This easy Pinto Beans recipe yields the most delicious, amazing pinto beans you've ever had - without having to soak your beans! A simple blend of ingredients and spices turns that bag of dried beans into your new favorite side dish. Bonus: Makes amazing refried beans too!

3 cups dry pinto beans (rinsed and picked through)
1 tbsp olive oil
1 jalapeno (seeded and chopped)
1 yellow onion (dice)
3 cloves garlic (minced)
1 tsp pepper
1 tsp salt
1 tsp ground cumin
64 oz low sodium chicken broth (may use stock)

Steps:

  • Heat olive oil in a medium skillet. Add onion and jalapeno saute for 3 to 5 minutes until soft. Add garlic and saute for an additional minute.
  • In a large, 6 quart slow cooker, place beans, onion mixture, salt, pepper, and cumin.
  • Pour broth over the top and stir gently. If beans are not covered, add just enough water to cover the beans.
  • Cook beans on high for 8 to 9 hours or until tender. Test seasoning and add salt if needed.
  • Serve immediately.

3 slices bacon
4 cups chicken broth
1 pound dried pinto beans, rinsed
1 ½ cups water
½ cup chopped onions, or to taste
2 green chile peppers
1 ¼ teaspoons garlic powder
1 ¼ teaspoons kosher salt
1 teaspoon chili powder
½ teaspoon ground cumin
½ teaspoon paprika

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add bacon and cook, 4 to 6 minutes, turning once. Add chicken broth, pinto beans, water, onions, chile peppers, garlic powder, salt, chili powder, cumin, and paprika. Close and lock the lid.
  • Select high pressure according to manufacturer's instructions; set timer for 45 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid. Remove bacon and chile peppers. Mash beans with a potato masher until they reach desired consistency.

I use for rice dishes, refried beans, salads, burritos, tacos, dips, salsa, chips, and quesadillas. The spice mixture makes and excellent rub for meats--pork, beef, or chicken. After applying meat rub, please cover and put in refrigerator for 4 hours. . Please do not soak the beans ahead of time. The spices are absorbed during the cooking process. Recipe takes about 3 to 4 hours. Black beans cook faster than pinto beans.

7 tablespoons salt
5 tablespoons chili powder
3 tablespoons cumin
2 tablespoons garlic powder
2 tablespoons black pepper
1 lb beans (pinto beans or black beans)
2 tablespoons vegetable oil
add 2 tablespoons of spice mixture and 2 tablespoons vegetable oil to one lb beans

Steps:

  • Check out the beans for bad beans and stones. Wash beans, Soak in water for 10 minutes. Bad beans will float. Pick beans for bad beans again.
  • Make the spice recipe as listed above. Store in dark place in a jar for later use.
  • Do not presoak beans. Add 2 tablespoons spice mixture, 2 tablespoons vegetable oil, and water to cover one lb beans in a saucer pan. Bring to slow boil. Simmer. Keep beans just covered. Check water every 30 minutes and stir beans to keep beans covered. Add 1/2 cup of water as required. This is very important to keep beans barely covered with water. Beans will be done in 3 to 4 hours. The secret to this recipe is keep the beans just covered with water and slowly simmer. Flavor of spices will be absorbed into beans.

  • Place the pinto beans in a large colander. Thoroughly rinse them. Pick the beans over, removing any damaged or clearly misshapen beans and discarding them. Transfer the rinsed beans to a 6-quart or larger slow cooker.
  • Heat the oil in a medium nonstick skillet over medium-high heat. Once the oil is hot, add the onion, jalapeno, and 1/2 teaspoon salt. Sauté for 2 minutes, then add the garlic and let cook just until fragrant, about 30 seconds. Transfer to the slow cooker. Add the sautéed vegetables, bay leaves, cumin, oregano, cayenne, and remaining teaspoon salt. Pour the broth and water over the top.
  • Cover and cook on HIGH for 8 to 10 hours, until the beans are tender. All slow cookers are different and can heat things differently, so if yours tends to run hot, check it earlier on. Depending upon your model, there may be some liquid still in the slow cooker. Discard the bay leaves.
  • FOR REGULAR PINTO BEANS (not refried): Drain the liquid if you like, or leave the liquid in the crock pot and serve the beans with it (I like them a bit soupy over rice), or use a slotted spoon for serving and drain the beans at the end prior to storing. Taste and adjust seasoning as desired.
