A classic everyone should know, the secret ingredient in a truly great Italian Dressing is parmesan cheese. By making this with garlic powder rather than fresh, this Dressing lasts for a couple of weeks (subject to shell life of your parmesan). If you use fresh, it must be consumed within 2 - 3 days.

2 tbsp extra virgin olive oil
1 tbsp red or white wine vinegar ((Note 1))
2 tsp freshly grated parmesan ((Note 2))
1 tsp sugar ((any))
1/8 tsp garlic powder (or 1 small garlic clove minced, if using within 3 days)
1/8 tsp each dried basil (, oregano and parsley (or a mix of choice))
1/4 tsp red pepper flakes ((Note 3))
1/4 tsp salt
Freshly ground pepper
2/3 cup extra virgin olive oil
1/3 cup red or white wine vinegar ((Note 1))
2 tbsp freshly grated parmesan ((Note 2))
1 1/2 tbsp sugar ((any))
3/4 tsp garlic powder (or 2 garlic cloves minced, if using within 3 days)
1/2 tsp each dried basil (, oregano and parsley (or a mix of choice))
3/4 tsp red pepper flakes ((Note 3))
1 tsp salt
1/2 tsp freshly ground pepper

Steps:

  • Place ingredients in a jar and shake well until combined.
  • Adjust sugar, salt and pepper to taste. For less tang, add more olive oil, for more tang, add more vinegar.
  • Keep in the refrigerator for up to 2 weeks.
  • For the Single Batch, this makes just over 1/4 cup and is enough to dress 3 handfuls of leafy greens.

This zesty homemade Italian dressing recipe is full of flavor and easy to make at home! This one will become a go-to on first taste.

2 tablespoons white wine vinegar
2 teaspoons Dijon mustard
1 teaspoon maple syrup or sugar
1 small garlic clove, grated (about 1/4 teaspoon) or 1/2 teaspoon garlic powder
1/2 teaspoon each dried oregano, dried thyme, and dried basil
1/4 teaspoon kosher salt
6 tablespoons olive oil

Steps:

  • In a medium bowl, whisk together the white wine vinegar, Dijon mustard, and maple syrup. Grate in the garlic clove, then whisk together with the oregano, thyme, basil, and kosher salt.
  • Gradually whisk in the olive oil, adding 1 tablespoon at a time and whisking until it incorporates, until an emulsion forms. Serve immediately. Store refrigerated and bring to room temperature before serving (keeps at least 2 weeks).

1/2 green bell pepper, diced
1 small onion, diced
1 small tomatoes, diced
1 stalk celery, sliced
2 -3 Greek olives, pitted
5 tablespoons red wine vinegar
3 tablespoons ketchup
1 1/2 cups extra virgin olive oil
salt and pepper, to taste

Steps:

  • Place bell pepper, onion, tomato, celery, olives, vinegar and ketchup in a food processor or blender, and pulse until very finely chopped but not smooth. With motor running, slowly add the olive oil, blending until emulsified. Season to taste with salt and pepper.

I L.O.V.E using Italian dressing, but the store bought kind can be a little salty. I found this on another website, and it is so good... you'll want to put it on everything. You can very the dry ingredients, I use whatever I think smells good and whatever I have. Instead of a fancy bottle, I use a left-over dressing bottle to store it... double the "mixing" recipe and it works fine. The dry should last you a long time.

1 tablespoon garlic salt
1 tablespoon onion powder (tastes fine without it)
2 tablespoons white sugar
2 tablespoons dried oregano
1 teaspoon ground black pepper
1 teaspoon dried basil
1 tablespoon dried parsley
1/4 teaspoon celery salt or 1/4 teaspoon celery seed
2 teaspoons salt
1/4 cup white vinegar
2/3 cup canola oil
2 tablespoons water

Steps:

  • 1. In a small bowl, mix all the dry ingredients and set aside.
  • 2. To prepare dressing, whisk together the remaining wet ingredients and 2 tablespoons of the dry.
  • 3. Store your remaining dry ingredients in an air tight container, in your spice cabinet and use whenever you need a refill.
  • I double the recipe which makes 16 oz. or a regular dressing bottle full. No need to refrigerate, you can use it right away but will taste better tomorrow.
  • If you want to opt out of the fancy bottle, use a left over dressing bottle, and I write the wet ingredient list right on the bottle -- saves me having to save the recipe!

I tweaked our favorite Italian Dressing recipe so it was healthier and more WW friendly. The original recipe (which is Recipe #20158) is fantastic, but it is 2 points plus per Tablespoon. This version is 1 point plus for the WHOLE recipe! We use it on salads, Italian subs, pasta, chicken and even as a dip for bread. You can use red or white wine vinegar. I actually prefer the taste of the red, but it looks more like Italian dressing if you use the white.

1 tablespoon cornstarch
1 cup cold water
1/3 cup wine vinegar
1 teaspoon sugar
1 teaspoon salt
1/4 teaspoon dried oregano
1/4 teaspoon dry mustard
1/4 teaspoon paprika
1 garlic clove, minced (or 1/8 tsp. garlic powder)

Steps:

  • Mix the cornstarch and water together in a small saucepan. Cook, stirring constantly, over high heat until it begins to thicken and is clear. (It will thicken even more once it is cool.).
  • Combine all the ingredients, including the cornstarch mixture, in a jar with a lid. Cover and shake to mix thoroughly.
  • Let stand for at least 2 hours to blend flavors. Shake well before using. Store at room temperature.
