce for twenty minutes so that it can reduce and thicken.
  • Season the sauce with salt, black pepper, and chipotle pepper (if using). Finally, swirl in the butter.
  • Serve this yummy sauce with lamb, pork, chicken, and more!

Rack of Lamb with a Merlot Glaze and Cherry Reduction Sauce image

This is a truly special dinner entree. A bit labor intensive to start off with, but once you have the glaze and cherry sauce done the rest of the preparation goes together like a dream, and the taste is out of this world. If you really have some special guests you want to impress, then this is the perfect choice. I accompany mine with sea salt roasted baby potatoes and green beans.

2 cups merlot or 2 cups other red wine
2 cups fresh cherries pitted ( I have very successfully substituted bottled morello c
2 cloves garlic chopped
1 shallots chopped
4 cups lamb stock or 4 cups chicken stock
1 tablespoon unsalted butter
Salt ~~amp pepper
1 bottle (750 ml) merlot
1 1/2 cups balsamic vinegar good quality
1 shallots chopped
1 clove garlic chopped
4 lamb racks excess fat trimmed and bones frenched ( 1 1/2 to 2 lbs. each)
Salt and pepper & pepper
1 tablespoon extra virgin olive oil
rosemary sprigs sprigs

Steps:

  • To prepare the sauce; combine the wine, cherries, garlic and shallot in a saucepan over high heat and reduce until the mixture is almost dry, about 10 minutes. Add the stock, decrease the heat to medium, and reduce until the sauce is thick and coats the back of a spoon, 10 to 15 minutes. Add the butter and stir until melted. Season to taste with salt and pepper. Keep warm until you are ready to serve. Preheat oven to 300*F. To prepare the glaze, combine the wine, vinegar, shallot and garlic in a saucepan over medium heat and reduce until about 1/2 cup liquid remains, 20 to 25 minutes. Set aside until you are ready to use it. To prepare the lamb, season the racks well with salt and pepper. Heat the oil in a large saute pan over high heat until smoking hot. Add as many of the racks as will fit without overcrowding the pan, meat side down, and sear well, 3 to 4 minutes; transfer to a sheet pan. Continue searing the remaining racks. Baste the racks well with the glaze. Set the pan in the oven and roast, basting every 5 minutes, until the meat reaches an internal temperature of 135*F for medium-rare doneness about 20 minutes. Remove the racks from the oven and let sit for about 5 minutes, then slice. To serve, place the slices on a warm serving platter and drizzle with some of the sauce. Garnish with rosemary sprigs and serve warm, with any extra sauce on the side.

Cider vinegar, honey, and bone broth mixed with fresh or frozen cherries makes a sweet, sour, and deeply savory sauce that pairs well with easy broiled lamb chops.

Glaze:
1 cup cherries
3/4 cup Gut-Healing Bone Broth
2 teaspoons apple cider vinegar
2 teaspoons honey
1 tablespoon tapioca starch
Lamb:
4 (1/2-inch-thick) 100% grassfed, pasture-raised lamb chops
2 tablespoons avocado oil
2 tablespoons fresh rosemary leaves
1 teaspoon minced garlic
1/2 teaspoon fine sea salt
1/2 teaspoon freshly ground
Black pepper

Steps:

  • To make the glaze:
  • In a saucepan at medium-high heat, combine the cherries, 1/2 cup bone broth, apple cider vinegar, and honey. Bring to a boil, and then lower the heat to a simmer for 8 minutes, stirring occasionally. In a separate bowl, add 1/4 cup bone broth and tapioca starch. Whisk together. Once combined, pour into saucepan and stir until sauce thickens.
  • To make the lamb chops:
  • Turn the oven to broil. Brush the avocado oil on the chops. Combine seasonings and press evenly onto chops. Place chops in a baking dish and broil for 5 to 6 minutes on each side. Transfer lamb to a plate and let rest for 5 minutes. Top with cherry glaze and serve.

2 frenched racks of lamb (1-1/2 pounds each)
1/2 cup honey
1/2 cup cherry preserves
2 teaspoons olive oil
1 teaspoon lime juice

Steps:

  • Place lamb on a greased foil-lined baking sheet. Drape a piece of heavy-duty foil over bones to prevent overbrowning. In a small bowl, combine the honey, preserves, oil and lime juice. Set aside 1/2 cup. Spoon half of the remaining glaze over lamb. , Broil 4-6 in. from the heat for 10-12 minutes or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), basting once with remaining glaze. , Remove lamb from the oven and loosely cover with foil. Let stand for 5 minutes before cutting. Brush with reserved glaze.

1/4 teaspoon salt

4 lamb loin chops (4 ounces each)
1 garlic clove, minced
1/4 cup beef broth
1/4 cup cherry preserves
1/4 cup balsamic vinegar

Steps:

  • Combine rosemary, salt and 1/8 teaspoon pepper; rub over lamb chops. In a large skillet coated with cooking spray, cook chops over medium heat for 4-6 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). 4 racks of lamb (1 to 1-1/2 pounds each), trimmed
2 tablespoons Dijon mustard
1 cup soft bread crumbs
1/4 cup minced fresh parsley
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup butter, melted
1 garlic clove, minced

Steps:

  • Place lamb on a rack in a greased large roasting pan; brush with mustard. In a small bowl, combine the bread crumbs, parsley, salt and pepper. Press onto the meat. Combine butter and garlic; drizzle over meat. , Bake, uncovered, at 375° for 30-35 minutes or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Remove from the oven and cover loosely with foil. Let stand for 5-10 minutes before slicing.
