1/2 cup all-purpose flour, divided
1/2 teaspoon ground mustard
1/2 teaspoon garlic pepper blend
1/4 teaspoon seasoned salt
4 boneless pork loin chops (4 ounces each)
2 tablespoons canola oil
1 can (14-1/2 ounces) chicken broth, divided

Steps:

  • In a shallow bowl, mix 1/4 cup flour, mustard, garlic pepper and seasoned salt. Add pork chops, 1 at a time, and toss to coat; shake off excess. , Select saute or browning setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add oil. When oil is hot, brown pork in batches. Add 1-1/2 cups broth to pressure cooker. Cook 30 seconds, stirring to loosen browned bits. Press cancel. Return all pork to pressure cooker., Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 3 minutes. Quick-release pressure. A thermometer inserted in pork should read at least 145°. Remove pork to a serving plate and keep warm., In a small bowl, mix remaining 1/4 cup flour and 1/4 cup broth until smooth; stir into pressure cooker. Select saute setting and adjust for low heat. Simmer, stirring constantly, until thickened, 1-2 minutes. Serve with pork.

4 (6 ounce) pork tenderloins
1 (16 ounce) package sauerkraut, drained
1 cup water
6 fluid ounces apple juice
2 teaspoons fennel seed
12 red new potatoes, halved

Steps:

  • Heat oil in a pressure cooker over medium heat; brown pork tenderloins in the hot oil, about 5 minutes per side. Distribute sauerkraut around the pieces of pork and pour in water and apple juice; sprinkle with fennel seeds.
  • Cover pressure cooker and bring to full pressure; cook for 15 minutes. Remove from heat and release the pressure according to manufacturer's instructions. Place potatoes into the cooker, reseal, and bring back up to full pressure over medium heat; cook at full pressure for 5 more minutes. Remove from heat, release pressure, and serve.

4 3/4-inch thick bone-in pork chops
salt and ground black pepper to taste
¼ cup butter, divided
1 cup baby carrots, or more to taste
1 onion, chopped
1 cup vegetable broth
3 tablespoons Worcestershire sauce
4 whole russet potatoes, or more to taste

Steps:

  • Season pork chops with salt and ground black pepper.
  • Melt 2 tablespoons butter in a pressure cooker over medium-high heat. Working in batches, cook pork chops in hot butter until browned on both sides, 3 to 5 minutes per side. Transfer pork chops to a plate.
  • Melt remaining 2 tablespoons butter in the pressure cooker. Saute carrots and onion in hot butter until fragrant, about 2 minutes; add broth and Worcestershire sauce. Return pork chops to the pressure cooker pot. Set a steamer basket on top of the pork chops and place potatoes in the basket.
  • Cover the pressure cooker with the lid, lock the lid, bring the cooker to high pressure, and cook under pressure for 13 minutes. Release pressure from the pot according to the manufacturer's instructions. Slice potatoes along the top and serve.

1-1/2 pounds boneless pork loin roast, cut into 1-inch strips
1 tablespoon canola oil
1 can (20 ounces) unsweetened pineapple chunks
1 medium onion, chopped
1 medium green pepper, chopped
1/4 cup cider vinegar
3 tablespoons packed brown sugar
3 tablespoons reduced-sodium soy sauce
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
2 tablespoons cornstarch
1/4 cup cold water
Thinly sliced / chopped green onions, optional
Hot cooked rice, optional

Steps:

  • Place paprika in a large shallow dish. Add pork, a few pieces at a time, and turn to coat. Select saute setting on a 6-qt. electric pressure cooker and adjust for medium heat; add oil. Brown pork in batches. Return all pork to pressure cooker., Drain pineapple, reserving juice; refrigerate the pineapple. Add the pineapple juice, onion, green pepper, vinegar, brown sugar, soy sauce, Worcestershire sauce and salt to pressure cooker. Lock lid; close pressure-release valve. ¼ cup fresh cilantro leaves
¼ cup olive oil
¼ cup lime juice
2 cloves garlic, sliced
½ teaspoon red pepper flakes, or to taste
¼ teaspoon salt, or to taste
1 pound pork tenderloin
¾ cup chicken broth
¼ cup lemon juice

Steps:

  • Blend the cilantro, olive oil, lime juice, garlic, red pepper flakes, and salt in a blender until smooth; pour into a large resealable plastic bag. Add the pork tenderloin to the bag and manipulate to assure it's covered with the marinade. Remove as much air from the bag as possible before sealing. Marinate in refrigerator 8 hours to overnight.
  • Stir the chicken broth and lemon juice together in the bottom of a pressure cooker. Lay the tenderloin into the liquid in the slow cooker. Pour the remaining marinade from the bag over the tenderloin.
  • Seal and lock pressure cooker and cook over high heat to build pressure until the indicator sounds. Reduce heat to medium and cook for 25 minutes. Remove from heat and let stand for 5 minutes. Run under cold water to help release the pressure before unsealing the lid. Slice the tenderloin into medallions to serve.

This was surprisingly delicious. I really had no idea how it would turn out. If I did it again I'd make sure my potatoes were in chunks. 3 lbs pork tenderloin
1 1/2 teaspoons brown sugar
2 teaspoons garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/2 teaspoon dried thyme
1/4 teaspoon pepper
2 tablespoons olive oil
1/2 cup chicken broth
1 medium onion, chopped
4 garlic cloves, peeled and smashed
2 large potatoes (I used a combination of red potatoes and sweet potatoes)
1 teaspoon garlic powder
1 teaspoon chili powder
1 tablespoon Worcestershire sauce
1 tablespoon cornstarch

Steps:

  • First, place pork tenderloins on a large baking sheet. Your 3 pound package should come with 2 pork tenderloins.
  • Prepare dry rub by combining brown sugar, garlic powder, onion powder, salt, ground cinnamon, dried thyme, and pepper.
  • Sprinkle dry rub on top of pork tenderloin, making sure all sides are generously covered. Use your hands to rub it inches.
  • Next, add two tablespoons of olive oil to your instant pot and turn on the saute feature. When the oil is fragrant, sear pork tenderloins on both sides for around 3 minutes per side, giving the outsides a nice brown color.
  • Turn off the saute features and deglaze the bottom of your instant pot by pouring chicken broth on top of pork and using a wooden spoon to remove the brown bits from the bottom of the pan. Add chopped white onion and garlic cloves to the pot and put the cover on.
  • Turn the valve to seal and turn on the instant pot to manual high and turn on the timer to 15 minutes if you're using russet potatoes and 17 minutes if you're using sweet potatoes. It will take your instant pot 10 to 15 minutes to build up enough pressure before it cooks to count down.
  • While the pork is cooking in the instant pot, prepare potatoes. Dice 2 large potatoes into 1 1/2 inch chunks and lightly season with garlic powder and chili powder. Set aside.
  • Once the timer goes off, quick release your instant pot by opening the vent to let the steam pour out. Remove the lid from your instant pot and add the seasoned potatoes right on top of your pork tenderloins.
  • Close the instant pot and turn the valve to seal. Set the instant pot to manual high and turn the timer to 2 minutes for sweet potatoes and 4 minutes for russet potatoes. Or, you can start with 2 minutes and go from there. Again, the instant pot will take some time to build pressure, but eventually it will count down from 2 minutes.
  • Once the timer goes off a second time, quick release again by opening the vent to let the steam pour out. Open the instant pot and test the potatoes. Make sure they are easy to pierce with a fork, and if they are not, put them back in for 1 to 2 more minutes. Remove potatoes and pork tenderloins from the instant pot, leaving the gravy and onions.
  • Turn the saute feature back on and then add Worcestershire sauce and cornstarch to the instant pot. Whisk for a few minutes or until the cornstarch activates and the gravy thickens.
  • Slice pork tenderloin and serve with gravy and potatoes.

A pressure cooker provides a nifty shortcut to perfect pulled pork. This recipe calls for braising the meat in a dark soda like Dr Pepper or Coca-Cola, and the results are lush and tender - savory, slightly sweet and tangy. Once the pork is done, you can customize it to your taste using your favorite barbecue and hot sauces. Adding lots of black pepper and a few dashes of Southern-style hot sauce, like Crystal, Louisiana or Tabasco, is a very good idea. Like many braises, the pork improves overnight and can be cooked up to three days in advance; shred and warm it gently on the stovetop before tossing it with sauce and serving. The pork makes satisfying sandwiches on soft rolls (try coleslaw as a topping), but it could also be used in tacos or served over grits. (You can find the slow-cooker version of this recipe here.)

1 tablespoon onion powder

3 to 4 pounds boneless pork shoulder, trimmed of skin and excess fat and cut into 4 large chunks
2 tablespoons vegetable oil
1 yellow onion, chopped
1 (12-ounce) can dark soda, like Dr Pepper, root beer, cola or birch beer
1/2 to 1 1/2 cups homemade or store-bought barbecue sauce
Hot sauce (optional)

Steps:

  • Mix the garlic and onion powders, smoked paprika, salt and pepper in a large bowl. Add the pork and turn to coat in the spice mix. Put the oil in a 6- or 8-quart electric pressure cooker and turn on the sauté setting to warm the oil. (Use the "normal" heat setting if your pressure cooker has that option.) Working in batches, add the pork and brown on two sides, about 2 minutes per side. If the bottom of the pan gets too dark or you get a "hot" or "burn" warning, turn the heat down to "less," if your pot has that option, or turn it off entirely and allow the pork to continue searing. Turn it back on if the pot cools too much.
  • Add the onion to the pot. Add the soda and stir to thoroughly scrape up the browned bits at the bottom of the pot. Close the lid and cook on high pressure for one hour. Turn off the pressure cooker and allow the pressure to release naturally for 15 minutes. Open the lid. Using tongs or a slotted spoon, remove the pork and onion bits to a large serving bowl. Using two forks, coarsely shred the meat. Add 1/2 cup barbecue sauce and a few spoonfuls of the cooking liquid to moisten. (Discard remaining cooking liquid.) Taste and add salt, pepper, hot sauce, and more barbecue sauce as you like. Serve with soft rolls and extra sauce on the side.

0.667 (32 ounce) box chicken broth
1/4 cup oil
2 garlic cloves, peeled and crushed
1 onion, peeled and quartered
3 -4 tablespoons italian seasoning
3 tablespoons cold water
3 tablespoons cornstarch
0.333 (32 1/16 ounce) box chicken broth

Steps:

  • Prepare the pork loin by rubbing in the Italian Seasoning and crushed garlic. Heat the oil in the pressure cooker and put in a few of the onion pieces to flavor the oil leaving it just long enough to soften slightly, then remove it and set aside. Brown the roast on all sides and both ends. Remove to extra plate so that you can add 2/3rds of the chicken broth scraping the bottom of the pan to get up all the good bits; add the trivet and return the roast, fat side up. Add the onion. Pressure cook for 1 hour; remove from heat and let it the pressure come down on its own.
  • Remove the roast and onions to a serving dish and tent with foil to rest for 15 minutes. In the meantime, mix the cold water and corn starch in a mixing cup or small bowl (I like to add a little pepper here). Remove the trivet from pot, add the rest of the chicken broth and bring to a boil. Add the water/corn starch mixture to the pot and remove from heat. This makes a wonderful gravy for the roast.

1 pound boneless country-style pork ribs, cut into 2-inch chunks
1/2 teaspoon onion salt
1/2 teaspoon pepper
