PORTUGUESE SAUSAGE AND BEAN STEW



Portuguese Sausage and Bean Stew image

Number Of Ingredients 13

1 pound dried kidney beans or great Northern beans, rinsed and picked over or 2 (15- ounce) cans or kidney beans
8 ounces sliced smoked bacon, optional
8 ounces Spanish chorizo (cured spicy pork sausage), kielbasa or other spicy sausage, cut into 1/4-inch-thick coins
1 large yellow onion, roughly chopped
4 medium garlic cloves, thinly sliced
1/4 cup tomato paste
2 medium Yukon gold potatoes, cut into 1/2-inch pieces
4 cups water
1 (28-ounce) can diced tomatoes
2 tablespoons honey
1 tablespoon sweet paprika
2 teaspoons kosher salt, plus more for seasoning
1 medium bay leaf

Steps:

  • If using dried beans, add the beans to a large bowl, cover by 2 inches with cold water and let soak for at least 8 hours, or overnight. Drain and set aside. If using canned beans, drain and rinse.
  • Add the bacon, if using, to a large, heavy-bottomed pot over medium heat and cook until browned and crisp, about 10 minutes. Remove the bacon and set aside. Discard all but 1 tablespoon of the fat and return the skillet to the stovetop. Add the sausage and cook until browned. With a slotted spoon, remove the sausage to a bowl and reserve.
  • Discard all but 1 tablespoon of the fat from the skillet and return to the stove over medium heat. When the fat shimmers, add the onion and garlic, stir to coat in fat, and cook until golden brown, about 4 minutes. Stir in the tomato paste and cook until fragrant, about 30 seconds.
  • Add the potatoes and stir to coat in the tomato paste. Add the beans, chorizo, and all remaining ingredients, except the bacon, and bring to a boil over high heat. Reduce the heat to medium-low and simmer until the flavors have melded and the dried beans are cooked through, about 1 to 1 1/2 hours. Crumble the bacon into beans, and season with additional salt, if needed. Remove the bay leaf, transfer the beans to a serving bowl and serve.

8 oz thick cut or slab bacon, chopped coarsely.
8-10 oz portuguese linguiça, sliced thinly
6 c black beans, cooked and unseasoned
1 large sweet onion, diced
6 clove garlic, sliced thinly
1 1/2 c beef broth
3-4 c fresh cilantro, chopped roughly
2 medium hierloom tomatoes, chopped coarsely
2 Tbsp paprika, sweet mild
1 1/2 tsp ground pepper flakes
1 tsp garlic powder
1 Tbsp fine ketchup
4 Tbsp anchovy sauce
1 Tbsp red vinegar
1 Tbsp all purpose flour
salt and pepper to taste

Steps:

  • 1. Heat a heavy soup pot or dutch oven over medium heat. Cook bacon until rendered and just slightly brown stirring occasionally. That's about 5-8 minutes.
  • 2. Add onions to the pot and cook until translucent. That's about 5 minutes. Add ketchup, red pepper flakes and vinegar; cook for about 3 minutes stir occasionally.
  • 3. Add tomatoes and garlic to the pot and cook for an additional 10 minutes uncovered.
  • 4. Add Linguiça to pot and stir to combine completely. Cook for 5 minutes. Add paprika, garlic powder,
  • 5. Take pot out of boil and add black beans. Stir to completely incorporate.
  • 6. Add flour and stir vigorously to thicken pot. Use beef broth if you accidentally overly thicken the pot to thin it back out. DO NOT overly flour the pot or it will taste like raw flour. If you have to thin it back out, be careful and do not even think about adding more flour!!!
  • 7. Salt and pepper the pot to taste.
  • 8. Add cilantro and stir. Serve!

FEIJOADA NORDESTINO (NORTHEASTERN BRAZILIAN BLACK BEAN STEW)

A version of feijoada from Northeastern Brazil. Feijoada is a dish made throughout Brazil, and there are many versions, but this recipe is the most common 'day-to-day' version you'll encounter in backyard barbeques and birthday parties in the Northeast.

½ (15 ounce) can black beans, rinsed and drained
1 onion, diced
¼ pound smoked ham, diced
¼ pound calabresa (Portuguese smoked sausage), cut into 1/4-inch slices
4 cloves garlic, minced, divided
1 ½ teaspoons salt
1 tablespoon ground cumin
½ teaspoon ground black pepper
1 bay leaf
1 ½ teaspoons olive oil
4 leaves collard greens, cut into fine ribbons, or to taste
1 ½ cups cassava flour
1 ½ teaspoons butter, or to taste
4 cups cooked white rice
4 oranges, cut in wedges, or as desired
¼ cup coarsely chopped cilantro

Steps:

  • Combine beans, onion, ham, calabresa, 3 cloves garlic, salt, cumin, black pepper, and bay leaf in a pressure cooker; cover with water to fill line.
  • Close cooker securely and place pressure regulator over vent according to manufacturer's instructions. Cook at high pressure until regulator is gently rocking, 5 to 7 minutes. Reduce pressure to low. Cook, adding water halfway if needed, until beans are tender and water is reduced to your liking, about 1 hour.
  • Turn off heat. Let pressure release naturally according to manufacturer's instructions, about 5 minutes. Unlock lid and remove. Let feijoada cool until ready to serve.
  • Heat olive oil in a saucepan over medium-high heat. Saute remaining 1 clove garlic and collard greens until just tender, about 2 minutes.
  • Place cassava flour in a skillet over medium-high heat. Cook and stir until toasted, about 3 minutes. Stir in butter.
  • Serve feijoada with the collards-garlic mixture, toasted cassava flour, rice, orange wedges, and cilantro.

1 lb dried navy beans or 1 lb great northern bean, picked over
1 lb sliced bacon
1 large onion, chopped
3 cloves garlic, minced
4 -5 cups water
1 (6 ounce) can tomato paste
1 lb Portuguese chourico or 1 lb spanish chorizo sausage, cut into 1/4 inch thick slices
1/2 teaspoon dried red pepper flakes, to taste
1 tablespoon paprika
salt and pepper

Steps:

  • Soak beans in cold water to cover by 2 inches, for 8 hours.
  • Cook bacon in a large pot until crisp.
  • Transfer to paper towels to drain.
  • Discard all but 3 tablespoons of bacon drippings.
  • Cook onion in bacon drippings over moderate heat, stirring frequently, until golden brown; about 7-9 minutes.
  • Add garlic and cook, stirring until it becomes golden.
  • Drain beans and add to onion mixture with remaining ingredients (except bacon).
  • Bring to a boil, then reduce heat and simmer, covered, stirring occasionally, until beans are tender; about 1 1/2 hours.
  • Crumble bacon into beans and season with salt and pepper before serving.

4 cups dried black beans
1 1/4 gallons water
2 lbs boneless skinless chicken breasts, sliced
2 medium red peppers, diced
1 medium red onion, diced
2 cups cleaned okra (fresh or frozen)
1 head garlic, diced
2 medium tomatoes, diced
1 bunch chopped scallion
1/2 bunch chopped basil
1/2 bunch chopped cilantro
1 tablespoon ground cumin
fresh cracked black pepper

Steps:

  • Soak beans overnight in water.
  • The beans will double in volume.
  • Discard water and fill with new water to same level.
  • Add onion, garlic and cumin, simmer beans for one hour or until liquid is mostly absorbed and beans are semi soft.
  • If all liquid evaporates before beans are cooked add water (at least 1/2 inch above beans).
  • Add red pepper, okra and tomatoes and continue to simmer for 15 minutes.
  • Finally; add sliced chicken, scallions, basil and cilantro.
  • Pull off heat and let chicken braise in the stew without any heat for approximately 10 minutes.
  • Serve when chicken is cooked and tender.

1 whole onion, peeled
3 whole garlic cloves, smashed
1 chorizo sausage, sliced 1/2 inch thick
5 potatoes, peeled and diced
1/8 cup red wine
2 cups water (or more if required)
2 teaspoons ketchup
1 teaspoon salt
1 teaspoon paprika
1/2 teaspoon ground cumin
black pepper
garlic powder
1 (540 ml) can cut green beans
1 (398 ml) can cut yellow wax beans
1 (398 ml) can peas
olive oil

Steps:

  • Heat the oil and sauté the whole onion and smashed garlic for several minutes. Add the sliced chorizo to the pan and cook for five minutes. Remove the garlic and then add the remaining ingredients except for the beans and peas to the pan. Cook covered until the potatoes are tender. Drain the canned beans and peas and rinse.
  • Remove the whole onion, then add the beans and peas to the pan and toss gently. Cook for several minutes more or until the beans and peas are hot.
