Tofu and watercress are a great, flavorful combination, and a wholesome one, too! My teenage boys who don't like greens actually love this dish. Red chile garlic paste can be substituted for the ground black pepper.

1 (2 pound) boneless pork loin, cut into 1/2 inch strips
1 cup soy sauce
¾ cup water
1 teaspoon minced fresh ginger root
1 tablespoon coarsely ground black pepper
2 bunches watercress - rinsed, dried, cut into 1/2 inch lengths, thick stems discarded
8 ounces bean sprouts
1 (16 ounce) package firm tofu, drained and cubed

Steps:

  • Place pork in a wok or skillet over medium heat. Cook and stir until pork is browned on all sides, about 5 minutes. Stir in the soy sauce, water, ginger, and black pepper; bring to a boil over medium-high heat. Reduce heat to medium, cover, and simmer until meat is tender, about 40 minutes.
  • Stir in the watercress and bean sprouts, and continue to simmer until tender yet still crisp, about 10 minutes more. Mix in the tofu, cover, and simmer 5 minutes more.

Walter Kei of Hong Kong taught me this simple peppery Shanghainese-style stir-fry. Many traditional cooks prefer the "head and tail" of the bean sprout to be removed. This is very labor-intensive, but in Hong Kong, produce vendors sell trimmed sprouts, called "silver sprouts," for a slightly higher price.

8 ounces lean pork butt
2 teaspoons grated garlic
4 teaspoons Shao Hsing rice wine or dry sherry
1 1/2 teaspoons cornstarch
1/2 teaspoon soy sauce
1/2 teaspoon sesame oil
1/2 teaspoon sugar
1 teaspoon salt
1/2 teaspoon ground white pepper
2 tablespoons golden olive oil
1 pound mung bean sprouts

Steps:

  • Slice the pork into 1/4-inch-thick slices, then stack the slices and cut into 2-inch-long matchsticks. Put the matchsticks in a shallow bowl and add the garlic, 2 teaspoons of the rice wine, the cornstarch, soy sauce, sesame oil, sugar, 1/2 teaspoon of the salt, and 1/4 teaspoon of the pepper. Stir to combine.
  • Heat 14-inch flat-bottomed wok over high heat until a bead of water vaporizes within 1 to 2 seconds of contact. Swirl in the olive oil and add the pork, spread it around it in the wok. Cook undisturbed 20 seconds, letting the pork begin to brown. Then, using a metal spatula, stir-fry the pork until it is no longer pink, about 1 minute. Add the bean sprouts, then remaining 2 teaspoons rice wine, 1/2 teaspoon of salt, and 1/4 teaspoon pepper and stir-fry 1 to 2 minutes or until the pork and bean sprouts are just cooked through.

2 lbs pork, chopped
1 (14 ounce) package tofu, cubed (semi-firm or firm)
2 fresh garlic cloves, minced
1 tablespoon ginger, minced
1 lb round onion, sliced
5 large fresh shiitake mushrooms, sliced
1 bunch green onion, cut into 2-inch pieces
1 bunch watercress, cut into 2-inch pieces
1 tablespoon vegetable oil (for frying)
1/2 cup soy sauce
3 tablespoons mirin (sweet cooking sake)
2 tablespoons sugar
1 tablespoon cornstarch
2 tablespoons water

Steps:

  • Add vegetable oil to large pan to heat. Add ginger, garlic and pork. Brown pork then add round onion, mushrooms. Add sauce ingredients: soy sauce, mirin and sugar. Let simmer 20-25 minutes. Adjust sauce to nappe consistency, then add tofu, green onions and watercress. Simmer 5 minutes. Enjoy!

3 oz pork tenderloin (preferably from tail end), thinly sliced crosswise (1/3 cup)
1 teaspoon Chinese Shaoxing cooking wine or medium-dry Sherry
1/4 teaspoon salt
1 (14- to 16-oz) block of firm tofu
1 cup plus 3 tablespoons peanut oil
2 (4- to 5-inch) fresh mild red chiles (sometimes called finger chiles), thinly sliced diagonally, then seeded
1 tablespoon finely chopped garlic
2 1/2 to 3 tablespoons Chinese fermented black beans, rinsed well and drained
3/4 cup chicken stock or reduced-sodium chicken broth
1/4 teaspoon dark soy sauce
3/4 teaspoon potato starch
1 tablespoon water
3 scallions, greens thinly sliced diagonally (reserve remainder for another use)
1/2 teaspoon Asian sesame oil
1 to 2 teaspoons Asian chile oil
Accompaniment: white rice
Special Equipment
a well-seasoned 14-inch flat-bottomed wok; a deep-fat thermometer

Steps:

  • Stir together pork, wine, and salt in a small bowl.
  • Cut tofu lengthwise into 1/4-inch-thick slices, then cut each slice crosswise into thirds. Blot tofu pieces between layers of paper towels to absorb excess moisture. Repeat with 1 or 2 changes of dry paper towels.
  • Heat 1 cup peanut oil in wok over high heat until thermometer registers 375°F. Cook tofu in 5 or 6 batches, stirring to keep slices from sticking together and turning over as needed, until golden, 1 to 2 minutes per batch. Transfer tofu as fried with a slotted spoon to paper towels to drain. Return oil to 375°F between batches. Carefully transfer oil to a heatproof container to cool (before discarding), then wipe wok clean.
  • Reheat wok over high heat until smoking, then add remaining 3 tablespoons peanut oil, swirling to coat wok evenly. Add chiles and garlic and stir-fry until fragrant, about 1 minute. Add pork mixture and stir-fry until no longer pink, 1 to 2 minutes, then add black beans and stir-fry until fragrant, about 1 minute. Add stock, tofu, and soy sauce and simmer 3 minutes.
  • Stir together potato starch and water in a small bowl, then add to tofu mixture in wok and simmer, stirring until sauce is thickened, about 1 minute. Add scallion greens, stirring until just wilted, then remove from heat and stir in sesame oil. Stir in chile oil to taste.

I have long enjoyed stir-fried tofu creations like ma-po tofu, a classic dish from Sichuan. But I found making them difficult. This version is easy and quick.

1 tablespoon peanut or other oil
1 tablespoon minced garlic
1 tablespoon minced ginger
1/4 teaspoon crushed red pepper flakes, plus more to taste
1/4 to 1/2 pound ground pork
1/2 cup chopped scallions, green part only
1/2 cup stock or water
1 pound soft or silken tofu, cut in 1/2-inch cubes
2 tablespoons soy sauce
Salt to taste
Minced cilantro for garnish, optional

Steps:

  • Put oil in a deep 10-inch skillet or wok, preferably nonstick, and turn heat to medium-high. A minute later, add garlic, ginger and red pepper flakes, and cook just until they begin to sizzle, less than a minute. Add pork, and stir to break it up; cook, stirring occasionally, until it loses most of its pink color.
  • Add scallions and stir; add stock. Cook for a minute or so, scraping bottom of pan with a wooden spoon if necessary to loosen any stuck bits of meat, then add tofu. Cook, stirring once or twice, until tofu is heated through, about 2 minutes.
  • Stir in the soy sauce; taste, and add salt and red pepper flakes as necessary. Garnish with cilantro if you like, and serve.

1 bunch watercress
1 (12 ounce) package extra-firm tofu, drained and cubed
1 (8 ounce) package bean sprouts
1 (8 ounce) container grape tomatoes, halved
1 (5 ounce) can tuna, drained
½ cup minced green onion
⅓ cup shoyu (Japanese soy sauce)
1 tablespoon olive oil
1 tablespoon white sugar
2 teaspoons sesame seeds
½ teaspoon grated fresh ginger
1 clove garlic, minced

Steps:

  • Cut watercress into 1 1/2-inch lengths. Combine with tofu, bean sprouts, grape tomatoes, tuna, and green onion in a large bowl.
  • Mix shoyu, olive oil, sugar, sesame seeds, ginger, and garlic together in a bowl. Drizzle dressing over salad (a little goes a long way) and toss before serving.
