this herbed couscous recipe is a quick and super tasty side dish that will take your mid-week dinners to a whole other level. It's made with pearl couscous, garlic, herbs and a little lemon. The best part? It's ready in about 20 minutes and the pairing possibilities are endless!

Number Of Ingredients 9

1 cup of dry couscous
1 garlic clove minced, or a tsp of Brazilian Sofrito
1/2 onion (diced)
1 sprig of thyme
1 bay leaf
2 tbsp of olive oil
salt to taste
1 lemon (zested)
1 tbsp of roughly minced parsley

Steps:

  • heat up one tbsp of the olive oil in a small sauce pan over medium to high heat
  • sautée onion until transparent, about 2-3 mins
  • add garlic and sautée until frangrant, about 1 minute
  • add dry couscous and stir
  • add salt, stir
  • add water* thyme and bay leaf
  • bring it to a boil then reduce to a slow simmer
  • cover and let it simmer until all the water has been absorbed (about 10 mins)
  • after all liquid has been absorbed, remove the thyme sprig and the bay leaf and discard
  • add remaining tbsp of olive oil, the parsley and the lemon zest, stir to combine

HERBY COUSCOUS WITH CITRUS & POMEGRANATE DRESSING

This colourful side dish goes beautifully with lamb chops, or Middle Eastern-style dishes

200g couscous
5 150g pack pomegranate seeds
handful chopped herbs (we used mint and coriander)
juice 1 orange
2 tbsp each white wine vinegar and olive oil

Steps:

  • Place the couscous in a shallow bowl, then pour over 200ml boiling water. Cover the bowl with cling film, then leave for 5 mins until the couscous has swelled up and absorbed all of the water. Ruffle with a fork to separate the grains, then stir through the pomegranate seeds and herbs.
  • Make a dressing by mixing together the orange juice, white wine vinegar and olive oil, then stir into the couscous. Season well with salt and serve.

Try this herb-flecked couscous instead of rice as a side with meat or mixed with vegetables.

1 1/2 tablespoons unsalted butter
2 shallots, peeled and minced
3/4 teaspoon ground cumin
1 teaspoon crushed fennel seeds
1 cup couscous
One 14 1/2-ounce can low-sodium chicken broth, or homemade
1 teaspoon coarse salt
3 tablespoons finely chopped fresh flat-leaf parsley
1 tablespoon finely chopped fresh sage
2 teaspoons finely chopped fresh marjoram

Steps:

  • Melt butter in a medium saucepan over medium heat. Add the shallots, cumin, and fennel seeds; cook, stirring frequently, until shallots are translucent, about 2 minutes. Add couscous, chicken broth, and salt. Cover; reduce heat to low, and simmer until liquid is absorbed, about 5 minutes. Remove from heat, and stir in parsley, sage, and marjoram. Serve hot.

Our Favorite Lemon Herb Couscous Salad image

We love this light couscous salad - it doubles as a side, can be the main event or works well topped with grilled chicken or Adam's favorite, shrimp! With lots of texture from crisp cucumber, sweet tomatoes, crunchy nuts and raisins, this is certainly one of our favorites. You can even make it ahead of time. See the notes section below for our tips.

Number Of Ingredients 12

1 1/2 cups dried Israeli couscous, also called pearl couscous
Salt and fresh ground black pepper
1/4 cup extra-virgin olive oil
1 teaspoon Dijon mustard
1/2 teaspoon honey
1 teaspoon finely grated lemon zest
2 to 4 tablespoons fresh squeezed lemon juice, depending on taste
1 medium English cucumber, diced
1 large tomato, diced
1/2 cup coarsely chopped fresh herbs; use any combination of fresh parsley, cilantro, basil, dill, or mint
1/4 cup chopped walnuts, toasted
1/4 cup raisins, we love golden raisins

Steps:

  • Bring a large saucepan of salted water to a boil. Add couscous and cook until tender, 8-10 minutes. Drain.
  • While the couscous cooks, in a large bowl, whisk the oil, mustard, honey, lemon zest, lemon juice, 1/2 teaspoon of salt, and 1/4 teaspoon pepper. Add the drained couscous to the dressing and mix well.
  • Stir in the cucumber, tomato, herbs, walnuts and raisins. Taste for seasoning and adjust with salt and/or pepper as needed. Enjoy warm or cover then refrigerate until cool, about 1 hour.

HOT MUSTARD TUNA WITH HERBY COUSCOUS

1 red onion , halved and finely sliced
zest and juice 1 lemon , plus wedges to serve
1 tbsp olive oil , plus extra for brushing
400ml hot vegetable stock
250g couscous
4 tuna steaks , about 140g/5oz each
2 tsp English mustard powder
bunch flat-leaf parsley , roughly chopped
2 tbsp capers

Steps:

  • Put the onion, lemon zest, juice and 1 tbsp oil into a small bowl, add salt and pepper to taste, then leave to soak for 5 mins until the onion has softened a little. Pour the hot stock over the couscous in a large bowl, cover with cling film and leave for 10 mins until the stock has been absorbed.
  • Season the tuna steaks, brush with oil, then pat the mustard powder over both sides. Once the couscous is ready, add the parsley and capers to the onions, stir well, then mix into the couscous with a fork. Heat a griddle pan and sear the tuna for 1 min on each side until medium-rare. Serve the tuna with the couscous and lemon wedges on the side.

A typical North African dish, made delicious with parsley, mint, basil and lemon! A great side to meat dishes. Adapted from Gourmet magazine(July/2003). Due to some reviews I have updated the recipe, adding more garlic and lemon juice.

Number Of Ingredients 11

1 medium onion, finely chopped
2 tablespoons extra virgin olive oil
3 garlic cloves, minced
3/4 cup water
1 1/4 cups vegetable broth (10 fl oz) or 1 1/4 cups chicken broth
1 (10 ounce) box couscous (1 1/2 cups)
1/2 cup finely chopped fresh parsley
1/2 cup finely chopped fresh basil
1/4 cup finely chopped of fresh mint
1 -3 tablespoon fresh lemon juice (or to taste)
salt and pepper

Steps:

  • Cook onion in 1 tablespoon oil in a 2- to 3-quart heavy saucepan over moderate heat, stirring occasionally, until golden, about 3 minutes.
  • Add garlic and cook, stirring, 30 seconds.
  • Add water and broth and bring to a boil.
  • Stir in couscous, then cover and remove from heat. Let couscous stand, covered, 5 minutes, then fluff with a fork and stir in herbs, lemon juice, remaining tablespoon oil, and salt and pepper to taste. Serve and enjoy!
  • For vegetarian do not use Chicken Broth.

Number Of Ingredients 7

110g pack lemon and garlic couscous
200ml hot vegetable stock
1 tbsp olive oil
handful chopped fresh herbs (parsley, plus thyme, tarragon or rosemary is good)
4 spring onions , thinly sliced
4 Sun-blush or sundried tomatoes , chopped
2 salmon fillets , approx 140g/5oz each

Steps:

  • Put the couscous into a bowl and stir in the stock and oil. Cover with cling film and leave to stand 10 mins, then uncover and fluff up with a fork. Keeping back some herbs, add the rest of the ingredients, except the salmon. Season to taste.
  • Heat oven to 200C/fan 180C/gas 6. Cut two large sheets of non-stick baking paper, then divide the couscous between them. Sit each fillet on the couscous, top with the remaining herbs and season. Fold the paper over, then twist the edges to seal - like a Cornish pasty. Pop the parcels onto a baking sheet and bake for 15 mins or until the fish feels firm through the paper. Serve in the bag.

This couscous recipe is quite a bit different from the norm because instead of boiling or steaming the couscous you just feed it from raw with a really tasty dressing. This means it keeps a slight bite which I think is more interesting for a salad.

255 g couscous
285 ml cold water
3 red peppers
1 cup chopped asparagus
2 -3 small firm courgettes, sliced
8 spring onions, trimmed and finely sliced
2 -4 fresh red chilies, deseeded and finely sliced
1 cup mixed fresh herbs (basil, coriander, mint, flat-leaf parsley)
40 ml olive oil
1 lemon
salt & freshly ground black pepper
1 tablespoon red wine vinegar

Steps:

  • Place the couscous in a bowl with the cold water. This will start to soften the couscous and you will see the water disappear as it soaks inches.
  • While the couscous is softening, we need to blacken the peppers. I do this by placing the peppers directly on to the naked flame of my gas hob. If you don't have gas, then blacken under the grill. Both ways you need to blacken the peppers on all sides, so turn when need be.
  • When fully blackened, place in a sandwich bag, wrap in clingfilm or cover in a bowl for 5 minutes until cool. This will steam the skins and make peeling and deseeding easier. Remove the skins and seeds and roughly chop.
  • On a very hot ridged grill pan, lightly char the asparagus and courgettes or patty pans on both sides then toss them into the bowl of couscous with the peppers, spring onions, chillies and ripped-up herbs. Mix well.
  • Add the olive oil and lemon juice and toss well. You may need more than 40 ml, you may want less it depends on you. Finally, taste and season with salt and pepper and a couple of dribbles of red wine vinegar for a slight twang. It's a beautiful thing.
