TOMATO STEAK SANDWICHES
My husband and I came up with these open-faced sandwiches when we didn't have much in the refrigerator. They've been a favorite ever since, particularly when we need a quick dinner. You can easily double the recipe when company drops by. -Tessa Edwards, Provo, Utah

- Preheat broiler. In a large skillet, heat oil over medium heat. Add beef; cook and stir 3-5 minutes or until browned; drain. Stir in salt and pepper., Spread cut sides of bagels with cream cheese. Transfer to an ungreased baking sheet; spoon beef over bagels. Top with tomato and mozzarella cheese. Broil 4-6 in. from heat 3-5 minutes or until cheese is melted and lightly browned.

TRE COLORE PESTO AND GRILLED STEAK WITH QUICK ROASTED TOMATOES AND GARLIC

- Position a rack in the center of the oven and preheat the oven to 500 degrees F (or the highest setting).
- Bring the steaks to room temperature.
- Meanwhile, remove 1 garlic clove from the bulb and finely grate. Remove the other cloves with the skin still intact and spread them on a baking sheet along with the tomatoes. Toss with about 1/4 cup EVOO and season with salt and pepper. Turn the tomatoes cut-side down. Roast until the tomatoes are charred and softened, 20 to 25 minutes.
- Lightly toast the pine nuts in a small skillet over medium heat, then remove to a plate to cool.
- Combine the parsley, basil, endive, radicchio, thyme, pine nuts, lemon juice and cheese in a food processor. Season with salt and pepper. Pulse until chopped. With the motor running, drizzle in the remaining 1/2 cup EVOO in a slow stream until blended. Transfer the pesto to a serving dish. (Any leftover pesto is delicious on sandwiches or tossed with hot pasta and starchy cooking water.)
- Heat a grill pan or heavy griddle over medium-high heat or prepare an outdoor grill.
- Drizzle the steaks with EVOO and sprinkle with salt and pepper. Grill for 3 to 4 minutes, then flip and cook 3 more minutes for medium-rare. Remove to a cutting board and let rest for 5 to 10 minutes.
- Place the steaks on serving plates and drizzle with the pesto. Serve the roasted tomatoes, garlic and bread on the side. To eat, squeeze the garlic from the skins and rub onto the bread, then top with the tomatoes.

- Prepare barbecue (medium-high heat). Whisk oil, vinegar, and 3/4 teaspoon mustard in large bowl. Season dressing with salt and pepper. Transfer 2 tablespoons dressing to small bowl; whisk in sugar and 1 teaspoon mustard. Sprinkle beef all over with salt and pepper, then top with mixture from small bowl.
- Grill beef until thermometer inserted into thickest part registers 120°F to 125°F for rare, turning occasionally, about 30 minutes. Place on cutting board; let rest 10 minutes. Cut very thinly across grain.
- Meanwhile, add tomatoes, watercress, and onion to dressing in large bowl. Marinate while beef grills, tossing occasionally. Grill bread, cut side down, until just crusty, about 3 minutes; place on plates, grilled side up.
- Arrange beef slices over bread. Using tongs and draining slightly, top with salad.

- Cut steak into 6 pieces and sprinkle generously with tenderizer, piercing with a fork.
- Grease lightly and preheat griddle to 400 degrees.
- Grill meat 2 to 3 minutes on each side; pepper to taste.
- MAKE SAUCE by combining the butter through the salt and heating.
- Toast the bread.
- TO SERVE; dip one side of the toast, using a fork, quickly into the sauce; top with the steak and spoon the remaining sauce on the steaks.

- Preheat oven to 500°F with rack in middle.
- Toss tomatoes with shallots, garlic, oil and 1 1/2 teaspoons salt in a shallow 3 quart baking dish, then arrange tomatoes cut sides up. Roast uncovered, basting once, until tomatoes are tender but still hold their shape and are starting to brown, 35 to 45 minutes. Cool to room temperature.
- Whole tomatoes cool, prepare grill for direct-heat cooking over hot charcoal (medium high heat for gas).
- Sprinkle each steak all over with 1/4 t salt and 1/4 t pepper (total per steak). Oil grill rack, then grill steaks, coved only if using gas grill, turning once (5-6 min total for medium rare.
- Transfer to a cutting board. Lightly brush both sides of bread slices with some oil from roasted tomatoes and grill, turning over once until lightly toasted and grill marks form (about 1 min total).
- Stir together vinegar & sugar until sugar dissolves, then stir in herbs. Spread one side of each bread slice with some herb mixture (about 1 T per slice).
- Slice steaks, then make into sandwiches with bread, roasted tomatoes, shallots, and watercress.
