Roasted Pork Tenderloin with Garlic Sauce image

This Easy Roasted Pork Tenderloin with Garlic Sauce knocks it out of the park on flavor, but is still very simple to make. The tender, juicy pork is seared, then baked in the oven and a garlic sauce is made with the drippings to finish it with lots of flavor!

2 lb pork tenderloin
1 tbsp Cajun seasoning
2 tbsp vegetable oil
1/2 onion (finely diced)
4 cloves garlic
1/2 tsp red pepper flakes
1/2 tsp dried oregano
1 cup chicken broth (or vegetable)
1 tbsp cornstarch

Steps:

  • Preheat oven to 350. Heat oil in a large pan over high heat.
  • Season the pork tenderloin on all sides with cajun seasoning. Then place in the hot oil and sear for about 1 minutes on each side.
  • Cover with lid or foil and transfer to the oven to bake for 25-35 minutes or until it reaches 145˚F internal temp.
  • Once done, remove the pork tenderloin from the pan and put the pan with drippings on the stove over medium heat. Add the onion and cook until translucent.
  • Add the garlic, oregano, and red pepper flakes and cook 1 minute, then stir in the broth and bring to a simmer.
  • Combine the cornstarch with water to form a paste, then stir it into the sauce and simmer for 3-5 minutes or until it thickens.
  • Slice the pork tenderloin and place it back in the sauce to serve. Enjoy!

1 tablespoon lime juice
1 teaspoon chili powder
1 teaspoon reduced-sodium soy sauce
1/2 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
1 pork tenderloin (1 pound)
1 tablespoon canola oil

Steps:

  • In a small bowl, combine the first six ingredients; brush over pork. , In a large ovenproof skillet, brown pork in oil on all sides. , Bake at 375° for 25-30 minutes or until a thermometer reads 145°. Let stand for 5 minutes before slicing.

Whenever I eat at a Chinese restaurant, I order this appetizer. Yum! When I make this at home, it is even better than at the restaurant and not only is it less expensive, you can have more of it--like a main dish. The original came from the Ultimate Chinese cookbook. The recipe indicates that this should be served cold, but I warm it in the microwave.

18 ounces pork loin
1 teaspoon garlic, chopped
2 tablespoons light soy sauce
1 teaspoon red chili oil
1/2 teaspoon sesame oil
water, as needed

Steps:

  • In a large pot, place pork and add enough cold water to cover.
  • Bring to a rolling boil.
  • Skim froth from the surface of water, then cover pot and simmer for 25 to 30 minute.
  • Remove pot from heat and leave pork in the undrained pot to cool for at 1 to 2 hours.
  • Remove meat from pot cover lightly and cool completely in refrigerator for 2 to 3 hours.
  • Cut the meat in small thin slices across the grain.
  • Arrange on serving plate in an overlapping pattern.
  • In a small bowl, mix all the other ingredients, then pour the sauce over the meat.
  • If you wish, you might garnish with cilantro and green onions.

  • Although the recipe seems to indicate that this dish should be served cold, I always warm the meat in the microwave.
  • Also, the sauce could be served on the side to dip.

1 kg pork (neck steaks 1cm thick cut into 3cmx3cm pieces)
2 tablespoons soy sauce
100 ml extra virgin olive oil
80 g white onions (sliced thin half-moon)
3 garlic cloves (finely chopped)
3 cm piece ginger (cleaned and grated)
2 tablespoons green chili peppers (finely chopped)
2 tablespoons fresh lemongrass (finely chopped tender white part only)
1 teaspoon ground cinnamon
500 ml chicken stock (or beef 2 cups)
basil (Vietnamese leaves torn or chopped for garnish)

Steps:

  • Marinade the pork in soy sauce and set aside.
  • Heat a non-stick frypan and add 50ml of extra virgin olive oil, onion, garlic, ginger, chilli, lemongrass and cinnamon, stirring and cooking until the onion is soft, then set aside.
  • Add 50ml extra virgin olive oil to the hot pan and add the marinated pork in batches and stir-fry on high heat until well sealed and coloured and then set aside each batch until all pork is done.
  • In the same unwashed frypan add the stock, followed by the onion mix, stir well and then add the cooked pork and then cover and simmer gently stirring occasionally, for 45 minutes.
  • DON'T allow to dry out - add a little water if you have to.
  • Just before serving, add Vietnamese basil leaves for a fresh tang.

4 bonless pork loin chops, 1 1/2 in thick
salt and pepper
2 teaspoons butter
2 teaspoons oil
1/2 cup flour
1 teaspoon minced garlic
1/2 cup heavy cream
1 teaspoon butter

Steps:

  • Salt and pepper pork.
  • Heat oil and butter in skillet.
  • Dredge chops in flour.
  • Fry on med-hi until browned on both sides.
  • Reduce heat to low, cover and simmer for 10 minutes.
  • Remove chops and keep warm.
  • To skillet add garlic.
  • Cook 1 minute until garlic is soft.
  • Add cream, cook for 1 minute.
  • Add 1 t butter, stir to mix well.
  • Serve chops with sauce on top.

6 pork loin chops, centre cut, boneless are best (2 lbs)
3/4 cup chili sauce or 3/4 cup ketchup
8 -10 shallots, peeled, cut in half
3 -4 garlic cloves, peeled, cut in half
1/4 cup apple cider vinegar
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
2 teaspoons chili powder
1 teaspoon dry mustard
1 teaspoon dried oregano

  • Trim fat from pork chops.

  • In bowl, combine chili sauce,shallots,garlic, vinegar, sugar, Worcestershire sauce, chili powder, mustard and oregano, Pour over chops.

  • Cover and bake in 350°F oven for 30 minutes.
