To me nothing says the holidays like appetizers, we serve them, and bring them to holiday parties. This appetizer was born out of my way to use shrimp. We live here in Fl right on the ocean and have friends that shrimp, so I am always dreaming up ways to fix shrimp

12 slice prosciutto, sliced paper thin
12 large shrimp, peeled ,deveined, cooked
12 slice melon, sliced thin
12 tsp cream cheese
1 c mango, diced
1/2 c papaya, diced
2 medium jalepenos, diced
2 Tbsp fresh cilantro, diced
1/2 c sweet red peppers, diced
6 Tbsp lime juice, divided
1/2 c red onion, diced

Steps:

  • 1. Marinate the shrimp in 3 tablespoons of lime juice while you make the tropical mango salsa.
  • 2. In a bowl combine the mango, papaya, jalepenos, onions,cilantro, red peppers, and lime juice
  • 3. Take one slice of prosciutto, place a slice of melon in the middle, put a shrimp on top of that, put a teaspoon of cream cheese on top of shrimp.
  • 4. Wrap each end of prosciutto over filling, cover and refridgerate until ready to serve.
  • 5. Serve the prosciutto wrapped shrimp with the mango salsa.

24 peeled and deveined cooked shrimp (16-20 per pound)
5 tablespoons lime juice
MANGO SALSA:
2 medium ripe mangoes, peeled and chopped
3/4 cup cubed fresh pineapple
3/4 cup chopped peeled papaya
1/2 cup finely chopped red onion
1/2 cup finely chopped sweet red pepper
2 jalapeno peppers, seeded and minced
2 tablespoons minced fresh cilantro
2 tablespoons lime juice
24 thin slices cantaloupe
12 thin slices prosciutto, halved lengthwise

Steps:

  • Place shrimp and lime juice in a large shallow bowl. Refrigerate, covered, while making salsa, turning once. In a large bowl, combine mangoes, pineapple, papaya, red onion, red pepper, jalapenos, cilantro and lime juice. Refrigerate, covered, until serving., Drain shrimp, discarding lime juice. Place 1 cantaloupe slice on each prosciutto slice; top each with 1 shrimp. Fold both sides to close. If desired, secure with toothpicks. Serve with mango salsa.
