OLD FASHIONED COCA COLA CAKE

Number Of Ingredients 19

1 cup Coca-Cola
1/2 cup buttermilk
1 cup butter (room temperature)
1 cup granulated sugar
3/4 cup brown sugar
2 large eggs
1 tablespoon vanilla
2 cups flour
1/2 cup unsweetened cocoa
1 teaspoon baking soda
1 cup mini marshmallows
1 1/2 cups chopped nuts (I used pecans)
3/4 cup butter (room temperature)
4-5 cups powdered sugar
1/2 cup unsweetened cocoa
pinch of salt
1 teaspoon vanilla
1/4 cup coke
2-3 tablespoons milk or cream as needed

Steps:

  • Preheat oven to 350 degrees and place rack in middle of oven.
  • Mix Coke and buttermilk together in a measuring cup, set aside.
  • In a large mixing bowl, beat butter and sugars together until creamy. Add eggs and vanilla. Add the dry ingredients all at once. Mix and add the coke mixture all at once. Fold in the marshmallows.
  • Spoon mixture into two greased and lined 9 inch cake pans or one greased 9x13 cake pan.
  • Bake 30-35 minutes for layer cake and about 35-40 minutes for 9x13. Cake is done when a few moist crumbs are attached to a toothpick.
  • Remove from oven and if using layer pans, run a butter knife around edges and invert onto a rack to cool, placing the parchment side down so it won't stick to the rack. Make sure to peel parchment paper off before frosting cakes.
  • Cool completely.
  • Frosting: Mix the butter in a bowl with powdered sugar and cocoa. Add salt, vanilla and coke. Beat until creamy. Add milk until desired spreading consistency.
  • Place cake on a platter. Spread 1/3 of frosting on layer. Top with other layer. Spread frosting on top and sides. Place chopped nuts on top of cake.

2 cups all purpose flour
2 cups granulated sugar
1 1/2 cups minature marshmallows
1 cup unsalted butter
3 tbsp unsweetened cocoa powder
1 cup Coca-Cola
1/2 cup buttermilk
1 tsp baking soda
2 eggs (beaten )
2 tsp vanilla extract
1/2 cup butter
3 tbsp unsweetened cocoa powder
6 tbsp Coca-Cola
1 box of powdered sugar
2 tsp vanilla
1 cup pecans (toasted)

Steps:

  • Preheat oven to 350 degrees
  • Line a 9 x 13 cake pan with parchment paper, set aside
  • Sift flour and granulated sugar together, stir in marshmallows and set aside
  • In a medium saucepan over medium heat, bring to a boil: butter, cocoa, and cola, stirring occasionally
  • Remove from heat and let cool for 5 minutes. Pour over dry mixture, whisk until combined
  • Whisk in buttermilk, baking soda, beaten eggs, and vanilla extract
  • Pour into 9 x 13 cake pan and bake at 350 degrees for 30 minutes. Or until cake tester comes out clean and cake bounces back when lightly pressed.
  • Remove from oven and let cool on wire rack in cake pan for 30 minutes before adding frosting

1 (18 1/4 ounce) package plain white cake mix
4 tablespoons unsweetened cocoa powder
8 tablespoons butter, melted
1 cup cola
1/2 cup buttermilk
2 large eggs
1 teaspoon pure vanilla extract
1 1/2 cups miniature marshmallows
frosting, ingredients
8 tablespoons butter
4 tablespoons unsweetened cocoa powder
1/3 cup cola
4 cups confectioners' sugar, sifted
1 cup chopped pecans

Steps:

  • Place a rack in the oven and preheat to 350°F Lightly mist a 13"x9" baking pan with vegetable oil spray. Set pan aside.
  • Place the cake mix, cocoa powder, melted butter, cola, buttermilk, eggs, and vanilla in a large mixing bowl. Blend with an electric mixer on low speed for 1 minute. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat 2 minutes more, scraping the sides down again if needed. The batter should look well blended. Fold in the marshmallows. Pour the batter into the prepared pan, smoothing it out with the rubber spatula. Place the pan into the oven.
  • Bake the cake until it springs back when lightly pressed with your finger and just starts to pull away from the sides of the pan, 40 to 42 minutes. Remove the pan from the oven and place it on a wire rack to cool for 15 minutes.
  • Meanwhile, prepare the frosting. Place the butter in a medium saucepan over low heat. As the butter melts, stir in the cocoa powder and cola. Let the mixture come just to a boil, stirring constantly, and then remove it from the heat. Stir in the confectioners' sugar until the frosting is thickened and smooth. Fold in the pecans.
  • Pour the frosting over the top of the cake, spreading it out with a rubber spatula so that it reaches the edges of the cake. Cool the cake for 20 minutes before serving.
  • Store this cake, covered in aluminum foil, at room temperature for up to 1 week. Or freeze it, wrapped in foil, for up to 6 months. Thaw the cake overnight on the counter before serving.
