NO-BAKE ENERGY BITES

No-Bake Energy Bites image

This is a healthy take on the traditional no bake cookies. So good and good for you! I am always asked for this recipe every time I make them. They are a hit with the kids and the adults, and always go quick! I store them in the freezer because I think they taste best frozen, but not necessary.

CRUNCHY PEANUT BUTTER, CHOCOLATE, COCONUT GRANOLA

Crunchy Peanut Butter, Chocolate, Coconut Granola image

If you're at movie night with your family, or just hungry for a sweet and salty snack, you will always be wanting to make 2 times the recipe! If you don't want the chocolate to melt, put them in after the rest of the granola cools and settles. Serve right away or store in fridge up to 1 week. Enjoy!

NO BAKE GRANOLA BALLS

No Bake Granola Balls image

Healthy snacks that kids (and grown ups) will love! I originally got the recipe from Whole Foods, then changed it up a bit. This is dairy-free and vegetarian. NOTE: I have many a time made these without toasting the oats and coconut and it works out just fine that way as well :)

Categories     Breakfast

Time 25m

Yield 21 large cookies, 10 serving(s)

Number Of Ingredients 8

2 cups rolled oats (sometimes I use 1.5 cups rolled oats and 0.5 cups steel cut oats)
1/2 cup unsweetened dried shredded coconut
1/2 cup crunchy peanut butter (if using JIF, Skippy or any brand with sugar, omit the sugar below)
1/2 cup honey
2 tablespoons packed brown sugar (lately I have been just using 2 T of Splenda instead of this)
1/4 cup chopped mixed nuts (I like to use almond slivers and chopped walnuts mixed or pistachio's)
1/8 cup raisins (I use golden ones)
1/8 cup dried cranberries (May sub with dried blueberries or dried cherries)

Steps:

  • Preheat the oven to 350 degrees. Spread oats and coconut on a cookie sheet. Place in the oven and toast for about 12 minutes, stirring twice, until lightly browned.
  • Meanwhile, combine the peanut butter, honey and brown sugar in a saucepan over medium heat, stirring continuously, until ingredients are thoroughly blended and sugar has completely melted (about 2 minutes).
  • Add the toasted oats and coconut to the peanut butter mixture, followed by the nuts, raisins and cranberries. Stir to combine. Set aside to cool for about 10 minutes.
  • Working with dampened hands, shape into bite sized balls and refrigerate for an hour. I usually let mine sit out for about 15 minutes prior to serving.

PEANUT BUTTER GRANOLA

Peanut Butter Granola image

I found this recipe at hillbillyhousewife.com, a very interesting site. My kids love this granola...they eat it plain, or on top of yogurt with fruit, like a sundae.

Time 15m

Yield 3 cups

Number Of Ingredients 6

2 tablespoons margarine
1/3 cup peanut butter
1/3 cup honey
1/2 teaspoon vanilla
1/4 teaspoon salt
3 cups oatmeal

Steps:

  • Melt together margarine, peanut butter and honey.
  • Add vanilla and salt.
  • Add oatmeal and toss to coat completely.
  • Spread on baking sheet.
  • Bake at 375 about 10 minutes. Stir after 5 minutes.
  • Store at room temperature in sealed container.
  • Note.watch it closely while it bakes -- it burns easily, especially around the edges where it's spread thinner on the pan.
  • Also note -- I omit the salt without noticing any change in flavour.

  • In a medium microwave-safe mixing bowl, melt the dark chocolate chips with 1 teaspoon coconut oil for 60 seconds in the microwave and then stir continuously until completely melted and smooth. Microwave an additional 30 seconds, if necessary.
  • Use a small cookie scoop to scoop mixture and form into 1-inch balls with your hands. It will be sticky at first, but just keep rolling the mixture between the palm of your hands until it holds together in a ball shape.
  • Place on a parchment paper lined baking sheet. Drop peanut butter balls, one at a time, into the melted chocolate. Using a fork, roll the peanut butter ball to coat completely in the chocolate and gently lift to let excess chocolate drip back into the bowl. Transfer back to the parchment-lined baking sheet. Repeat with remaining peanut butter balls until they are all coated.
