This is my go-to pumpkin bread and I always get rave reviews. It's quick and easy to make and wonderfully moist. Plus you'll end up with 3 loaves! Perfect for entertaining or to freeze one for later use. Don't skip the sifting of the dry ingredients--it really adds to the texture.

1 (15 ounce) can pumpkin puree
2 cups white sugar
1 cup vegetable oil
⅔ cup water
4 eggs
1 teaspoon vanilla extract
3 ½ cups all-purpose flour
2 teaspoons baking soda, sifted
1 tablespoon ground cinnamon
1 ½ teaspoons salt
1 teaspoon ground nutmeg
¼ teaspoon ground ginger

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 7x3-inch loaf pans.
  • Mix together pumpkin puree, sugar, oil, water, eggs, and vanilla extract in a large bowl until well blended. Whisk together flour, baking soda, cinnamon, salt, nutmeg, and ginger in a second bowl. Sift flour mixture on top of the pumpkin mixture and fold in with a spatula until just blended. Pour into the prepared pans.
  • Bake in the preheated oven until nicely browned on top and a toothpick inserted in the center comes out clean, about 50 minutes.

1 ½ cups all-purpose flour
1 tablespoon baking soda
½ tablespoon pumpkin pie spice, or more to taste
¼ teaspoon baking powder
½ teaspoon salt
⅓ cup raisins
⅓ cup chopped pecans
1 cup white sugar
¼ cup butter
1 cup pumpkin puree
¼ cup orange juice
3 eggs
½ teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour 2 loaf pans.
  • Sift flour, baking soda, pumpkin pie spice, baking powder, and salt together in a large bowl. Toss raisins and pecans with 1 tablespoon of the flour mixture in a separate bowl.
  • Beat sugar and butter together using an electric mixer in a mixing bowl until fluffy. Add pumpkin puree, orange juice, eggs, and vanilla extract; blend until well combined. Add flour mixture slowly and blend thoroughly. Fold in raisins and pecans.
  • Pour batter evenly between the 2 prepared loaf pans.
  • Bake in the preheated oven until firm and tops spring back lightly when pressed, 30 to 40 minutes. Remove from the oven and cool completely on racks before serving.

1 ½ cups white sugar
¾ teaspoon salt
1 teaspoon baking soda

½ teaspoon ground cloves
1 (15 ounce) can canned pumpkin
⅓ cup water
2 eggs
1 teaspoon vanilla extract
¼ cup vegetable oil
½ cup chopped walnuts

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease 2 loaf pans.
  • Stir the flour, sugar, salt, baking soda, cinnamon, nutmeg, allspice, and cloves together in a large bowl. This pumpkin bread recipe is passed down from the 1950s. It is sweet and delicious, and has the pumpkin spice ingredients we all crave at this time of year.

3 cups of sugar
4 eggs
1 cup vegetable oil
1 small can of pumpkin
1 teaspoon vanilla
3 1/2 cups of flour
2 teaspoons baking soda
1 1/2 teaspoons of salt
2/3 cup of nuts
1 teaspoon of cinnamon
1 teaspoon of cloves
1 teaspoon of nutmeg

Steps:

  • Mix sugar, eggs, and vegetable oil well.
  • Mix in pumpkin and vanilla.
  • Add flour, baking soda, salt, cinnamon, and cloves, and water.
  • Add nuts.
  • Bake at 350 for around 50 minutes. Test with a toothpick for doneness.

1 can (15 ounces) pumpkin
1 cup canola oil
2/3 cup water
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350°. In a large bowl, whisk flour, sugar, salt, baking soda, cinnamon, nutmeg and baking powder. In another bowl, whisk pumpkin, oil, water and vanilla until blended. Add to flour mixture; stir just until moistened. Transfer to 2 greased 9x5-in. loaf pans lined with parchment. Bake until a toothpick inserted in center comes out clean, 50 minutes. Cool in pans 10 minutes before removing to wire racks to cool completely.Freeze option: Securely wrap cooled loaf / loaves in plastic wrap and foil, then freeze. To use, thaw at room temperature.

This comes from Silver Ravenwolf's book Halloween. I quadrupled the spices (up to 2 teaspoons) because my boyfriend and I like spice and spicy foods. I also up the nuts to 1 whole cup instead of a half. Also, when you grease the pan, dust it with a little powdered sugar(instead of flour). It works just as well, but the powdered sugar has a better taste. Also, instead of sprinkling powdered sugar on top, I cut the loaf into thick pieces, sprinkled a little brown sugar on top and toasted it in my toaster over for about 45 seconds.
