Number Of Ingredients 13

1 package (16 ounces) penne pasta
1/4 cup olive oil
3 tablespoons butter
3 cups cubed fully cooked ham
1 large sweet red pepper, finely chopped
1 medium onion, chopped
2 garlic cloves, minced
1/4 cup minced fresh parsley
1-1/2 teaspoons minced fresh basil or 1/2 teaspoon dried basil
1-1/2 teaspoons minced fresh oregano or 1/2 teaspoon dried oregano
1 can (14-1/2 ounces) chicken broth
1 tablespoon lemon juice
1/2 cup shredded Parmesan cheese

Steps:

  • Cook pasta according to package directions; drain. Meanwhile, in a large skillet, heat oil and butter over medium-high heat. Add ham, red pepper and onion; cook and stir 4-6 minutes or until ham is browned and vegetables are tender. Add garlic and herbs; cook 1-2 minutes longer., Stir in broth and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered, 10-15 minutes or until liquid is reduced by half. Add pasta; toss to combine. Sprinkle with cheese.

16 oz penne pasta
2 packages of diced cubed fully cooked ham
1-2 large sweet red pepper (diced)
1 medium onion (diced, optional)
1/2 teaspoon basil
1/2 teaspoon oregano
1/4 cup olive oil
3 tablespoons butter
2 garlic cloves (minced)
14.5 oz chicken broth
1 tablespoon lemon juice
1/2 cup Parmesan cheese (shredded)

Steps:

  • 1. Cook pasta according to package directions. Meanwhile, in a large skillet, saute the ham, red pepper, onion, basil and oregano in oil and butter for 4-6 minutes (ham and veggies are tender). Add garlic and cook 1 minute longer. 2. Stir in broth and lemon juice. Bring to a boil then reduce heat to simmer uncovered for 10-15 minutes (liquid will be reduced by half). Drain pasta and stir into skillet. Sprinkle with cheese until melted.

4 boneless skinless chicken breasts, cut into small cubes or strips
2 tablespoons butter
1 tablespoon soya sauce
8 ounces button mushrooms, sliced
1 red pepper, deseeded and diced (the mild kind not the hot kind)
1 green pepper, deseeded and diced
6 green onions, chopped
1 can cream of mushroom soup
1 can cream of chicken soup
1/2 cup milk
1/2 cup monterey jack cheese, grated
1/2 teaspoon black pepper (or to taste)
1 lb penne

Steps:

  • Melt 1 tbsp butter in a large nonstick pan and cook chicken until done.
  • Remove chicken from pan.
  • Melt 1 tbsp butter in the same pan and add the mushrooms and soya sauce.
  • Cook until tender.
  • Add the red pepper, green pepper, and green onions to the pan.
  • Mix the two soups with the milk until smooth and lump free.
  • Add the chicken, black pepper, the soup mixture and cheese to the pan, mix and simmer over a low heat until the veggies are tender and the cheese is melted.
  • Cook penne in a large pot lightly salted water until al dente (this can be started about 15 minutes before the chicken sauce is done).
  • Drain thoroughly and return to pot.
  • Add the chicken sauce mixture and stir to completely coat the pasta.
  • Serve, if desired top with a bit of fresh grated parmesan and/or fresh ground pepper.
