PRESTO MEATBALLS AND MARINARA



Presto Meatballs and Marinara image

Number Of Ingredients 20

1 slice bread
Milk, for soaking the bread
1/3 cup grated Romano cheese, plus more for serving
Handful fresh Italian parsley, chopped
Big pinch of kosher salt
Big pinch of freshly ground black pepper
1 large egg, beaten
1/2 pound ground chuck
1/4 pound ground veal
1/4 pound ground pork
Olive oil, for frying
2 tablespoons olive oil
1 teaspoon dried Italian seasoning
1 medium onion, chopped
2 cloves garlic, chopped
1/2 cup red wine, for deglazing
Two 28-ounce cans crushed tomatoes
Kosher salt and freshly ground black pepper
1 pound bucatini
Fresh basil, for garnish

Steps:

  • For the meatballs: Put the bread in a small bowl and add just enough milk to cover. Let soak for 5 minutes.
  • Add the cheese, parsley, 1/2 teaspoon salt, 1/4 teaspoon pepper, egg and soaked bread to a large bowl and mix lightly with your hands. Add the meat and gently mix; do not overwork. Form the mixture into balls and place on a baking sheet.
  • Heat a large skillet over medium heat and add a healthy drizzle of olive oil. Working in batches, fry the meatballs in the skillet until all sides are golden brown, 2 to 3 minutes per side. Set aside.
  • For the marinara sauce: Heat the olive oil in a large saucepan over medium heat. Add the Italian seasoning and onions and sweat the onions until translucent, 5 to 10 minutes. Add the garlic and cook for 30 seconds, then add the wine to the pan to degalze. Then add the tomatoes and meatballs, bring to a simmer and simmer for 20 to 30 minutes.
  • Bring a pot of salted water to a boil. Cook the bucatini according to the package directions, reserving 1 cup pasta water before draining.
  • If your sauce gets too thick, add some of the starchy pasta water to thin it out. Remove the sauce from the heat, season with salt and pepper and garnish with fresh basil. Finish with grated cheese over the top and serve.

NO-CHOP GARLIC BREAD



No-Chop Garlic Bread image

1 head garlic
1 teaspoon olive oil
One 12-inch loaf soft Italian bread
1 stick (8 tablespoons) unsalted butter, at room temperature
1 teaspoon garlic salt

Steps:

  • Slice off and discard the top of the head of garlic. Place the garlic in a microwave-safe bowl and drizzle with the oil; pour 2 tablespoons water into the bowl. Cover with a plate (to act as a lid) and microwave on 50-percent power until the garlic is very soft, 8 to 9 minutes. Let cool until comfortable to handle.
  • Meanwhile, slice the bread in half lengthwise.
  • Put the softened butter in a small bowl, squeeze in the garlic cloves and add the garlic salt. Stir until well blended. Generously spread the bread with garlic butter.
  • Preheat the broiler to high. Place the bread, buttered-side up, on a baking sheet and broil until lightly golden on top, 3 to 5 minutes. Serve warm.

MAURO'S MICHELADA SUPREME

12 ounces tomato juice
Juice of 6 limes
1 teaspoon Worcestershire sauce
6 dashes fish sauce
6 dashes hot sauce, such as Cholula
1/4 cup coarse salt
2 tablespoons chile powder
1 tablespoon minced fresh cilantro
Ice
4 bottles dark Mexican beer, such as Negra Modelo
Lime wedges, for garnish

Steps:

  • Serving suggestion: pork
  • In a blender, combine the tomato juice, lime juice, Worcestershire, fish sauce and hot sauce, and blend until smooth. Mix the salt, chili powder and cilantro, and coat the rim of 4 glasses. Fill the glasses with ice. Fill each glass one-quarter full with the tomato mixture, and then fill the remainder with the beer. Give it a light stir and serve with a lime wedge and a platter of pork.

Magic Meatballs image

A few weeks ago, I decided I was tired of regular meat sauce with my pasta, and frozen meatballs just didn't seem to do the trick. These meatballs were a sort of experiment the first time, but my brother and I loved them so much, I make them with spaghetti once a week.

Number Of Ingredients 10

3/4 lb ground beef
3/4 lb ground Italian sausage
1 cup oatmeal
1 egg, beaten
2 tablespoons oregano
2 tablespoons sweet basil
2 tablespoons white onions, finely chopped
1 garlic clove, minced
3 cups of your favorite tomato sauce
1/2 cup finely shredded mozzarella cheese (optional)

Steps:

  • Preheat oven to 350 degrees.
  • In a large, shallow bowl, mix, by hand, the ground beef and ground sausage.
  • Add the beaten egg and continue to mix thoroughly.
  • In a small bowl, combine quick-oats, oregano, basil, onion, and garlic.
  • Add the oat mixture to the meat and continue to mix.
  • When these ingredients are thoroughly mixed, knead the meat until it is soft and pliable.
  • Separate into amounts about the size of ping-pong balls. Roll each ball between your palms and place in rows in a 13x9-inch glass baking dish.
  • Cover dish with aluminum foil and bake at 350 for 45 minutes.
  • After 45 minutes, uncover dish, carefully drain grease from the dish, then pour sauce over meatballs. Sprinkle with mozzarella cheese if desired. Cover and return to oven.
  • Bake for an additional 30 minutes. After baking, let sit for 5 to 10 minutes. Serve over cooked spaghetti or other pasta of your choice, or serve on Italian bread.
