4cloves4 cloves garlic
3(8-ounce) cans3 (8-ounce) cans tomato sauce
1/2cup1/2 cup coarsely chopped onion
1/2cup1/2 cup chopped parsley
55 celery stalks, chopped
1bottle1 bottle rose wine
10cups10 cups cold water
1teaspoon1 teaspoon black pepper
2tablespoon2 tablespoon salt
1tablespoon1 tablespoon ground allspice
1/2teaspoon1/2 teaspoon cumin seeds
44 bay leaves
1tablespoon1 tablespoon wine vinegar
1head1 head green cabbage, cored and quartered
11 loaf French bread, cut into 1-inch slices
2525 whole fresh mint leaves, with stem-essential

Steps:

  • Combine pot roast, garlic, tomato sauce, onion, parsley, celery, rosé, water, black pepper, salt, allspice, cumin, bay leaves, vinegar, and cabbage in a large pot Cover and simmer 6 hours. During last hour, uncover the pot. At serving time, cover bottom of large, shallow serving dish with bread slices. Lay lightly bruised mint leaves on top of the bread so each piece is touched by mint flavor. Ladle the hot sopas on top and eat immediately.

5 lb chuck roast, whole
2 onions, coarsely chopped
2 can(s) whole tomatoes, diced
1 can(s) tomato sauce, 15 ounces
1 bay leaf, optional
1 tsp ground cumin
1 tsp whole cloves
2 tsp allspice, whole
1 tsp ground cinnamon
1 Tbsp garlic powder
3 Tbsp worcestershire sauce
1/2 c ketchup
2 c red wine
4 qt water
1 cabbage head, quartered
salt to taste
pepper to taste
4 fresh mint sprigs
1-2 french bread loaves

Steps:

  • 1. Use a 6-8 quart pot and fill 1/2 to 2/3 full.
  • 2. Put meat, chopped onions, cinnamon, sauces, ketchup, wine and spices into pot and bring to a boil.
  • 3. Put the whole spices into a tea ball and submurge in broth.
  • 4. Check meat and right before it starts to flake, remove from the pot and let cool.
  • 5. Cut into bite size pieces while cabbage is cooking, and return to the pot after the cabbage is done.
  • 6. Should take 2-3 hours on a slow burner, but the meat is flavored better when cooked in a crockpot.
  • 7. The cabbage is added at the end and should be boiled until translucent, but not so it breaks up.
  • 8. The last thing to add before you turn off heat is mint.
  • 9. Serve Sopas over french bread slices.

This is a traditional Portuguese soup served in homes, and especially at the Holy Ghost Feast, a yearly celebration. I don't get to there any more, but at least I have the recipe! Some of the true afficionados use several kinds of beef, including liver. All ingredient amts are estimates, as are the number of servings.

3 lbs rump roast (size is an estimate)
2 (4 ounce) cans tomato sauce
2 cups red wine
3 -4 small white onions
3 -4 stalks celery & leaves
3 -4 cabbage leaves
1 head garlic
2 tablespoons pickling spices, tied in a cheesecloth
water, to cover all
salt and pepper
fresh mint leaves (optional)
Portuguese bread

Steps:

  • Combine everything and add enough water to cover all.
  • Let cook slowly all day (at least 8 hours).
  • Remove cheesecloth bag and discard.
  • To serve, put the sliced meat and sauce(soupas) over sliced bread.
  • Sprinkle with chopped mint if desired.

Sopas (pronounced soapish) is different depending on the region your family came from. I had a friend from Rhode Island that pronounced it soupish...her version was close, not exactly the same. This version is from the Azores, Terceria to be exact.

6 pound(s) chuck roast, cut into 2" squares
8 ounce(s) can of tomato sauce
1 teaspoon(s) onion salt
1/2 teaspoon(s) cinnamon
1/4 teaspoon(s) red pepper
1 cup(s) sauterne wine (white)
1/4 cup(s) ketchup
1/4 teaspoon(s) garlic powder
1/4 teaspoon(s) black pepper
2 clove(s) garlic, smashed
1 teaspoon(s) salt
SPICE BALL
1/4 teaspoon(s) whole cloves
1/4 teaspoon(s) whole cumin seeds
3 - bay leaves
2 - cinnamon sticks
1/4 teaspoon(s) whole allspice
2 - heads of cabbage cut in 1/8ths
- mint leaves

Steps:

  • Salt and pepper the meat. Mix tomato sauce, wine and spices and pour over meat. Put spiceball in pan with meat. Cover roasting pan. Bake until meat is tender on low heat, approx 2-3 hours.
  • When meat is almost done, add water to make juice as needed. Add cabbage, cover and cook until cabbage is tender (pinch it, you don't want it mushy.
  • Place mint on thickly sliced day-old French bread then dish out thick chunks of this flavorful stew on the bread.
