PRUNE QUICK BREAD
I bake this bread weekly and use a variety of fruits available in the junior baby food lines. The recipe came from a friend, who made it for our Christian Mothers' Club. When I'm asked to bake for lunches, bake sales or other benefits, I usually make this bread. -Shirley Kmiotek, Northbridge, Massachusetts

Steps:
- In a small bowl, cream shortening and sugar. Add the egg, milk and prunes; mix well. Combine the flour, baking soda and salt; add to creamed mixture just until moistened. Stir in nuts., Pour into two greased and floured 5-3/4x3x2-in. loaf pans. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to a wire rack.

Steps:
- 1. Heat oven to 350^. Spray 2 loaf pans 8x4-inch with non-stick spray and place a piece of waxed paper cut to size on the bottom inside pan -spray paper.( tear off piece of waxed paper, place pan on paper and trace around bottom of pan, fold paper to make and cut out 2 pattern pieces)-set aside.
- 2. Cream butter and cream cheese and gradually add the sugar and molasses and cream well. Add eggs, prunes and vanilla.Blend well.
- 3. Combine almond milk and lemon juice. Let thicken, set aside. Combine flour, baking soda,salt and baking powder. Add flour mixture alternately with the milk mixture, beginning and ending with dry ingredients.Blend well after each addition. Use low speed.
- 4. Stir in nut,chocolate chip, peanut brittle mixture. Pour batter evenly into the two pans. bake for 50 to 55 minutes or when tests done with wooden tooth pick and has pulled away from sides of pan..do not over bake. Remove from oven and loosen sides with knife ,if necessary. Remove from pans and cool on wire rack and brush top and all sides with butter. Enjoy!
OLD FASHION MOLASSES BREAD
Old fashioned New England flavor using a bread machine! You can mix the bread in the machine then bake it in the regular oven using your favorite pans, I do.

Steps:
- Place ingredients in the bread machine pan in the order suggested by the manufacturer. Select Dough or White Bread setting, and then Start.
- If the dough does not form a ball on the paddle, add 1 tablespoon of flour at a time until the ball forms. Allow machine to complete selected cycle.
- To bake conventionally, remove the dough from the bread machine pan after the Dough cycle has completed. Shape into a loaf, and place in a greased 9 x 5 inch loaf pan. Let rise until doubled. Bake at 350 degrees F (175 degrees C) for about 40 minutes.

- Coat 18 muffin cups with nonstick cooking spray.
- Combine first 8 ingredients in a large bowl.

- Preheat oven to 325 degrees.
- Spray 9X4 inch loaf pan with non stick spray.
- Sift dry ingredients together.
- Mix liquid ingredients together, then add to dry mixture.
- Blend well with electric mixer.
- Pour into prepared loaf pan.
- Bake for 1 and 1/2 hours.
- Cool for 10 minutes in pan, then turn out and cool completely.
- Delicious with cream cheese.

OLD-FASHIONED PORRIDGE AND MOLASSES BREAD
I have had this recipe for over 40 years and it has never failed. The aroma of it baking is wonderful, and it also makes great toast. Also a great addition to have with baked brown beans. This freezes very well; I cut the loaf up before I freeze, that way I take out just the slices I need.

Steps:
- Pour boiling water over oats and shortening in a bowl. Stir until shortening melts; let stand for 20 minutes, giving it a stir once in a while.
- Meanwhile, dissolve sugar in lukewarm water. Add yeast and let stand for 10 minutes. Stir briskly with a fork.
- Stir yeast mixture into the partially cooled oat mixture with molasses and salt. Let cool to lukewarm, 5 to 10 minutes. Beat in 2 1/2 cups of flour, gradually adding remaining flour as needed.
- Turn dough onto a floured surface and knead, 8 to 10 minutes. Shape into a smooth ball and place in a greased bowl, rolling the dough so the top is greased. Cover and let double in size, about 1 1/2 hours.
- Punch dough down and shape into 4 loaves. Place into greased 8 1/2x4 1/2-inch bread pans. Cover and let rise until doubled in size, about 1 hour.
- Preheat the oven to 400 degrees F (200 degrees C).
- Bake in preheated oven until tops are golden brown, 30 to 35 minutes.
