Pork Tenderloin Steaks with Mustard Cider Sauce image

Provided by Valerie Bertinelli

Categories     main-dish

Time 20m

Yield 4 servings

Number Of Ingredients 9

1 1/2 pounds pork tenderloin
Kosher salt and freshly ground black pepper
1/2 cup all-purpose flour
3 tablespoons unsalted butter
1 small shallot, minced
1/3 cup apple cider or juice
2 tablespoons whole-grain mustard
2 tablespoons chopped fresh flat-leaf parsley
1 tablespoon finely chopped fresh chives

Steps:

  • Cut the pork tenderloin into 1-inch-thick steaks on a long bias. Season the steaks all over with salt and black pepper, then toss in the flour to coat.
  • Melt 2 tablespoons of the butter in a large skillet over medium-high heat until the foam subsides. Shake the excess flour off the meat and add it to the skillet. Cook, flipping once, until cooked to medium and an instant-read thermometer inserted into the center registers about 150 degrees F, about 4 minutes per side. Remove the pork steaks to a platter and lower the heat under the skillet to medium.
  • Add the remaining 1 tablespoon butter and the shallots. Cook, stirring, until softened, about 2 minutes. Add the cider, mustard, parsley, chives and a sprinkle of salt and black pepper. Simmer, scraping up any brown bits, until reduced by about half, about 2 minutes. Top the steaks with the sauce and serve.

Time 4h

Yield 8 servings

Number Of Ingredients 14

2 pork tenderloins (about 1 pound each)
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
3/4 cup teriyaki sauce
1/4 cup apple cider vinegar
1/4 cup ginger sauce
1/4 cup orange juice
2 cloves garlic, minced
4 tablespoons olive oil
1 medium red onion, coarsely chopped
1/4 cup honey
1/4 cup orange marmalade
1/4 cup tomato-vegetable juice, such as V8
2 oranges

Steps:

  • Sprinkle the pork with salt and pepper. In a baking dish, mix 1/2 cup of the teriyaki sauce together with the cider vinegar, ginger sauce, orange juice and garlic. Add the pork and coat well with the marinade. Cover and refrigerate for 3 hours or up to 24 hours.
  • The next day, preheat the oven to 350 degrees F.
  • Heat the olive oil in a large, heavy skillet. Remove the tenderloins from the marinade and put them in the hot oil. Sear on all sides, then return the pork to the baking dish with the marinade. Add the chopped red onion to the skillet, saute until translucent, then add it to the baking dish. Cover the baking dish loosely with foil and bake for 20 minutes.
  • In a small bowl, mix together the remaining 1/4 cup teriyaki sauce along with the honey, marmalade, and tomato-vegetable juice. When 20 minutes are up, remove the pork from the oven, remove the foil, and with a very sharp knife cut deep slits into the meat. Pour the honey sauce into these slits and over the meat. Slice the unpeeled oranges into 1/4-inch crosswise pieces and arrange the slices on the top and sides of tenderloins. Return the meat to the oven and bake, uncovered, until the orange slices begin to curl, about 15 additional minutes. Remove the meat from the oven and let stand for 10 minutes before slicing into medallions. Transfer to a platter to serve.

Provided by Aida Mollenkamp

Categories     main-dish

Time 33m

Yield 4 to 5 servings

Number Of Ingredients 6

2 (1 pound) pork tenderloins, cut in 1/2 crosswise
Vegetable oil
Salt and freshly ground black pepper
1 1/2 cups apple cider
1/2 cup apple cider vinegar
1/4 cup maple syrup

Steps:

  • Heat oven to 500 degrees F and arrange rack in the upper third.

PORK TENDERLOIN MEDALLION WITH APPLE CIDER VINEGAR RECIPE - (4.5/5)

Pork Tenderloin Medallion with Apple Cider Vinegar Recipe - (4.5/5) image

Provided by á-13856

Number Of Ingredients 17

Pork:
2 pork tenderloins (1 to 1 1/2 lbs each), trimmed of fat and silver skin, cut crosswise into 1 1/2-inch pieces, and tied, thinner end pieces removed and tied together
Kosher salt
pepper
2 T vegetable oil
Sauce:
1 1/2 c apple cider
1 c low sodium chicken broth
2 tsp cider vinegar
1 cinnamon stick
4 T unsalted butter, cut into 4 pieces
2 shallots, minced (about 6 T)
1 Granny Smith apple, peeled, cored, and diced small
1/4 c Calvados or apple-flavored brandy
1 tsp minced fresh thyme
salt
pepper

Steps:

  • For The Meat: Season the pork with salt and pepper. Heat the oil in a 12 inch skillet over medium high heat until shimmering. Add the pork cut side down and cook, without moving the pieces, until well browned, 3 to 5 minutes. Turn the pork and brown the second side, 3 to 5 minutes more. Reduce the heat to medium. Using tongs, stand each piece on its side and cook, turning the pieces as necessary, until the sides are well browned, and the internal temperature registers 145 to 150 degrees on an instant read thermometer, 8 to 12 minutes. Transfer the pork to a platter and tent loosely with foil. For The Sauce: While the pork cooks, combine the cider, broth, vinegar, and cinnamon stick in a medium sauce pan; simmer over medium high heat until the liquid is reduced to 1 cup, 10 to 12 minutes. Remove the cinnamon stick and discard. Set the sauce aside until the pork is cooked. Pour off any fat from the skillet in which the pork was cooked. Melt 1 T of the butter over medium heat; add the shallots and apple and cook, stirring occasionally until softened and beginning to brown, 1 to 2 minutes. Remove the skillet from the heat and cook bout 1 minute, scraping the bottom of the pan with a wooden spoon to loosen the bits from the bottom of the pan. Add the reduced cider mixture, and juices from the resting meat, and thyme; increase the heat to medium high and simmer until thickened and reduced to 1 1/4 cups, 3 to 4 minutes. Off the heat, whisk in the remaining 3 T butter and season with salt and pepper to taste. Pour the sauce over the pork and serve immediately. NOTE: After cutting the tenderloin into symmetrical 1 1/2-inch medallions, you will inevitably have a few irregularly shaped pieces left over. The tapered end pieces can be scored, folded and tied into medallions. Tie any remaining smaller pieces together into a medallion shape, making sure the top and bottom surfaces are flat.

  • I asked my butcher to give me two pieces of pork tenderloin that had the same thickness, cutting out the final parts, which are usually more slender.
  • Wrap the pork tenderloin with lardo, aligned the lardo slices along the length of the tenderloin, until it is completely covered. Add also a few sprigs of thyme. Tie the pork tenderloin with the butcher's twine, leaving about a finger in between each piece of string.
  • With a sharp knife, cut between each piece of string, so as to obtain medallions where the lardo is secured by a string.
  • Pour two tablespoons of olive oil on the bottom of a large pan, add the sage leaves and the clove of garlic. Heat the olive oil until the garlic starts to sizzle, then add the medallions. Season with salt and pepper.
