APPLE AND PRUNE STUFFED PORK LOIN



Apple and Prune Stuffed Pork Loin image

Extra-virgin olive oil
4 slices bacon, cut crosswise into lardons
1 small red onion, cut into 1/4-inch dice
Kosher salt
2 Granny Smith apples, peeled, cored, and cut into 1/2-inch dice
1/2 cup prunes, quartered
2 sprigs fresh rosemary, leaves picked and finely chopped, divided
1/2 cup brandy or Calvados
1 (3 to 4-pound) boneless pork loin
1 cup chicken stock

Steps:

  • Coat a large saute pan lightly with olive oil. Add the bacon and bring the pan to a medium heat. When the bacon is crispy and has released a lot of fat, add the onions and season with salt. Cook the onions until they are soft and aromatic, 5 to 6 minutes. Add the apples, prunes, and half the chopped rosemary. Cook the apples, stirring occasionally, until they start to soften, about 5 minutes. Pull the pan off the heat and add the brandy. Return to the fire and flambe, or let the alcohol just burn off. Remove from the heat and let cool.
  • Lay out a length of plastic wrap about 2-feet in length. Spoon the apple mixture onto the plastic and make a log down the center that is about the same length as the pork loin. Roll the plastic tightly around the apple mixture and twist at the ends to secure. The log should be about 1- inch in diameter. Place the log in the freezer and let it freeze solid. This can and should be done ahead of time.
  • To stuff the pork: Insert a long, thin knife into the center of one end of the pork loin; repeat this process at the other end. Wiggle the knife back and forth to create a place big enough to accommodate your frozen stuffing log. After cutting with the knife, you can use the handle of a long wooden spoon to make sure the incision goes all the way through the pork loin.
  • Preheat the oven to 375 degrees F.
  • Get the stuffing log from the freezer and remove the plastic wrap. Slide the stuffing log through the pork loin - it might need a little encouragement but it should go the length of the loin. Season the outside of the pork generously with salt and sprinkle it with the remaining chopped rosemary.
  • Coat a roasting pan with olive oil and bring the pan to a high heat. Add the pork to the pan and sear it on all sides until it is brown.
  • Remove the pork to a plate and ditch the fat in the roasting pan. Add the pork back to the pan pour in the chicken stock. Place it in the oven for 25 to 35 minutes, depending on how you like your pork. I personally like it pinker and would remove it from the oven when a meat thermometer reaches 130 degrees F. Turn it over halfway through the cooking time. Remove it from the oven, cover it with foil, and let it rest for 15 minutes before carving.

DANISH ROAST GOOSE WITH PRUNES & APPLES

8 ounces prunes
water
9 lbs goose
1/2 lemon
salt and pepper
4 medium apples, peeled,cored & sliced
5 cups boiling chicken stock

Steps:

  • Soak the pitted prunes overnight.
  • Clean out all excess fat from the goose (keep the fat to render for later use).
  • Rub the goose inside and out with the lemon salt& pepper.
  • Stuff the bird with the prunes& apples and truss the bird.
  • Prick the goose all over to help the fat escape while roasting.
  • Place the goose on a roasting rack on it's side in a 375F oven.
  • After 30 minutes pour off the fat.
  • Pour in the boiling stock& continue cooking.
  • Baste the goose from time to time.
  • After 1 1/2 hours turn the goose on it's other side.
  • Roast for another 1 1/2 hours.
  • 30 minutes before the goose is cooked pour off the pan juices, leave to cool and skim off the fat.
  • During the last 15 minutes of cooking lay the goose on it's back leave the oven door ajar to allow the skin to crisp or alternatively baste with several tablespoons of cold water.
  • Use the pan juices (fat removed to make your gravy).

APPLE, PRUNE AND SAUSAGE STUFFING

1 pound fresh white bread without crust, cubed (for 7 to 8 cups of bread cubes)
1/2 pound pitted prunes
1 pound bulk breakfast sausage (fresh turkey or duck sausage can be substituted)
5 tablespoons butter or margarine
3 stalks celery, diced fine
1 large yellow onion, peeled and diced fine
3 Granny Smith apples, peeled, cored and diced
2 teaspoons ground sage
1 tablespoon dried thyme
Salt and freshly ground black pepper to taste
1/4 to 1/3 cup chicken or turkey stock, approximately

Steps:

  • Preheat oven to 350 degrees.
  • Spread bread cubes on one or more baking sheets and toast in oven until dry and golden brown, about 20 minutes. Transfer bread to a very large mixing bowl and set aside.
  • While bread is toasting, put prunes in a small saucepan, cover with water, bring to a simmer and cook about 10 minutes, until tender. Drain and chop prunes in a food processor or by hand. Fold prunes into the bread cubes.
  • Crumble sausage into a large, heavy skillet and saute, stirring with a fork, until cooked through and browned. Drain well of fat and add to the bread cube mixture. Discard the fat.
  • Add the butter to the skillet and saute the celery, onion and apples over medium-high heat until tender, about 15 minutes. Add sage, thyme, salt and pepper. Stir in the stock.
  • Add the contents of the skillet to the bread mixture and toss to combine all ingredients. Adjust seasonings and, if necessary, add more stock. The bread in the stuffing mixture should be just moist, neither crunchy nor sodden. Let stuffing cool and refrigerate if not using immediately. The turkey should be stuffed just before roasting. Any excess stuffing can be baked in a covered casserole during the final half hour the turkey is roasting.

A 12- to 14-pound turkey, neck, and giblets (excluding liver) reserved for making
Potato, Apple, and Prune Stuffing
1 stick (1/2 cup) unsalted butter, softened
1 cup water
1 cup turkey giblet stock or chicken broth
For gravy
1 cup Tawny Port, preferably reserved from stuffing recipe
4 tablespoons all-purpose flour
4 cups turkey giblet stock or chicken broth
2 tablespoons fresh lemon juice
Garnish: fresh thyme and flat-leafed parsley sprigs and apple slices

Steps:

  • Preheat oven to 425°F.
  • Rinse turkey and pat dry inside and out. Season turkey inside and out with salt and pepper and pack neck cavity loosely with some stuffing. Fold neck and skin under body and fasten with a skewer. Fill body cavity loosely with some remaining and truss turkey. Transfer remaining to a buttered 3-quart baking dish and reserve it, covered and chilled.
  • Spread turkey with butter and on a rack in a roasting pan in oven 30 minutes. Reduce oven temperature to 325°F. and baste turkey with pan juices. Add water to pan and roast, basting every 20 minutes, 2 1/2 to 3 hours more, or until a meat thermometer in fleshy part of thigh registers 180°F., and juices run clear when thigh is pierced.
  • During last 1 1/2 hours of roasting, drizzle reserved stuffing with stock or broth and bake, covered, in 325°F. oven 1 hour. Bake stuffing uncovered, 30 minutes more. Transfer turkey to a heated platter, reserving juices in roasting pan, and discard string. Keep turkey warm, covered loosely with foil.
  • Make gravy:
  • Skim fat from roasting pan juices, reserving 1/4 cup fat, and deglaze pan with Port over moderately high heat, scraping up brown bits. Bring Port to a boil and remove pan from heat. In a saucepan whisk together reserved fat and flour and cook roux over moderately low heat, whisking, 3 minutes. Add Port mixture and stock or broth in a stream, whisking, and simmer, whisking occasionally, 10 minutes. Stir in lemon juice and salt and pepper to taste and transfer gravy to a heated gravy boat.
  • Garnish turkey and stuffing with herbs and apple slices.

1 pound prunes, pitted
1 cup port or madeira
2 tablespoons unsalted butter
1 medium onion, chopped
2 cloves garlic, minced
6 stalks celery, chopped
4 tablespoons parsley, chopped
1/4 teaspoon thyme
Dash sage
1 pound cooking apples, peeled, cored and chopped
1 cup white bread crumbs
Coarse salt and freshly ground pepper to taste
1 8- to 10-pound goose
1 lemon, halved

Steps:

  • Soak the prunes for an hour in the port.
  • Preheat oven to 350 degrees.
  • Melt the butter in a skillet and soften the onion, garlic and celery in the butter. Add the parsley, thyme, sage and apples. Mix thoroughly and add the prunes and port. Cook for 15 to 20 minutes. Add the bread crumbs and season with salt and pepper.
  • Remove excess fat from the goose cavity (use this for roasting potatoes) and dry the goose inside and out with paper towels. Rub inside and out with lemon juice and season.
  • Stuff the goose with the stuffing mixture and truss. Place on a roasting rack and roast for three to three-and-a-half hours, basting occasionally. The goose is done when the juices in the thigh are pale yellow. Let it rest for 15 minutes before serving.
