1 pound boneless pork loin, cubed
1 (1 ounce) package taco seasoning mix
1 cup salsa
4 tablespoons peach preserves

Steps:

  • Season pork with taco seasoning. Heat oil in a large skillet over medium high heat. Add seasoned pork and saute until browned, 5 to 7 minutes. Add salsa and peach preserves and mix well. Cover skillet and reduce heat. Let simmer gently for about 10 minutes and serve.

2 pounds boneless country-style pork ribs
2 tablespoons taco seasoning
1/2 cup mild salsa
1/4 cup peach preserves
1/4 cup barbecue sauce
2 cups chopped fresh peeled peaches or frozen unsweetened sliced peaches, thawed and chopped

Steps:

  • In a large bowl, toss ribs with taco seasoning. Cover and refrigerate overnight., Place pork in a 3-qt. slow cooker. In a small bowl, combine the salsa, preserves and barbecue sauce. Pour over ribs. Cover and cook on low for 5-6 hours or until meat is tender. , Add peaches; cover and cook 30 minutes longer or until peaches are tender.

4 teaspoons garlic, minced
4 teaspoons fresh lime, minced
4 teaspoons fresh sage, minced
Salt and pepper to taste
4 1-inch thick rib pork chops
Flour for dredging the chops
2 tablespoons olive oil
1 tablespoon unsalted butter
1 cup onion, minced
1/2 cup dry white wine
1 1/2 cups beef broth
2 tablespoons tomato paste
1/4 cup pitted olives, sliced
2 tablespoons drained capers, chopped
2 teaspoons Dijon mustard
2 tablespoons fresh parsley, minced

Steps:

  • In a small bowl combine half the garlic, half the thyme, half the sage, salt and pepper to taste. Rub the mixture on to the chops and chill, covered, 30 minutes, or overnight.
  • Dredge the chops in the flour, shaking off excess. In a large skillet, heat the olive oil over moderately high heat. Add the chops and cook them from 1 to 2 minutes on each side or until brown. Drain fat and transfer the chops to a platter.
  • Add the butter to the skillet and heat it until melted. Add the onion and remaining garlic and herbs and cook the mixture, stirring for 2 minutes or until softened. Add the wine and reduce it by half. Add the beef broth and tomato paste and stir the sauce until it is well combined. Return the chops to the skillet and simmer, covered for 10 minutes or until tender. Transfer the chops to a platter, add the olives, capers and mustard and simmer for 1 to 2 minutes. Stir in parsley. Pour juices from pork platter back into the skillet, stir to combine and spoon sauce over the chops.

1/3 cup peach jam
2 tablespoons ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
2 tablespoons apple cider vinegar
2 tablespoons cold unsalted butter, cut into small pieces
12 ounces green beans, trimmed
Kosher salt and freshly ground pepper
1 1/2 cups instant flour, such as Wondra
1 teaspoon baking powder
1 large egg white
Vegetable oil, for frying
4 1/4-inch-thick boneless pork loin chops (about 1 pound), trimmed

Steps:

  • Cook the jam, ketchup, 1 tablespoon Worcestershire sauce and 3 tablespoons water in a large skillet over medium-high heat, whisking, until thickened, about 5 minutes. Whisk in the vinegar, then the butter, a few pieces at a time; whisk in a few tablespoons water if the sauce is too thick. Remove from the heat and cover. Put the green beans in a microwave-safe bowl; sprinkle with water and season with salt and pepper. Cover with plastic wrap, pierce the plastic and microwave until tender, 8 to 10 minutes. Whisk 1 cup flour, the baking powder, 1/2 cup water, the egg white and the remaining 1 teaspoon Worcestershire sauce in a bowl; add a few more tablespoons water, if needed. Put the remaining 1/2 cup flour in a shallow dish. Heat 1/4 inch vegetable oil in a large skillet over medium-high heat until it reaches 375 degrees F on a deep-fry thermometer. Dredge the pork chops in the flour, then dip in the batter. Fry until golden, 3 to 4 minutes per side. Drain on paper towels. Serve with the peach sauce and green beans.

4 center-cut pork chops
salt and pepper
2 tablespoons vegetable oil
1 (15 ounce) peaches in light syrup, reserve juice
4 tablespoons peach preserves (or apricot)
3 tablespoons light soy sauce
1 teaspoon brown sugar
1/2 teaspoon ginger
1 teaspoon dry mustard

Steps:

  • Drain peaches and save 1/2 cup of juice. Cut peach slices into smaller pieces and set aside.
  • Salt and pepper pork chops on each side. In large skillet, fry pork chops in vegetable oil until brown. Remove chops from skillet.
  • In same skillet, pour 1/2 cup of reserved peach juice, preserves, soy sauce, brown sugar, ginger and dry mustard. Stir until mixed. Stir in cut peach slices.
  • Place pork chops back into skillet, having chops on bottom and simmer on very lowest heat for 35 minutes covered with a lid. Sauce will thicken as it simmers.
  • Serve with sauce and peaches on top of chops. Great with rice as a side dish!

1 tablespoon olive oil
salt and black pepper to taste
4 boneless pork chops
1 cup Riesling wine
3 under ripe peaches, pitted, and cut into 12 wedges each
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 tablespoon brown sugar

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Cover a baking sheet with aluminum foil.
  • Heat the olive oil in a large skillet over medium-high heat. Season the pork chops with salt and pepper. Brown the pork chops in the hot oil until golden brown on both sides, about 3 minutes per side. Place the pork chops on the prepared baking sheet and bake in the preheated oven until the pork is no longer pink in the center, about 20 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
  • While the pork chops are baking, pour the Riesling wine into the skillet, and bring to a simmer, using a wooden spoon to scrape up all of the browned bits of pork. Simmer until the wine has reduced to half its original volume then add the peaches and sprinkle in the cinnamon, nutmeg, and brown sugar. Reduce the heat to medium, and cook until the peaches are tender but not mushy, about 15 minutes. Spoon the peach sauce over the pork chops to serve.
