I love this delicious recipe because it includes three of my favorite locally produced foods-ham, asparagus and cheese. Prepared with leftover Easter ham and fresh asparagus, these rolls make an excellent springtime meal. -Laurie Timm Minneiska, Minnesota

2 tablespoons butter
1/4 cup all-purpose flour
2 cups milk
1/2 cup shredded cheddar cheese
1/4 teaspoon salt
1/4 teaspoon white pepper
24 fresh or frozen asparagus spears
8 thin slices fully cooked ham (about 1/2 pound)
1/4 cup dry bread crumbs

Steps:

  • Preheat oven to 375°. In a saucepan, melt butter; stir in flour until smooth. Gradually stir in the milk. Bring to a boil. Cook and stir until thickened, 2-3 minutes., Stir in cheese, salt and pepper. Remove from the heat. Place three asparagus spears on each ham slice. Roll up; secure with toothpicks if necessary. , Place in 13x9-in. baking dish; top with cheese sauce. Sprinkle with crumbs. Bake, uncovered, until heated through, 20 minutes.

You know that something with a name like this is going to be good and this truly is! The traditional recipe itself is very simple but the method for making it is not, so I developed this "cold oven cheater method" which is much safer and easier. The end result is an amazing flavor and texture combination of fatty sausage links, crispy, puffed, and tender Yorkshire pudding, and delicious onion gravy. And the gravy is so good you'll want to eat it on just about anything (and everything!)

4 large eggs
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
2 pinches cayenne pepper
1 cup all-purpose flour
1 tablespoon all-purpose flour
¾ cup whole milk
¼ cup cold water
¼ cup vegetable oil
4 links pork sausage
2 tablespoons butter
1 large red onion, minced
kosher salt to taste
3 tablespoons all-purpose flour
2 cups chicken broth
¼ teaspoon Worcestershire sauce
1 teaspoon balsamic vinegar
2 tablespoons Onions, spring or scallions (includes tops and bulb), raw
1 teaspoon chopped fresh chives, or to taste

Steps:

  • Prepare batter: Combine eggs, salt, pepper, cayenne, 1 cup plus 1 tablespoon flour, and milk in a large bowl; whisk thoroughly until batter is very smooth and no lumps remain. Whisk in water. Cover and let rest at room temperature for 1 hour.
  • Prepare sausages: Heat vegetable oil in a skillet over medium-high heat. Add sausages and cook until browned, 2 to 3 minutes per side. Remove from the heat and transfer to a buttered 9x12- or 9x13-inch baking dish. Pour oil from the skillet over the sausages; brush oil with a pastry brush all over the bottom and up the sides of the dish.
  • Start onion gravy: Melt butter in the same skillet over medium-high heat. Add onion and salt; saute until soft and starting to brown, 5 to 6 minutes.
  • While onion is cooking, pour batter in and around the sausages. Place in the center of a cold oven and turn temperature to 500 degrees F (260 degrees C). Set oven timer for 30 minutes.
  • While toad in the hole cooks, finish onion gravy: Stir in flour and cook for about 2 minutes. Whisk in chicken broth and return to a simmer. Add Worcestershire sauce and balsamic vinegar and simmer until gravy thickens up and reduces, about 5 minutes. Reduce heat to low and stir in green onions. Taste and adjust seasoning.
  • When timer goes off, remove toad in the hole from the oven; it should be browned and puffed. Spoon gravy over the sausages and garnish with green onions and chives.
  • Serve with extra gravy.

American Toad in a hole is one of the first recipes I had my children prepare when they were learning to cook. Much easier than the European version, this fun egg-in-a-hole is sure to please. My "little ones" are now grown (and have advanced to more difficult recipes!), but this continues to be a traditional standby in my home and theirs. -Ruth Lechleiter, Breckenridge, Minnesota

1 slice of bread
1 teaspoon butter
1 large egg
Salt and pepper to taste

Steps:

  • Cut a 3-in. hole in the middle of the bread and discard. In a small skillet, melt the butter; place the bread in the skillet. , Place egg in the hole. Cook for about 2 minutes over medium heat until the bread is lightly browned. Turn and cook the other side until egg yolk is almost set. Season with salt and pepper.

Try this twist on traditional toad-in-the-hole - sure to become a firm family favourite

16 thick asparagus spears
2 tbsp vegetable oil
2 eggs
140g self-raising flour
150ml milk
2 tbsp chopped mixed herb , such as parsley, dill and oregano
8 slices lean ham , halved

Steps:

  • Heat oven to 220C/200C fan/gas 7. Cook the asparagus spears in boiling salted water for 2 mins, drain and set aside on kitchen paper.
  • Pour the oil into a 37cm x 26.5cm shallow roasting tin and place in the oven to heat up. Whisk the eggs, flour, milk and 150ml cold water together until smooth, or whizz in a food processor. Season and stir in the herbs.
  • Wrap each asparagus spear in a piece of ham. Arrange them in the hot roasting tin and pour over the batter. Bake for 20 mins, or until risen and golden. Serve with a crunchy green salad.

This is a great way for me to get my daughter to eat a vegetable! Simple and fast this makes an elegant looking meal. I serve this on toast for lunch, or by itself with garlic bread is great as well. 12 slices of square cooked deli ham
4 tablespoons prepared mustard
36 fresh asparagus spears
3 tablespoons butter
2 tablespoons flour
1 1/2 cups milk
3/4 teaspoon salt
1/4 teaspoon black pepper
1 1/4 cups grated medium cheddar
1/4 cup thinly sliced green onion

Steps:

  • Steam or boil asparagus until tender-crisp.
  • Spread each side of ham with mustard.
  • Lay 3 asparagus spears on each slice, alternating tips for appearance and ease of rolling.
  • Roll these up and place seam side down in casserole dish.
  • Melt butter in med size saucepan.
  • Stir in flour slowly, then add milk.
  • Stir and cook until boiling.
  • Add salt and pepper.
  • Stir in cheese until melted, add green onion slices.
  • Stir and pour over meat rolls.
  • Cover and bake in 350 F oven 30 minutes or until hot and bubbly.

1 cup flour
1/2 teaspoon salt, or to taste
2 eggs
1 cup milk
3 tablespoons lard, beef drippings, shortening or oil
1 pound small sausages (see note)

Steps:

  • Sift the flour and salt into a bowl. Form a well in the middle with the back of a wooden spoon and put eggs in it with a little of the milk. Amalgamate flour and liquid slowly by stirring from the center. Add the rest of the milk. (This batter can also be mixed in a food processor or blender.)
  • Preheat the oven to 425 degrees.
  • Put a large oblong baking pan in the oven with the fat. Be sure to use a clear, flavored fat, not the stale contents of a muddied dripping bowl.
  • Stiffen the sausages, well pricked, in a pan of simmering water for 5 minutes. Drain. Watch the pan of fat in the oven to make sure it does not burn; take it out as soon as it begins to smoke.
  • Run a layer of batter over the base of the pan. It should set slightly and make a bed for the stiffened sausages. Pour in the rest of the mixture and return to the hot oven for 30 minutes or so. The pudding should be puffed up and succulent, 90 percent crisp outside, and no unpleasant semiliquid dough.
