CHILI CON CARNE

6 slices bacon
2 pounds ground beef chuck
1 large onion, chopped
1 large green bell pepper, chopped
4 cloves garlic, finely chopped
Kosher salt
1/4 cup chili powder
1 tablespoon ground cumin
2 teaspoons paprika
2 teaspoons dried oregano
2 tablespoons tomato paste
1 12-ounce bottle amber beer
2 tablespoons unsweetened cocoa powder
1 28-ounce can whole plum tomatoes, crushed by hand
1 1/2 cups low-sodium beef broth, plus more if needed
2 15-ounce cans black beans, drained and rinsed
1 tablespoon hot sauce
Shredded cheddar cheese, sliced scallions and/or sour cream, for topping (optional)

Steps:

  • Cook the bacon in a large saucepan or Dutch oven over medium heat until crisp, 6 to 8 minutes per side. Drain on a paper towel-lined plate and let cool, then crumble and set aside. Pour off all but 1 tablespoon of the bacon drippings from the saucepan (reserve the drippings). Increase the heat to medium high, add the beef and cook, breaking up the meat with a wooden spoon, until browned, about 8 minutes. Transfer to a plate using a slotted spoon; wipe out the pan.
  • Heat 1 tablespoon of the reserved bacon drippings in the saucepan over medium-high heat. Add the onion and bell pepper and cook, stirring, until soft, about 5 minutes. Add the garlic and 1 teaspoon salt and cook 2 minutes. Add the chili powder, cumin, paprika, oregano and tomato paste and cook, stirring, until the tomato paste is brick red, about 6 minutes (add a splash of water if the mixture begins to stick). Add the beer and simmer until almost completely reduced, about 3 minutes.
  • Stir in the beef and any juices from the plate; add the cocoa powder, tomatoes, beef broth and beans and bring to a simmer over low heat. Cook, stirring occasionally, until the chili thickens slightly, about 1 hour, 30 minutes.
  • Stir the hot sauce into the chili and season with salt. Add some beef broth if the chili is too thick. Ladle into bowls and top with the crumbled bacon, cheese, scallions and/or sour cream.

My sister-in-law, who has cooked for many years at the family ranch, shared this hearty recipe with me. I make it often during the winter-it sure can warm you up after being outside doing chores!

2 bacon strips, diced
1 pound ground beef or venison
2 teaspoons chili powder
1-1/2 teaspoons salt
1/4 teaspoon garlic salt
1/4 teaspoon dried oregano
1/8 teaspoon cayenne pepper
3 to 5 drops hot pepper sauce
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup each finely chopped celery, onion and carrots
1/2 cup finely chopped green pepper
1 can (16 ounces) chili beans, undrained

Steps:

  • In a large saucepan over medium heat, brown bacon and the beef or venison; drain. Add the seasonings; cook and stir for 5 minutes. Stir in tomatoes, celery, onion, carrots and green pepper; bring to a boil. Reduce heat; cover and simmer for 40 minutes. Stir in beans; cook 30 minutes longer.

This chili recipe is many years in the making and I have won several awards with it. I think you'll be pleased with it. You can alter it to your own spice levels to achieve your perfect chili. Garnish with shredded mozzarella cheese, and use corn chips for dipping.

4 tablespoons vegetable oil
1 green bell pepper, chopped
1 yellow onion, chopped
2 ½ pounds lean ground beef
2 beef bouillon cubes
⅔ cup red wine
2 (16 ounce) cans whole peeled tomatoes, chopped, juice reserved
garlic cloves, crushed
1 (12 ounce) can tomato paste
1 ½ teaspoons paprika
2 ½ teaspoons chili powder
1 teaspoon cayenne pepper
2 ½ teaspoons dried basil
½ teaspoon dried oregano
2 tablespoons dried parsley
½ teaspoon black pepper
1 teaspoon salt
12 drops hot pepper sauce (e.g. Tabasco™)
1 (15 ounce) can kidney beans, drained
3 tablespoons flour
3 tablespoons corn meal
½ cup water

Steps:

  • Heat oil in a large saucepan over medium heat. Cook green pepper, and onion, until softened. Add the ground beef and cook until browned. Crumble over bouillon cubes, and stir in wine; continue to cook for a few minutes. Stir in chopped tomatoes, garlic, and tomato paste. Season with paprika, chili powder, cayenne pepper, basil, oregano, and parsley. Stir in salt and pepper.
  • Bring to a boil over high heat. Reduce heat to medium low. Cover, and simmer for 90 minutes, stirring occasionally.
  • Stir in kidney beans, and hot pepper sauce. You can add the reserved tomato juice if more liquid is needed. Continue to simmer for an additional 30 minutes.
  • In a small bowl, whisk together the flour, corn meal, and water until smooth. Stir into chili, and cook for a further 10 minutes, or until chili has thickened up.

2 tablespoons olive oil
2 medium onions, chopped
2 garlic cloves, minced
1 medium green pepper, chopped
1-1/2 teaspoons salt

1/4 teaspoon ground cinnamon
1 teaspoon ground cumin

Steps:

  • In a Dutch oven, cook beef over medium heat until no longer pink, 5-7 minutes; crumble beef. Drain and set aside. , In the same pot, heat oil; saute onions until tender. Add garlic; cook 1 minute longer. Stir in the green pepper, salt, chili powder, bouillon, cayenne, cinnamon, cumin and oregano. Cook for 2 minutes, stirring until combined. , Add tomatoes and browned beef. Stir in water. Bring to a boil. Reduce heat; cover and simmer for about 1 hour. Add beans and heat through. If desired top with sour cream and jalapeno.

10 small green tomatillos
8 arbol chiles
1 1/2 lbs pork
2 teaspoons salt
1 teaspoon vegetable oil
1 cup water
1 garlic clove

Steps:

  • cut pork into small pieces.
  • place them in a pan with water (filled to the top),add your garlic (or you'll have bad taste of pork).
  • simmer on low for 1 1/2 hours.
  • while the meat is cooking: place the chiles and tomatillos on a seperate pan to roast (make sure they do not burn, but just get a roasted on each side blend the tomatillos 2/3 cup of water and 1 tsp salt well,place aside).
  • blend the chile arbol peppers with 1/3 cup of wate and 1 tsp salt, place aside when all the water is gone in the pan with the meat pour your oil and fry the pieces of meat slightly.
  • first, pour in your tomatillo sauce and mix it.
  • second,pour in your red chile sauce and mix it.
  • simmer for 20 minutes.
  • taste and add more salt if needed.
  • serve with pinto beans and ranchero cheese.

2 cans (14.3 oz. each) chili with beans
1 cup each: chopped green and red bell peppers (1 large each)
1 pkg. (8.5 oz.) cornbread mix

Steps:

  • Preheat oven to 375°F. Prepare Dinner as directed on package. Stir in chili and peppers. Spread into 13x9-inch baking dish.
  • Prepare cornbread batter as directed on package; spoon evenly over chili mixture to within 1/2 inch of edges.
  • Bake 25 to 30 min. or until top of cornbread is golden brown and wooden pick inserted in center comes out clean.

3 tablespoons corn oil
2 lbs skirt steaks, cut into 1/2 inch cubes
2 lbs pork sausage
10 garlic cloves, minced
4 jalapeno peppers, seeded and finely diced
2 medium onions, coarsely chopped
2 tablespoons ground cumin
1 tablespoon ground coriander
2 bay leaves
5 tablespoons chili powder
1 tablespoon paprika
2 teaspoons oregano
1 teaspoon sage
1 bell pepper, diced
2 stalks celery, diced
1 (28 ounce) can crushed tomatoes
1 (6 ounce) can roasted chilies, finely chopped
2 cups black beans, fully cooked and drained
2 cups pinto beans, fully cooked and drained
2 cups kidney beans, fully cooked and drained
2 (12 ounce) cans beer
2 cups beef stock
2 tablespoons fine cornmeal or 2 tablespoons masa harina

Steps:

  • Place a large cast iron skillet over medium high heat until hot but not smoking. Add the oil and lightly brown the meat. To avoid overcrowding the skillet, brown the meat in 3-4 batches.) Transfer the browned meat to a large dutch oven. Discard all but 3 tbsp of fat from the skillet.
  • Reduce the heat under the skillet to medium and add the garlic, onion and diced jalapeno pepper. Saute for 2 minutes stirring often.
  • Add the cumin, bay leaf, coriander, chili powder, paprika, oregano and sage to the skillet, stirring well to coat the onions etc with the spices. Continue cooking for another minute, stirring frequently for avoid scorching.
  • Add the bell peppers, celery, crushed tomatoes and roasted chiles. Stir well with a wooden spoon, scraping the bottom and sides to loosen bits stuck to skillet. Transfer contents to the dutch oven.
  • On medium high heat, add the beans, beer and beef stock, stir well and bring to a boil. Reduce the heat to low and simmer anywhere from 20 minutes to 2 hours. To thicken the chili, stir in corn meal or masa harina and simmer.
