RESEMBLES LITTLE HOUSE ON THE PRAIRIE GINGER TEA
I read it in a Little House on the Prairie book somewhere. Idon't use measurements--by the cup or by the quart. I used it as a tea at Girl Scout da ycamp first and it was good.

Steps:
- Put a sprinkle of ginger into the water.
- Heat in the microwave or stovetop until the ginger releases its flavor into the water. You can tell by tasting it and smelling it.
- Add vinegar and then stir.
- Add honey to taste.
- It is nice and not like anything we drink today that I know of.
- Serve hot or cold.

PRAIRIE TEA
This was given to me by a dear friend. I served it at my sister's bridal shower. I really don't know why it's called Prairie Tea, but it's delicious! The servings and prep time are estimated.

Steps:
- Mix the pink lemonade with 36 oz. of water (3 cans).
- Brew 1 quart of water with the 4 bags of raspberry tea.
- Mix both together and stir in some fresh mint, serve with ice.
- Enjoy!

PEARL TEA
Steps:
- In a large pot, add the water and the pearl tapioca. Bring to a boil, over medium heat, then cover and cook for 16 minutes. Turn off the heat and allow it to sit another 15 minutes, covered. Strain into a container and add 1/3 cup of the Spiced Simple Syrup. Refrigerate until ready to serve.
- Bring 2 quarts of water to a boil over medium heat. Add the tea bags, let steep for 7 minutes and then remove. Allow the tea to cool.
- When ready to serve, add 1/3 cup tapioca pearls, 1/3 cup half-and-half, and 1/4 cup spiced simple syrup to each glass. Fill the glasses with ice and top with the tea. Serve with a wide barrel straw to get the pearls.
- Combine all the ingredients in a small pot. Bring to a boil over medium-high heat and cook for 5 minutes. Remove from heat and let cool. Strain the mixture into a glass jar and discard the cloves and cinnamon. The syrup will keep refrigerated for up to 2 weeks.
NANNY'S NEWFOUNDLAND TEA BISCUITS
My nanny used to make these tea biscuits all the time. One of my favorite memories of visiting Newfoundland is standing at the kitchen table as she made these and gave us a little bit of the raw dough to taste. They're light and delicious! Serve hot with butter and jam.

- Preheat oven to 350 degrees F (175 degrees C). Grease 2 baking sheets.
- Whisk flour and baking powder together in a bowl; stir in raisins. Whisk milk and eggs together in a bowl.
- Beat butter, sugar, and salt together in a bowl with an electric mixer until light and fluffy, about 1 minute. Beat egg mixture into butter mixture; stir in flour mixture until dough is just mixed.
- Turn dough out onto a lightly floured surface and pat or roll out about 1-inch thick. Cut dough with a biscuit cutter or juice glass; place biscuits onto the prepared baking sheets.
- Bake in the preheated oven until golden brown, about 10 minutes.
