Growing up, my mom made a version of Spanish rice with ground beef that was hearty enough that it stood on its own as a main dish. During a visit a few years ago, after missing her cooking desperately, I watched her prepare it and jotted down the recipe. (Don't worry, I checked with my mom and she's totally on board with sharing with you!) Serve on a bed of fresh spinach with a side of refried beans. Garnish with fresh diced tomatoes, green onions, cheese, avocado slices, and crushed chile flakes.

- Preheat oven to 375 degrees F (190 degrees C).

- Add ground beef and onions to skillet and fully cook.
- Cook shells in a pot of water.
- Drain water out and mix in cheese.Set aside.
- Drain ground beef and add cream of chicken soup and garlic to the skillet with the beef. Simmer on low for 5 minutes.
- Layer ground beef and shells and cheese in a casserole dish, starting with the beef. Between each layer add a little shredded cheese.
- Add rest of cheese to the top when dish is full.
- Place in oven till cheese is melted.
