Impress the special folks in your life with this tasty crowd-pleaser. Equally colorful and flavorful, this hearty pasta dish is a welcome anytime treat.

2 tablespoon(s) extra virgin olive oil
8 - large chicken drumstick and thighs
- salt & pepper
1 - red bell pepper, thinly sliced
1 - spanish onion, thinly sliced
4 - cloves garlic, thinly sliced
2 tablespoon(s) tomatoes paste
1 - 28 (ounce) can crush tomatoes
2 - bay leaves
1 teaspoon(s) crush red pepper
1/4 cup(s) chopped cilantro
1 pound(s) spaghetti

Steps:

  • In large frying pan, pour olive oil in frying pan, allow oil to get hot, in the mean time season chicken with salt and pepper,flour the chicken and slowly lay chicken in oil to brown on each side.
  • Slice red bell pepper, onion, garlic, saute in oil after chicken has been lifted, pour most of the oils out of the pan then saute vegetable until softened.
  • Add chicken back to pan with tomatoes, tomatoes paste, bay leaves, crushed red pepper. Cover chicken for and cook for 45 min. on medium heat.
  • In another pot cook spaghetti then serve chicken over spaghetti this works well with a nice salad.

¼ cup Puerto Rican sofrito (homemade or store-bought)
1 tablespoon olive oil
1 lb boneless (skinless chicken thighs, cut into 2-to-3-inch chunks)
½ teaspoon sazon all-purpose seasoning
½ teaspoon adobo all-purpose seasoning
1 jar of La Famiglia DelGrosso pasta sauce of your choice
½ teaspoon dried oregano
⅓ cup ketchup
8 ounces of dried spaghetti or linguine pasta
10 pimento-stuffed olives (optional)
Fresh cilantro leaves (for garnish)
Salt & pepper (to taste)

Steps:

  • In a large pot, add 8 cups of water and bring to a boil to cook the pasta. Cook the pasta per package instructions, and then drain and set aside. Drizzle with a bit of olive to prevent it from sticking while you make the sauce.
  • Heat a saute pan on medium heat.
  • Season the chicken with the adobo, sazon, sofrito & oregano.
  • Add the olive oil to the saute pan and add the seasoned chicken.
  • Cook for 5-7 minutes, until the chicken is golden brown and fragrant.
  • Add the jar of La Famiglia DelGrosso pasta sauce and ketchup, stir to combine. Bring the mixture to a simmer and cook for 10 minutes, or until the chicken is cooked through. Taste for seasoning and add salt and pepper to taste.
  • Add the pasta to the sauce and toss together to coat the noodles with your sauce.
  • Portion out the pasta into 4 dishes and sprinkle with cilantro to garnish. Serve hot.

  • In a caldero or large pot, heat the oil over medium heat. Add the chicken and season with 1 teaspoon of the adobo. Brown the chicken and then remove from pan. Set aside.
  • Add the remaining 1 teaspoon of adobo, sazon, garlic powder, oregano, black pepper and water (or chicken stock). Taste and adjust seasonings as necessary. Return the chicken to the sauce. Cover and simmer on low until chicken is cooked through, about 20 minutes.
