- Place chicken in a 6-qt. electric pressure cooker. Top with mushrooms, celery, onion, bean sprouts, bamboo shoots, water chestnuts and edamame. In a small bowl, combine the broth, soy sauce, ginger and pepper flakes. Pour over chicken and vegetables., Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 3 minutes. Quick-release pressure. Press cancel. A thermometer inserted in chicken should read at least 170°. , Select saute setting and adjust for low heat. In a small bowl, mix cornstarch and water until smooth; stir into meat mixture. Simmer, stirring constantly, until thickened, 1-2 minutes. Serve with rice.

- Heat the oil in the pressure cooker on medium heat. Brown the meat in the oil. Add celery, onions, salt, pepper, and water, cover and cook for 10 minutes. Cool for 5 mins and then reduce pressure Add bean sprouts and simmer in open pan for 3 minutes. Add soy sauce. Mix well. Thicken with cornstarch mixed with cold water. Add to the pressure cooker and cook 1 minute. Serve with hot rice.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- In same pot, saute onion and bell pepper over medium heat until softened. Remove from pan.
- In same pot, cook sausage over medium heat until brown. Drain.
- Combine onion mixture, pasta, sausage, mushrooms and stewed tomatoes in same pot and heat through, 5 minutes. Serve.

This is the fast and easy chop suey recipe that my mother always made, and we love it 'as is', but you could substitute a can of Chinese mixed vegetables for the bean sprouts if you like more color and texture. Serve over hot rice, topped with chow mein noodles and soy sauce, if desired.

- Heat shortening in a large, deep skillet. Sear pork until it turns white, then add onion and saute for 5 minutes. Add celery, hot water, salt and pepper. Cover skillet and simmer for 5 minutes. Add sprouts and heat to boiling.

TOTAL comfort food!!! I like mine over rice then topped with Chow Mein Noodles...does that make it "chop suey" or "chow mein"?? Nonetheless, it's good stuff! My own concoction.

Steps:
- In pressure cooker, saute beef, pork, onions and celery in butter, salt, pepper and garlic powder til meat is lightly browned on all sides.
- Add 1 can beef broth, A-1, fresh mushrooms and 3 Tbl. soy sauce.
- Cover and pressure cook 8 minutes.
- Cool cooker at once.
- Remove lid and add second can beef broth, dark brown sugar and rest of soy sauce.
- Heat to boiling, stir in cornstarch mixed with the third can of beef broth.
- Stir and boil til thickened.
- Add rest of vegetables and heat through. Serve over rice.
- Top with chow mein noodles.
