PRUNE YOGURT SPICE LOAF
A very delicious loaf with prunes and oats with maple syrup essence make it a wonderful addition to your tea or coffee time.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5x3-inch loaf pan.
- Mix flour, oats, baking powder, ground ginger, baking soda, nutmeg, and cloves together in a bowl.
- Whisk yogurt, prunes, sugar, and eggs together in a large bowl; add flour mixture and stir. Fold maple syrup into the mixture; pour into prepared loaf pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 40 minutes. Cool in the pans for 5 minutes before removing from pan to a wire rack to cool completely.

PRUNE QUICK BREAD
I bake this bread weekly and use a variety of fruits available in the junior baby food lines. The recipe came from a friend, who made it for our Christian Mothers' Club. Steps:
- In a small bowl, cream shortening and sugar. Add the egg, milk and prunes; mix well. Combine the flour, baking soda and salt; add to creamed mixture just until moistened. Stir in nuts., Pour into two greased and floured 5-3/4x3x2-in. loaf pans. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to a wire rack.

OLD FASHIONED PRUNE CAKE
This is a very moist and rich cake. A little troublesome, but well worth it!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour Bundt or tube pan.
- In a medium bowl, mix together flour, soda, salt, allspice, cinnamon and nutmeg. Set aside.
- In a large bowl, combine oil, eggs and 1 1/2 cup sugar. Beat 2 minutes at medium speed.
- Add flour mixture, alternating with 1 cup buttermilk, starting and ending with dry ingredients. beat well after each addition. Stir in prunes, pecans and 1 1/4 teaspoon vanilla.
- Pour into greased and floured bundt or tube pan and bake at 350 degrees F (175 degrees C) for 1 hour or until a toothpick comes out clean when inserted in the center.
- Make large, deep holes in hot cake and pour topping in holes and on top of cake a little at a time, giving it time to soak in.
- For the topping: In saucepan, over medium heat, cook butter, 3/4 cup buttermilk, corn syrup and 1 1/2 cup sugar until sugar and butter melt. Remove from heat and add 2 teaspoons vanilla and stir.

PRUNE AND APPLE LOAF
Good for diabetics. It has no artificial sugar, deriving its sweetness from pear concentrate, apples and prunes. If pear concentrate is not available, I'm sure apple juice or similar would be fine. The original recipe by Judy Davie called for semolina but I substituted wholemeal flour with great results. You are always welcome to try it with semolina. Also, you might need to adjust the oven time, there was no given one--180°C worked fine for mine.

- Blend the apple, prunes, pear concentrate and water until well combined.
- Separate the eggs and beat the whites until they form peaks.Combine two of the egg yolks, the margarine, wholemeal flour, baking powder and allspice with the fruit mixture.
- Fold the prune mixture through the egg whites until well combined.
- Pour the mix into a greased loaf tin and bake for 40 min at 180°C.

EASY APPLE TEA LOAF CAKE
Easy moist apple cake with cinnamon and ginger

- Preheat the oven to 150. Cream the butter with the sugar with an electric whisk for at least 2 mins
- Whisk in the 2 eggs
- Sieve the flour and cinnamon and ginger into the mixture and fold in. Add the chopped apple by folding in too
- Place in a greased or silicon loaf tin and bake for 40 mins. Put a skewer in the middle of cake to see if it comes out clean. If not cooked give it 5 mins longer
- After cooled for 10 mins place cake on a wire rack. When completely cooled drizzle melted chocolate on top if desired

Steps:
- Combine the prunes, orange rind, and orange juice in a large mixing bowl and stir gently.
- Let stand about 30 minutes.
- Combine dry ingredients in a different bowl.
- Add eggs and oil to the prune mixture and stir well.
- Add dry ingredients and stir until blended.
- Stir in pecans.
- Pour into a greased 9x5x3-inch loaf pan.
- Bake at 350 degrees for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan 10-15 minutes.
- Remove from pan and cool on a wire rack.
