SLOW COOKED RIBS
Super yummy, mouth watering, fall-off-the-bone ribs! Depending on your slow cooker the time could be less. I have a really old slow cooker and the ribs only take 3 1/2 hours. Just watch and stir every hour and you'll have super yummy ribs! Enjoy!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line a large baking pan with aluminum foil and spray with cooking spray.
- Place ribs onto the prepared baking sheet. Season both sides with grill seasoning.
- Bake ribs in the preheated oven for 30 minutes; flip ribs over and bake an additional 15 minutes. Cut ribs apart and place into a slow cooker.
- Mix ketchup, brown sugar, Worcestershire sauce, Dijon mustard, and garlic in a bowl until thoroughly combined; pour sauce over ribs. Stir to coat. Cook ribs on Low until tender, 4 to 6 hours; stir occasionally.

Steps:
- Preheat oven to 350 degrees Fahrenheit. Season all sides of the short ribs with salt and pepper.
- Heat a heavy, oven-safe pot over high heat. Add in olive oil and allow to heat briefly. Sear short ribs in olive oil, about 1 minute per side, to render fat. Remove from pot and set aside.
- Add in onion and saute 3 to 5 minutes, until softened. Add in garlic and saute 1 minute more.
- Pour in beef broth, red wine (if using) and Worcestershire sauce. Bring to a simmer. Return short ribs to pan. Place a rosemary sprig on top.
- Cover with lid and transfer to preheated oven for about 2.5 hours, until meat is tender.

BARBECUE RIBS
This recipe is easier than it sounds. I usually cook the ribs the day before and grill them for a quick dinner the next night. FYI: the sauce is much better after it is cooked. It is not a dipping sauce.

- Preheat oven to 350 degrees F (175 degrees C). Cut spareribs into serving size portions, wrap in double thickness of foil, and bake for 1 1/2 hours. Unwrap, and drain drippings. (I usually freeze the drippings to use later in soups.) Place ribs in a large roasting pan.
- In a bowl, mix together brown sugar, ketchup, soy sauce, Worcestershire sauce, rum, chile sauce, garlic, mustard, and pepper. Coat ribs with sauce and marinate at room temperature for 1 hour, or refrigerate overnight.
- Preheat grill for medium heat. Position grate four inches above heat source.
- Brush grill grate with oil. Place ribs on grill, and cook for 30 minutes, basting with marinade.

- Combine bbq sauce, brown sugar, cider vinegar, oregano, Worcestershire sauce, cayenne pepper, and chili powder in a small bowl.
- Salt and pepper the ribs. Place ribs in slow cooker, and cover in sauce.
- Cook low and slow for eight hours or high for four hours.
- After the ribs are done, spoon the bbq sauce in the slow cooker over the ribs before removing.
- Cut the ribs, serve with bbq sauce.

WORLD FARE'S WORCESTERSHIRE BRAISED SHORT RIBS

- Preheat the oven to 200 degrees F.
- Generously season the short ribs with salt and pepper.
- In a large pan add the grapeseed oil and heat until screaming hot. Place the short ribs in the pan and hard sear them on all sides. Once the ribs are nice and seared, remove them from the pan.
- Deglaze the pan with a cup of the homemade Worcestershire sauce.
- Place the short ribs in a roasting pan with the deglazed juice from the seared pan.
- Cover the short ribs with more of the Worcestershire sauce; cover the roasting pan with foil and place in the oven for 12 hours.
- Reduce some of the Worcestershire braising liquid to a thick sauce. Serve with horseradish smashed potatoes, and caramelized mirepoix (onions, carrots, celery).
- In a large stockpot, add the olive oil, onions, celery, carrots, and jalapeno pepper. Cook the vegetables, stirring frequently, until caramelized. Add the anchovies, garlic, tamarind paste, ginger, peppercorns, cloves, vinegar, and molasses to the pot. Simmer for approximately 1 hour, stirring occasionally, until most of the vinegar taste is gone.
- Add the demi glace to the pot. Simmer the mixture for 1 more hour, stirring occasionally. Season, strain through a fine mesh strainer and chill.

- Preheat oven to 375 degrees F (190 degrees C).
- Cover a roasting pan with aluminum foil. Place the ribs into the prepared pan.
- Bake in preheated oven for 10 minutes, turn, and cook 10 minutes more. Remove from oven, and drain off fat.

KIM'S PRIME RIB
I use a 5 to 6 pound roast for the following recipe. You can double or half the recipe depending on how many you are cooking for.

- Preheat oven to 450 degrees F (230 degrees C).
- In a medium bowl, combine the soy sauce, Worcestershire sauce, garlic powder, onion salt, browning sauce and water. Place roast in a roasting pan ribs side down and poke deep holes in the roast with a knife. Pour the marinade over the roast. Using a baster, squirt marinade into the holes you created with the knife and over the entire roast a few times.
- Bake at 450 degrees F (230 degrees C) for about 1 hour. (Note: Bake for 40 to 45 minutes for a smaller roast so that it does not dry out.)
- Remove roast from oven and reduce temperature in the oven to 200 degrees F (95 degrees C).
