Categories     Dairy

Time 5h30m

Yield Makes 16 servings.

Number Of Ingredients 11

2 cups graham cracker crumbs
1-1/3 cups sugar, divided
6 Tbsp. butter or margarine
3 Tbsp. coffee-flavored liqueur
1 Tbsp. MAXWELL HOUSE Instant Coffee
4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
2 Tbsp. flour
2 tsp. vanilla
4 eggs
25 almonds, divided
1 oz. BAKER'S Semi-Sweet Chocolate, melted

Steps:

  • Preheat oven to 325°F if using a silver springform pan (or to 300°F if using a dark nonstick 9-inch springform pan). Mix crumbs, 1/3 cup of the sugar and the butter; press firmly onto bottom and 2 inches up side of pan. Bake 10 minutes.
  • Mix liqueur and instant coffee granules until well blended; set aside. Beat cream cheese, remaining 1 cup sugar, the flour and vanilla in large bowl with electric mixer on medium speed until well blended. Add eggs, 1 at a time, mixing on low speed after each addition just until blended. Stir in coffee mixture; pour into crust.
  • Bake 1 hour to 1 hour 10 minutes or until center is almost set. Run knife or metal spatula around rim of pan to loosen cake; cool before removing rim of pan. Refrigerate 4 hours or overnight.
  • Meanwhile, dip 21 of the almonds in chocolate, 1 at a time. Gently shake each almond to remove excess chocolate. Place on wax paper-covered tray. Refrigerate 5 minutes or until chocolate is set. Remove from refrigerator. Place 16 of the chocolate-dipped almonds around edge of cheesecake. Arrange remaining 5 chocolate-dipped almonds in center of cheesecake. Coarsely chop remaining 4 almonds; sprinkle on top of cheesecake. Store cheesecake in refrigerator.

  • White Russian. While many great cocktails feature coffee liqueurs, few get as much attention as the white Russian. Yet, this mixed drink of vodka, coffee liqueur, and cream is not on its own.
  • Toasted Almond. If you're in the mood for a white Russian but want something just a little sweeter and lighter on the alcohol, the toasted almond is a good choice.
  • Widow Maker. If you thought that Jägermeister was reserved for get-me-drunk shots, think again. In the widow maker cocktail, the herbal liqueur is paired with equal parts vodka and coffee liqueur.
  • Talking Monkey. Pick up an espresso vodka on your next trip to the liquor store, and after one sip, your mind will swarm with tasty ways to use it. To kick start that adventure, give the fun talking monkey recipe a taste.
  • Triple Espresso Martini. Many versions of the espresso martini use actual espresso. This recipe takes a different approach, opting for espresso vodka instead.
  • Ginspresso Martini. Espresso vodka can work well in a more traditional martini formula. When you're in the mood for a drier cocktail with a caffeine kick, the ginspresso martini is an ideal choice.
  • Mochatini. Another flavored vodka shares the stage with coffee liqueur in this tasty martini recipe. The mochatini opts for vanilla vodka and it's an equal pour with the coffee liqueur.
  • Midnight Martini. Similar to the mochatini, the midnight martini skips the chocolate, turning it into a quick two-ingredient vodka cocktail. The basic recipe requires vodka and the coffee liqueur of your choice.
  • Golden Cappuccino. Straight coffee-flavored cocktails are nice, but give the golden cappuccino a whirl for something considerably more interesting. It's a creamy cocktail that features Galliano L'Autentico, a golden liqueur known for its vanilla and anise profile.
  • Bushwacker. Creamy smoothies are great and even better when you sneak in a little booze. That may be an understatement for the bushwacker, though. It's like a coffee-chocolate frozen piña colada, hold the pineapple; you'll need dark rum, Kahlúa, crème de cacao, and cream of coconut.
