SIMPLE VANILLA CAKE (ONE BOWL & NO ELECTRIC MIXER)



Simple Vanilla Cake (One Bowl & No Electric Mixer) image

Everyone needs an incredibly easy and delicious vanilla cake recipe. This cake is perfect for a simple birthday cake or a quick dessert for guests. It only uses one bowl and doesn't need an electric mixer!

1 ½ cups plain flour
1 tbsp baking powder
1 cup caster sugar
180 g (¾ cup / 6.5 oz) butter, melted
1 ½ cups milk
1 tbsp vanilla essence

Steps:

  • Preheat the oven to 160°C / 320°F (fan/convection) or 180°C / 355°F (standard). Grease and line a 20 cm (8 inch) round cake tin with baking paper.
  • In a large mixing bowl, sift together plain flour and baking powder. Whisk in sugar. Make a well in the centre of the dry ingredients. Add melted butter, milk and vanilla essence. Whisk altogether until well combined (the butter may solidify and make the batter a bit lumpy - this is okay).
  • Pour into the prepared tin. Bake for 45-50 minutes or until golden and a skewer inserted in the centre of the cake comes out clean. Allow to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.

Homemade Cake Release (Cake Goop) image

A spreadable paste to coat the inside of cake pans, this homemade cake release is a one-step alternative to buttering and flouring your pans-plus it doesn't leave a floury film on the surface of your cake. It's also a smart alternative to nonstick cooking spray, which can pool at the bottom of pans and isn't recommended for nonstick surfaces. Cake release is especially beneficial when coating intricate pans, since it can be brushed into nooks and crannies so that the design of the cake comes out clean.

1/2 cup shortening
1/2 cup vegetable oil
1/2 cup all-purpose flour

Steps:

  • Whisk together the shortening and vegetable oil in a medium bowl until smooth, 2 to 3 minutes. Whisk in the flour until it becomes a smooth paste. When ready to use, spread a thin layer using a pastry brush on the inside of a cake pan before adding the batter and baking.
  • Store cake release in an airtight container at room temperature for up to 1 month.

I have used this stuff since the mid 70's & wouldn't be without it. (May be used in any recipe that calls for the pan to be "greased". Don't need "Pam" ever again!)

Steps:

  • Mix well, store in an airtight container, either in your refrig. OR in a cool dark pantry. When you go to use it simply use a pastry brush and brush it into your pan like you would if you were greasing it and then flouring. (I use waxed paper to apply it) Then add your prepared cake mix and bake. (I also use it in my muffin pans and that way I don't have to use the muffin papers) (Can also be used IF making Loaf breads or Quick breads) No need to flour your pan,'cause the flour is in the mix!

  • Add the shortening, flour and oil into the bowl of a stand mixer fitted with the balloon attachment. Alternatively, you can use a large mixing bowl with a balloon whisk or handheld mixer.
  • Mix the ingredients together on low speed until the flour is just combined, then increase the speed to medium and continue whisking until you have a smooth paste. If using a stand mixer, the paste will be light and airy similar to a meringue.
  • Transfer the cake release into an airtight container such as a Kilner jar or jam jar, and label with the date.
  • Store the cake release at room temperature out of direct sunlight or in a cupboard. If the mixture separates during storage, stir together before using.
