POTATO HASH WITH SAUSAGE & FRIED EGG
Leftover cooked potatoes and peppers form the base of this quick weeknight meal for one. Alternatively, use frozen cubed hash browns and and bell pepper-onion stir-fry mix.

Steps:
- Heat 2 tsp. oil in a medium nonstick skillet over medium-high heat. Add green pepper; cook, stirring often, until softened, 3 to 4 minutes. Stir in cabbage (or coleslaw mix) and sausage; cook, stirring, until the sausage is no longer pink and the cabbage is wilted, about 5 minutes.
- Add roasted vegetables; cook, stirring, until heated through, about 5 minutes more. Transfer the hash to a plate and keep warm.
- Wipe out the pan with a paper towel, if needed. Add the remaining 1 tsp. oil; heat over medium heat. Crack egg into the pan and cook to desired doneness, 1 1/2 to 2 minutes for a runny yolk and 3 1/2 to 4 minutes for a firmer yolk. Serve the egg on top of the hash.

- In a large nonstick skillet, cook sausage over medium heat 4-6 minutes or until no longer pink, breaking into crumbles; drain. Stir in sweet potato, onion, chili powder and 1/4 teaspoon each salt and pepper. Cook, uncovered, 15-20 minutes or until potatoes are tender, stirring occasionally. Remove from heat. Sprinkle with cheese; cover and let stand until cheese is melted., Meanwhile, in another nonstick skillet, heat butter over medium-high heat. Break eggs, 1 at a time, into pan; immediately reduce heat to low. Cook, covered, 5-6 minutes or until whites are completely set and yolks just begin to thicken. If desired, carefully turn eggs and cook second side to preferred doneness. Sprinkle with the remaining salt and pepper. Serve hash with eggs and, if desired, salsa.

Stir in red pepper and sausage; heat through., Meanwhile, in another large nonstick skillet, heat butter over medium-high heat. Break eggs, one at a time, into pan; immediately reduce heat to low. Cook, covered, 5-6 minutes or until whites are completely set and yolks just begin to thicken. If desired, carefully turn eggs and cook second side to desired doneness. CHINESE HASH
This isn't really 'typical' Chinese food... but it has Chinese elements! *LOL* We used to eat this growing up ... I have recently been reintroduced to it through my sister, and boy am I ever glad! :-) It looks a bit , ummm... nasty when mixing *LOL* but it is very good! :)

- Brown hamburger and onions.
- Add celery, rice, soups, water and sauces.
- Pour into a sprayed 13x9 pan.
- Bake at 350°F for an hour, stirring a couple of times during cooking.

This will become a family favorite for breakfast or, really, any time of the day. Using frozen potatoes cuts down on prep time, while Jimmy Dean Premium Pork Sausage adds a rich layer of flavor.

- In a large skillet, heat 1 tablespoon of oil over medium-high heat for about 30 seconds. Add Jimmy Dean sausage and cook for 8 to 10 minutes until browned, stirring frequently to break up the sausage into small pieces, then drain. Remove the sausage and set aside.
- In the same skillet, heat the remaining oil for 30 seconds. Carefully add the potatoes and fry until they begin to turn golden brown, 10 to 15 minutes. Stir occasionally so that the potatoes do not stick or burn.
- Add onions, peppers, salt, and pepper, and cook for an additional 5 minutes. Add the sausage and stir well.
- Serve with the fried eggs and avocado slices on top to get more nutrition from the meal.

- Potatoes scrubbed and ready for dicing. I totally forgot to add the onion and bell pepper to the board for the photo. oh well, not a show stopper. Now the sausage is air dried but not safe for consumption yet.
- Chinese sausage is stable at room temp before opening the package and refrigerated after that. This is a hard sausage, and a trick to get it soft is to steam it first before adding to a dish. The steaming also cooks it mostly through. The 3 sausages added to my hot steamer (rice cooker).
- Steam for 20 minutes. Here you can see the sausage has swelled up a bit. After 20 minutes, remove them to a cutting board and dice them.
- While the sausage is steaming, heat some lard or cooking oil, maybe 2-3 tablespoons, in a large non stick pan on medium heat. While the pan is heating, dice the potatoes and add them to the hot pan and give a good shake or two of pepper if you like.
