2 large portobello mushrooms, stems removed
Cooking spray
1/8 teaspoon garlic salt
1/8 teaspoon pepper
1/2 teaspoon olive oil
1 small onion, chopped
1 cup fresh baby spinach
2 large eggs
1/8 teaspoon salt
1/4 cup crumbled goat or feta cheese
Minced fresh basil, optional

Steps:

  • Preheat oven to 425°. Spritz mushrooms with cooking spray; place in a 15x10x1-in. pan, stem side up. Sprinkle with garlic salt and pepper. Bake, uncovered, until tender, about 10 minutes., Meanwhile, in a nonstick skillet, heat oil over medium-high heat; saute onion until tender. Stir in spinach until wilted., Whisk together eggs and salt; add to skillet. Cook and stir until eggs are thickened and no liquid egg remains; spoon onto mushrooms. Sprinkle with cheese and, if desired, basil.

2 cups chopped portabella mushrooms
2 medium garlic cloves, minced
1/2 small red onion, sliced
1 teaspoon chopped fresh rosemary
2 slices light whole wheat bread, cut into small cubes (not grainy)
4 ounces low-fat cheddar cheese, finely grated
2 cups egg substitute (or 8 eggs)
1/4 cup low-fat milk
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Spray a 10" frying pan and place over medium heat. Add mushrooms, garlic, onion, and rosemary. Cook until tender but not completely done.
  • Spray a 1 qt., 6 1/2" round casserole dish. Place half of the bread evenly in dish. Layer in half of the cheese, and then half of the vegetable mixture. Repeat.
  • In a large bowl, mix egg substitute, milk, salt and pepper. Pour over bread, cheese, and veggies and cover casserole with plastic wrap. Refrigerate for at least 2 hours or up to overnight.
  • Remove plastic wrap and bake the casserole at 350*F. for 45 to 55 minutes or until set in the center. Let stand for 5 minutes. Serve hot.

I love portobello mushrooms. They are wonderful as a side dish or even a vegetarian main dish.This is a dish from The Garden of Vegan (Arsenal Pulp, $22.95) by Sarah Kramer and Tanya Barnard. Bragg is similar to soy sauce and is sold in health food stores. I found this recipe in the Toronto Star.

1/2 cup almonds
1/4 cup olive oil
1/4 cup tamari soy sauce (or preferably, Bragg sauce)
1/2 cup water
2 tablespoons balsamic vinegar
3 garlic cloves, roughly chopped
1 teaspoon dried rosemary
1 teaspoon dried oregano
6 large portabella mushrooms, stems removed
1 medium onion, sliced

Steps:

  • Preheat oven to 350°F.
  • In blender or food processor, grind almonds until powdered.
  • Add oil, Bragg sauce, water, vinegar, garlic, rosemary and oregano; blend.
  • Place mushrooms upside down in baking dish, tightly in one layer.
  • Bake for 30 to 35 minutes or until mushrooms are tender.
  • To serve, slice thickly on diagonal. Spread onion and sauce on top.

2 tablespoons olive oil, plus more for baking sheet
6 portobello mushrooms, stems removed and reserved
1/4 cup finely grated Parmesan cheese (1 ounce)
1/4 cup plain dry breadcrumbs
3 tablespoons finely chopped fresh flat-leaf parsley
3 tablespoons chopped fresh chives
2 shallots, thinly sliced
1 pound white or cremini mushrooms, sliced
1/2 cup dry white wine
1/2 cup heavy cream
1 teaspoon coarse salt
1/4 teaspoon freshly ground pepper

Steps:

  • Preheat oven to 350 degrees. Lightly oil a rimmed baking sheet. Arrange portobello caps, gill sides down, on sheet. Bake until tender, 20 to 25 minutes. Transfer to a plate to cool. Preheat broiler.
  • Stir together cheese, breadcrumbs, 1 tablespoon parsley, 1 tablespoon chives, and 1 tablespoon oil; set aside.
  • Chop portobello stems into 1/2-inch pieces. Heat remaining tablespoon oil in a large skillet over medium heat until hot but not smoking. Add shallots; cook, stirring, until softened, about 2 minutes. Add sliced mushrooms and chopped stems; cook, stirring occasionally, until tender, 6 to 7 minutes. Add wine; cook until most of the liquid has evaporated, about 2 minutes. Stir in cream, remaining 2 tablespoons each parsley and chives, and the salt and pepper. Remove from heat.
  • Arrange portobello caps, gill sides up, on a clean baking sheet. Divide mushroom mixture and then crumb mixture among caps. Broil until bubbling and golden brown, about 2 minutes.

1 (8 ounce) package uncooked penne pasta
2 tablespoons vegetable oil
½ pound portobello mushrooms, thinly sliced
½ cup margarine
¼ cup all-purpose flour
1 large clove garlic, minced
½ teaspoon dried basil
2 cups milk
2 cups shredded mozzarella cheese
1 (10 ounce) package frozen chopped spinach, thawed
¼ cup soy sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • Bring a large pot of lightly salted water to a boil. Place pasta in the pot, cook for 8 to 10 minutes, until al dente, and drain.
  • Heat the oil in a saucepan over medium heat. Stir in the mushrooms, cook 1 minute, and set aside. Melt margarine in the saucepan. Mix in flour, garlic, and basil. Gradually mix in milk until thickened. Stir in 1 cup cheese until melted. Remove saucepan from heat, and mix in cooked pasta, mushrooms, spinach, and soy sauce. Transfer to the prepared baking dish, and top with remaining cheese.
  • Bake 20 minutes in the preheated oven, until bubbly and lightly brown.

1/4 cup boiling water
1 tablespoon olive oil
2 cups sliced leeks
2 cups diced portabella mushroom caps
1 cup quartered mushroom
2 garlic cloves, minced
4 cups cooked orzo pasta (about 2 cups uncooked rice-shaped pasta)
2 cups thinly sliced fennel bulbs (about 1 large)
2 cups tomato juice
2 tablespoons minced fresh basil
2 tablespoons balsamic vinegar
1 teaspoon paprika
1/8 teaspoon pepper
vegetable oil cooking spray
4 ounces shredded sharp provolone cheese
1/4 ounce grated fresh parmesan cheese
basil sprig (optional)

Steps:

  • Combine the tomatoes and boiling water in a small bowl; cover and let stand 10 minutes or until tomatoes soften, drain.
  • Heat olive oil in large nonstick skillet over medium heat.
  • Add the tomatoes, leek, mushrooms, and garlic; saute 2 minutes.
  • Combine the mushroom mixture, orzo, and next 6 ingredients (orzo through pepper) in a large bowl; stir well.
  • Spoon mixture into a 13 x 9-inch baking dish coated with cooking spray.
  • Bake, uncovered, at 400 degrees for 25 minutes.

2 large portobello mushrooms
1 (8 ounce) bottle Italian-style salad dressing
1 tablespoon minced onion
1 ½ teaspoons minced garlic
¼ cup butter
1 stalk celery, diced
½ cup crab meat, fresh or canned
20 buttery round crackers, crushed
⅔ cup Italian blend shredded cheese, divided

Steps:

  • Preheat your oven's broiler. Clean mushrooms, and remove stems, reserving them for later. Marinate the mushroom caps in Italian dressing for 15 minutes. Remove from marinade, and place into a baking dish.
  • Broil at least 6 inches from heat for about 10 minutes. Check occasionally to make sure they do not burn. Turn off the broiler, and preheat the oven to 400 degrees F (200 degrees C).
  • Melt butter in a skillet over medium-high heat. Chop reserved mushroom stems. Sautee onion, garlic, mushroom stems and celery until tender. Add the crabmeat, and heat until cooked through, about 5 minutes. Transfer the skillet mixture to a medium bowl, and mix in crackers, 1/3 cup of the cheese blend, and mix until well blended. Use some of the Italian dressing marinade to hold the mixture together if necessary. Pack the crab mixture into the cavities of the mushrooms. Season with salt and pepper to taste.
  • Bake for 10 minutes in the preheated oven. Remove from the oven, and sprinkle remaining cheese over the tops, then return to the oven for 3 minutes, or until cheese has melted.

4 portabella mushrooms
1/4 cup olive oil
3 tablespoons balsamic vinegar
2 teaspoons fresh thyme, Chopped (or 1/2 tsp/2 mL dried)
1 pinch salt
1 pinch pepper
1 ounce parmesan cheese, shaved

Steps:

  • Remove thick end of mushroom stem, leaving about 1/2 inch (1 cm) attached to cap.
  • Place, smooth side up, in large, shallow glass dish.
  • Combine oil, vinegar, thyme, salt and pepper; pour over mushrooms, turning and brushing to coat evenly.
  • Let stand for 15 minutes.
  • Reserving marinade, place mushrooms, smooth side down, on greased grill over medium-high heat; close lid and cook for 5 minutes.
  • Turn and baste with marinade; cook, covered, for about 3 minutes or until mushrooms yield to the touch when pressed.
  • Arrange Parmesan over top; cook, covered, for about 2 minutes or until melted.

4 large portabella mushrooms, caps dark gills removed and halved, then sliced into about 1/2 inch slices
2 stalks celery, thirded lengthwise, then diced
1 (10 ounce) can Campbell's Golden Mushroom soup
1/3 cup sour cream
1 -2 teaspoon Worcestershire sauce
salt and pepper
12 Ritz crackers, coarsely crushed
3/4 cup shredded extra-sharp cheddar cheese

Steps:

  • Mix all of the ingredients together except for 1/4 c cheese and half of the Ritz.
  • Put in a greased 8x8 pyrex and cook at 400degrees for about 30 minutes.
  • Put the rest of the cheese and the crackers on top and cook until crackers are golden (about 5 minutes).

4 slices bacon
1/4 cup olive oil
1 lb baby portabella mushrooms, sliced
1/2 medium red onion, chopped
3 garlic cloves, finely chopped
1/2 cup slivered almonds
1 (10 3/4 ounce) can condensed condensed cream of mushroom & garlic soup
1/3 teaspoon paprika
1/3 teaspoon white pepper
2 (15 1/2 ounce) cans French style green beans, drained
1 cup shredded cheddar cheese

Steps:

  • Preheat the oven to 375 degrees F.
  • Place bacon in a large skillet over medium-high heat, and fry until crisp.
  • Remove from the skillet to drain on paper towels.
  • Pour olive oil into the skillet, and reduce heat to medium.
  • When oil is hot, add mushrooms and onion; cook, stirring frequently until the onions start to become translucent.
  • Add garlic, and fry for a couple of minutes, just until fragrant.
  • Stir in the mushroom soup and almonds, and bring to a boil.
  • Season with white pepper and paprika, and crumble in the bacon.
  • Gently stir in the green beans, then transfer the mixture to a casserole dish.
  • Bake uncovered for 30 minutes in the preheated oven.
  • Remove from the oven, and sprinkle Cheddar cheese over the top.
  • Return to the oven for 5 minutes, or until cheese is melted.
  • Let stand 5 minutes before serving.
